This master sauce is great for anything! Use it for stir fries, marinades, or grilling. This version is amazing on some BBQ ribs!

- In a bowl, mix together the master sauce ingredients until well combined. Marinate ribs in half of the Master Sauce.
- Preheat oven to 350 degrees F (175 degrees C). Cut spareribs into serving size portions, wrap in double thickness of foil, and bake for 1 1/2 hours. Unwrap, and drain drippings and combine with remaining master sauce. Place ribs in a large roasting pan.
- Preheat grill for medium heat. Position grate four inches above heat source. Brush grill grate with oil. Place ribs on grill, and cook for 30 minutes, basting with master sauce.

SAVORY AND SWEET SMOKED RIBS WITH A CLASSIC BBQ SAUCE
There is a whole world of rib rivalry in the US. I'll share a recipe for my favorite ribs, which steals from all of the best methods.

- Lay the ribs flat on a clean surface, meat side down. Remove the membrane that covers the rib bones by slicing it at one end with a paring knife. You should be able to grab the cut end with a paper towel and peel the layer of embrane off. Check out this video to see how it is done.
- Mix all of the dry rub ingredients together in a bowl or measuring cup. Sprinkle on and rub into the tops, bottoms, and sides of the ribs. Set the ribs aside to rest and come to room temperature for approximately 30 minutes.
- Preheat your electric smoker to 225˚F. When it is ready, add some water to the removable pan that is usually on the bottom shelf. This is optional, but it keeps the ribs moist. Fill the side "drawer" with dry wood chips. For less intense smoke flavor you can use water soaked chips.
- Place rib, meat side up, on the smoker's wire racks. If too large for the size smoker you have, cut them in half and arrange so that they fit. Cook in the smoker for 3 hours. If you don't see smoke after an hour or so, add more wood chips. Keep watching for smoke and add chips as needed.
- Make the sauce while the ribs are smoking (recipe follows). Or use your favorite jarred sauce.
- After 3 hours, place 2 large sheets of heavy-duty aluminum foil on your flat surface. Place a rack of ribs on each sheet of foil. Baste with your liquid of choice to moisten. A spray bottle or a pastry brush works well for this step. Wrap the ribs completely in the foil.
- Place the wrapped ribs back in the smoker and cook for an additional 1 to 1-1/2 hours, or until the internal temperature reaches 160 degrees. Serve with sauce on the side.
- Optional step: If you prefer your ribs slathered in sauce, you can coat the top of the ribs with some sauce and place them back in the smoker for another hour. This is referred to as the 3-2-1 smoking method.
- In a large saucepan, over medium heat, heat the oil and sauté the onions until translucent and soft, approximately 5 minutes. Add the minced garlic and cook for another minute.
- Add tomato paste and mustard. Cook, stirring constantly, for approximately 5 minutes.
- Add the 2 cups of water, tomato sauce, molasses, Worcestershire, vinegar, salt, pepper, and cayenne. Whisk until smooth. Simmer this on low for up to 2 hours or until thick.

PORK RIBS IN OYSTER SAUCE
This is the best barbecued rib recipe I and my colleagues have ever tasted. I have given this recipe away so many times that I know it off by heart! - Mix the lemon juice, seasoned salt and oyster sauce together in a medium sized mixing bowl.
- Pour over ribs, add fresh gound pepper to taste.
- Marinate the ribs in the oyster sauce mixture for 5 hours or overnight.
- Grill ribs under the broiler of your oven or on the barbecue until ribs are cooked throughout.
- If doing on the barbecue turn frequently and barbecue on low to prevent burning.

- You can use either a dry or wet rub, and you can use the wet rub as the basic ingredients for a barbecue sauce if you want to offer it as an option.
- Combine all the ingredients for the dry rub, and grind them into a fine powder. You can add or subtract any ingredient according to your taste.
- The wet ingredients can be simmered together or just mixed.
- You need to cool the sauce before adding it to the sealing bags. You can make the sauce the following day if you plan on serving it on the side.
- Prepare the ribs by trimming away any unwanted fat.
- Remove the papery membrane from the back of the ribs.
- Divide each rack into three or four portions, each containing three to four ribs.
- If using the dry rub, rub each rib on both sides. Place portions in separate bags.
- If using the wet rub, divide the sauce equally among the bags. Vacuum out the air, and seal the bags.
- Transfer the bags to the refrigerator to rest and marinate for 4 to 12 hours.
- Set the temperature of your sous vide cooker to 145 degree up to 165 degrees, which is the safety recommended temperature for cooking pork.
- Put the ribs in the water bath and cook for 36 hours at 145 degrees or 12 hours at 165 degrees. 145 degrees is recommended for thick, meaty ribs.
- You can dump the hot water, add ice water to the container and store the ribs for up to five days in the refrigerator.
- If using right away, slit the bags and remove the ribs, juices and sauce.
- At this point, you can caramelize the ribs if desired by frying them quickly in a skillet, broiling them in the oven or cooking them on the grill. If using sauce separately, heat it and serve.

- Peel the membrane off the back of each rack of ribs. Generously rub the BBQ spice rub all over the ribs.
- These are directions to smoke the ribs in a smoker.Set the smoker to 225F and use your wood of choice (I use hickory and apple most often). Place the ribs in the smoker and smoke for 3 hours if they are spareribs and 2 hours if they are back ribs.
