Steps:
- Cook the pasta according to packet instructions, drain, toss in olive oil and let cool completely.
- Whisk together the dressing ingredients.
- Add salt and pepper to taste.
- Toss the salad leaves in a little of the walnut dressing so that each leaf is covered in dressing.
- Add the crumbled stilton cheese and toss again gently.
- Garnish with the walnut halves.
- Serve the rest of the dressing with the salad.

MESCLUN SALAD WITH GOAT CHEESE, MAPLE-GLAZED PECANS AND MAPLE DIJON VINAIGRETTE
This is the perfect fall salad for entertaining. The dressing has that savory-sweet flavor combo that everyone loves.

- Preheat the oven to 375 degrees. Lightly oil or line 2 baking sheets with parchment paper. In a small bowl, combine the pecans and maple syrup and toss gently to combine. Spread the pecans in a single layer on one of the prepared baking sheets. Roast in the preheated oven, stirring once, until the syrup is bubbling vigorously, about 5 minutes. Immediately scrape the glazed pecans onto the other prepared baking sheet, spreading them in a single layer. Sprinkle with a pinch of salt and set aside to cool.
- In a small bowl, whisk together the garlic, shallots, salt, pepper, maple syrup, mustard and vinegar. Whisking constantly, slowly add the oil in a steady stream. (Alternatively, add all your ingredients to a jar, cover with lid, and shake vigorously to blend.) Set aside.
- Place the greens in a large bowl, drizzle with about half of the vinaigrette and toss to combine. Add as much of the remaining vinaigrette as desired and toss again. Divide among individual plates, sprinkle with the cheese and reserved pecans and serve immediately.

- Make vinaigrette:
- In a large bowl whisk together mustard and vinegar. Add oil in a slow stream, whisking until emulsified. Whisk in tarragon and salt and pepper to taste. Preheat oven to 350°F.
- In a shallow baking pan toast almonds in middle of oven until pale golden, 6 to 8 minutes, and cool. Halve grapes. Core apple and cut into 16 wedges. Add mesclun to vinaigrette and toss to coat well.
- Divide greens and apple slices among 4 plates and top with grapes, cheese, and almonds.
MIXED GREENS WITH DRIED CRANBERRIES AND TOASTED PECANS
Steps:
- Preheat the oven to 350 degrees F. Toast the pecans in a shallow pan until they begin to get fragrant, about 5 to 7 minutes. Let cool completely.
- Combine the lettuce, mesclun, and onion in a salad bowl. Just before serving, pour on the dressing and toss well. Check to see if you need to add more dressing; you don't want to make the greens too wet. Serve on individual salad plates with the pecans and the cranberries sprinkled on each portion.
- Place all the ingredients in a jar with a tight-fitting lid and shake vigorously.
BLUE CHEESE AND WALNUT SOUFFLES AND MESCLUN WITH RED PEPPER VINAIGRETTE

- Make soufflés:
- Preheat oven to 350°F. and generously butter six 1/2-cup soufflé dishes or custard cups.
- In a small bowl stir together walnuts and 1/2 tablespoon flour. Coat soufflé dishes or custard cups with walnut mixture, knocking out excess.
- In a small heavy saucepan melt butter over moderately low heat and whisk in remaining 3 1/2 tablespoons flour. Cook roux, whisking constantly, 3 minutes and add milk in a stream, whisking. Bring mixture to a boil over moderate heat, whisking, and cook until thickened, about 30 seconds.
- Remove pan from heat and transfer mixture to a bowl. Cool mixture slightly. Whisk cheese, yolks, black pepper, and salt to taste into milk mixture until cheese is melted.
- In a bowl with an electric mixer beat whites until they just hold stiff peaks. Stir one third of whites into cheese mixture to lighten and fold in remaining whites gently but thoroughly.
- Divide soufflé mixture among prepared soufflé dishes or cups and put in a large baking pan just large enough to hold them. Add enough hot water to pan to reach halfway up sides of soufflés dishes or cups and bake soufflés in middle of oven until puffed and golden brown, about 25 minutes. Remove pan from oven and let soufflé dishes or cups stand in pan 15 minutes. (Soufflés will fall.)
- Lightly butter a baking sheet.
- Remove soufflé dishes or cups from pan and run a knife around edge of each dish or cup, carefully lifting edge of each soufflé slightly to help release it from bottom. Invert soufflé onto hand and carefully put, top side up, onto prepared baking sheet. Soufflés may be prepared up to this point 2 days ahead and chilled, covered.
- Increase temperature to 425°F.
- Bake soufflés in middle of oven until puffed slightly and heated through, about 5 minutes.
- Make vinaigrette while soufflés are baking.
- In a bowl toss mesclun with vinaigrette and divide among 6 salad plates. Arrange soufflés among 6 salad plates. Arrange soufflés along side of mesclun and garnish with bell peppers and flowers.
PEAR, DATE & WALNUT SALAD WITH CREAMY STILTON DRESSING

- Cut the pear quarters into thin slices and toss in a bowl with the lime juice to help protect their natural colour. Blend the crème fraîche with half the stilton, ginger syrup to taste, and enough water (3-4 tbsp) to give a smooth, thick coating consistency. (Don't add too much water or it may separate.)
- Scatter the pear slices over six serving plates and follow with the walnuts, dates and remaining cheese. Can be prepared to this stage up to an hour ahead.
- Drizzle each salad with a little of the dressing and some walnut oil. Season with a grinding of pepper - you shouldn't need salt, as the cheese is salty. Mix the salad leaves and watercress very lightly with just a bit more dressing - some leaves should be touched by the dressing, some untouched. Gently pile the leaves on top of each salad.

- Place the walnuts in a dry frying pan set over a low to medium heat. When the nuts are toasted and golden, immediately add the sugar. Turn the heat down to the lowest setting and allow the sugar to slowly melt, swirling the pan to catch any sugar that is stuck to the sides of the pan. When the sugar has dissolved and the nuts are coated in caramel, quickly tip them out on a plate. Allow to cool before adding the the salad.
- Tip the salad leaves into a large salad/serving bowl. Make the dressing by placing the olive oil, vinegar, mustard, maple syrup and salt and pepper in a jar with a screw on lid. Shake the jar like mad until you have salad dressing! Pour the dressing over the leaves. Using your hands, mix the salad and the dressing together, making sure all the leaves are lightly coated.
- Add the pears to the salad and crumble over the blue cheese. Add the walnuts. Using your hands again, very lightly mix the salad one more time before serving.

- Quantities vary depending on number of servings. Use your own judgement and preferences. I generally use equal quantities of the pear, stilton, and walnuts with a little less portion of the onions.
- Put mustard, honey, vinegar, salt, pepper, garlic, and shallot in a blender. Put the lid on and blend on high speed until ingredients are combined. Turn the blender on low speed, remove the lid (or the middle of the lid), and slowly pour 1/2 cup of olive oil in to the mixture. Turn blender off. Taste. If too vinegar-y add more oil with blender on low speed. Add in increments, stopping to taste, until it has the right oil/vinegar balance to you.
