CHILLED BEET SOUP SHOOTERS

- Combine the beets, tomatoes, garlic, cloves, 4 cups water, the chicken broth, 1/2 teaspoon salt and a few grinds of pepper in a pot. Bring to a boil, then reduce the heat to medium low; simmer until the beets are tender, about 30 minutes.
- Working in batches, puree the soup in a blender until smooth; transfer to a large bowl. Whisk in 1/2 cup yogurt and season with salt and pepper. Let the soup cool slightly, then cover and refrigerate until cold, about 2 hours.
- Mix the remaining 3/4 cup yogurt with the horseradish in a small bowl; season with salt. Thin the soup with a little water, if necessary. Serve in shot glasses; top with the horseradish yogurt and dill.
MAPLE CHAI SPICED PEPITAS

- Line a baking sheet with parchment paper and set aside.
- Add the pepitas to a large skillet and toast over medium-low heat, stirring frequently, until golden brown and fragrant, 6 to 8 minutes.
- Meanwhile, combine the cinnamon, allspice, ginger, salt, pepper and nutmeg in a small bowl. Set aside.
- Remove the pepitas from the pan and return the pan to the stovetop. Add the brown sugar, maple syrup and 1 teaspoon water and cook, stirring constantly, until the mixture is combined and the sugar dissolves, 1 to 2 minutes. Stir in the spices, then turn off the heat. Add the toasted pepitas and toss until the seeds are evenly coated. Pour over the lined baking sheet and spread to cool completely.
- Break up slightly, then store at room temperature in an airtight container for up to two weeks.

- Melt 4 tablespoons of the butter over medium heat in a Dutch oven or other large, heavy pot. Just as the foam subsides, add the flour, stirring constantly with a wooden spoon or whisk to prevent lumps. Pour in the chicken stock and continue to stir well. Bring the mixture to a simmer, and then add the barley and the salt. Reduce the heat to medium-low flame, cover, and cook for about 25 to 30 minutes, or until the barley is tender.
- In a large mixing bowl, blend together the yogurt and egg yolks until smooth.
- After the barley has softened, lower the heat and gradually whisk the yogurt mixture into the barley and cook just until it is ready to boil.
- For the finishing touch, melt the remaining 2 tablespoons of butter in a saute pan. When the butter is foamy, mix in the mint and paprika. Let this turn golden and stir it into the soup. Serve the soup piping hot.

- Heat oil in large nonstick skillet over low heat. Add carrots and onion. Cover; cook until vegetables are just tender, stirring occasionally, about 20 Minutes. Add vinegar, cover and cook until vegetables are very tender, about 10 minutes longer.
- Working in batches, add beets with their liquid, sugar and carrot mixture to blender. Purée. Transfer to large bowl. Mix in buttermilk. Season with salt and pepper. Chill until cold, about 3 hours. (Can be made 2 days ahead. Cover; keep chilled.)
- Ladle into bowls or mugs. Top with chives.

- Scrub beets well, place in a large pot of salted boiling water and cook until easily pierced with a fork (about 35-45 minutes depending on the size of the beets).
- Remove beets with a slotted spoon and set aside to cool. Strain beet cooking liquid through a fine sieve (or a cheesecloth over a colander) and allow to cool. You should have at least 4 cups of beet cooking liquid.
- When beets are cool enough to handle remove the skin by peeling with a small pairing knife or rubbing off with your hands. Reserve half of the beets for the "broth" and dice the other half and add to a large bowl with the diced cucumber, scallion, and dill.
- In a blender combine beet cooking liquid, yogurt, half of the beets, vinegar, maple syrup, and salt. Blend until smooth and well combined. Pour liquid into the bowl with chopped beets, cucumber, scallion, and dill.

- Preheat oven to 190°C/170°C Fan/375°F. Rinse the beets and trim the stems leaving an inch attached to the beets.
