EASY MASOOR DAL



Easy Masoor Dal image

This Vegan Masoor Dal is a simple and easy lentil recipe made with split pink lentils (dhuli masoor dal). It goes well with roti or rice.

½ cup masoor dal (or pink lentils or dhuli masoor dal )
1.5 to 1.75 cups water for pressure cooking dal
2 tablespoons oil
1 teaspoon cumin seeds
1 medium sized onion, (chopped)
2 to 3 small to medium sized garlic, (crushed or chopped)
1 inch ginger, (chopped)
1 to 2 green chillies, (chopped or slit)
1 to 2 whole dry red chilies,
1 medium sized tomato, (chopped)
¼ or ½ teaspoon red chili powder ((organic or homemade chili powder can be just ¼ teaspoon as they are very strong))
1 generous pinch asafoetida ((hing))
¼ or ½ teaspoon Garam Masala ((homemade garam masala powder can be just ¼ teaspoon))
½ teaspoon turmeric powder
1 to 1.5 cups water ( or add as required)
1 teaspoon kasuri methi ((dry fenugreek leaves) - crushed (optional))
1 to 2 tablespoons chopped coriander leaves ((cilantro leaves))
½ or 1 teaspoon lemon juice or as required
1 tablespoon chopped coriander leaves for garnishing ((optional))
salt as required

Steps:

  • Pick and rinse the pink lentils (dhuli masoor dal) well.
  • Pressure cook the pink lentils in a 2-litre pressure cooker with 1.5 to 1.75 cups water, till they become soft and mushy. Pressure cook for 5 to 6 whistles on medium flame.
  • When the lentils are cooked, beat with a wooden spoon or wired whisk lightly.
  • Keep the cooked pink lentils aside. If lentils are not cooked, then add some more water and pressure cook for a few whistles more.
  • In another pan or pot, heat oil. Fry the cumin seeds till golden.
  • Then add onions and fry till they are light golden.
  • Add chopped ginger and garlic. Stir and fry for 10 to 15 seconds or till the raw aroma of ginger and garlic goes away.
  • Add green chilies and red chilies. Stir.
  • Add all the dry spice powders one by one including asafoetida (hing) and stir.
  • Add the tomatoes and fry till the oil separates and the tomatoes become soft.
  • Add the cooked pink lentils. Pour 1 to 1.5 cups water. You can adjust the quantity of water as required.
  • Add salt and stir. Simmer for 6 to 7 minutes more on a low or medium flame till you get the desired consistency.
  • This dal is neither thick nor thin and has a medium consistency.
  • Lastly add kasuri methi and simmer for 1 minute.
  • Towards the end add lemon juice and 1 tablespoon chopped coriander leaves and stir. Switch off the flame.
  • You can also garnish the dal with coriander leaves if you want while serving. Serve this masoor dal hot with steamed basmati rice or roti or chappati.

Please don't sub brown lentils for this, the red lentils have a very different texture. Serve with rice and lemon wedges. Adapted from The Best International Recipe Cookbook. I have provided a varitation using coconut milk.

1/2 teaspoon ground coriander
1/2 teaspoon ground cumin
1/4-1/2 teaspoon ground cinnamon
1/2 teaspoon ground turmeric
1/4-1/2 teaspoon red pepper flakes (or more to desired heat level)
1 tablespoon vegetable oil
1 medium onion, finely chopped
4 -5 garlic cloves, minced (about 4 tsp.)
1 1/2 teaspoons grated fresh ginger
4 cups water or 4 cups vegetable broth
1 1/4 cups red lentils, rinsed
3 large plum tomatoes, cored, seeded, chopped (about 1 pound)
1/2 cup fresh cilantro leaves
2 tablespoons unsalted butter
salt & freshly ground black pepper

Steps:

  • Mix the spices in a small bowl and set aside.
  • Heat the oil in a large saucepan over medium high heat until it shimmers. Add the spices and saute until fragrant, about 10 seconds. Stir in onion and cook till softened, 5-7 minutes. Stir in garlic and ginger and cook till fragrant, about 30 seconds.
  • Now stir in the water and lentils. Bring to a boil. Reduce to a simmer and cook, uncovered, until the lentils are tender and resemble a coarse puree, 20-25 minutes. (At this point, you may refrigerate the lentils in an airtight container up to 2 days. Reheat over medium low heat before continuing).
  • Stir in tomatoes, cilantro, and butter. Season with salt and pepper to taste before serving. Enjoy!
  • Variation:.
  • Substitute 1 cup coconut milk for 1 cup of the water and omit butter. Using coconut milk makes for a lush, creamy texture and rich flavor. Don't use light coconut milk. You can freeze any leftover coconut milk.

What I have come to understand is that how food looks as you prepare it can make as much difference to the cook as it does, on the plate, to the person who gets to eat it. When the skies are drab and life feels a little gray, I am absurdly cheered by the fresh brightness of a vibrantly orange dal, a red lentil stew spiced with turmeric, chili and ginger, and colored with sweet potatoes and tomatoes. Just seeing that mixture in the pan lifts my spirits. It helps that a dal is simple to make: a bit of chopping and the stew all but cooks itself. And it can be made in advance and then reheated, always a bonus. This dal makes a wonderful, exuberant partner to broiled salmon, but I love it without meat, too, when I partner it with my "bright rice."

2 tablespoons vegetable oil
1 cup finely chopped onion
2 1/2 cups (10 ounces, about 1 medium) finely diced sweet potato
1 tablespoon minced ginger
2 garlic cloves, minced
1 Thai or bird's-eye red chili
1 cup red lentils
2 teaspoons ground coriander
2 teaspoons ground cumin
2 teaspoons turmeric
1 teaspoon ground ginger
1 cup canned chopped tomatoes
Salt
3 tablespoons chopped cilantro
Pieces of coconut flesh from a fresh coconut (optional)

Steps:

  • In a large saucepan over medium-low heat, heat oil, and sauté onion until softened. Add sweet potato, and sauté for about 5 minutes. Add minced ginger and garlic; stir, and reduce heat to low.
  • Finely dice chili, keeping seeds if you wish to add more heat. Add chili, lentils, coriander, cumin, turmeric and ground ginger to pan. Stir until lentils are well coated with oil. Add tomatoes and 4 cups water. Raise heat to bring to a boil, then reduce heat until mixture is at a fast simmer. Cook uncovered until lentils and potatoes are soft, stirring occasionally, about 25 minutes.
  • Season to taste with salt, and continue to simmer until mixture has thickened, about 10 minutes. Whisk dal to amalgamate lentils and sweet potatoes. If dal is too soupy, increase heat and cook for a little longer.
  • To serve, place dal in a serving bowl and sprinkle with chopped cilantro. If desired, shave thin strips of fresh coconut on top. Serve hot.

1/2 lb red lentil
water, as needed
2 tablespoons ghee or 2 tablespoons canola oil
1 medium onion, thinly sliced
2 garlic cloves, minced
2 teaspoons whole coriander seeds
2 teaspoons cumin seeds
2 teaspoons dried red pepper flakes
1 teaspoon cardamom seed
6 inches cinnamon sticks, broken
2 teaspoons turmeric powder
salt
1 tablespoon lemon juice or 1 tablespoon tamarind paste
2 cups plain low-fat yogurt or 14 ounces light coconut milk

Steps:

  • Wash the lentils well, and then put them into a sauce pan. Add 4 - 6 cups of salted water to cover the lentils.
  • Bring lentils to a boil then reduce heat, cover and allow to simmer until they are soft. Keep the water level above the lentils.
  • While the lentils are simmering, grind the spices together then toast them over low heat in a dry sauté pan until you have released their aromas. Set spices aside.
  • Using the same sauté pan, heat ghee or oil over low to medium heat. Add onions and sauté until they are soft. Add garlic, sauté another 3-4 minutes. Do not burn the onions or garlic. Add spice mixture; continue to cook for 2 minutes.
  • Once the lentils have become soft, add them and their cooking liquid to the onion and spice mixture (add more water or broth if lentil are too thick). Stir and scrape up any bit from the bottom. Stir in lemon juice, adjust salt and continue to cook for 5 minutes.
  • Just before serving add yogurt and heat through. Serve with a wheat flat bread such as roti.

  • Mix the ginger garlic, curry powder, coriander, garam masala and crushed red pepper in small bowl and set aside.
  • Heat a large soup pot over medium heat. Add your oil, onions and celery and cook on medium high heat for about 2 minutes until vegetables are fragrant and translucent. Stir occasionally to prevent burning.
  • Turn down heat and add the ginger, garlic and spice mix and cook on low heat for about 1 minute, allowing the spices to “bloom” until they become fragrant. Add the lentils, vegetable stock, salt, diced tomatoes and coconut milk.
  • Bring up to a boil, then reduce heat to a low simmer. Cook with a lid on for about 20 minutes, stirring occasionally until lentils are soft. If your heat is up too high, the liquid will evaporate before the lentils are done cooking. If that happens, just add a little bit more stock (or water, if you are using that) and continue to cook. When lentil are soft, turn off your heat and add in your chopped cilantro. Adding cilantro at the end will keep the flavor lively and fresh.

  • Heat the coconut oil in a skillet or saucepan. Add the chopped onions, and sauté for 2-3 minutes until translucent. Then add the garlic and ginger sauté for another minute until fragrant. Lastly, add the spices, and sauté for a few seconds to unfold flavors.

  • For the Chaunk: Heat the oil in a small skillet over high heat and add the mustard and cumin seeds. Fry until the mustard seeds begin to pop, about 10 seconds.   • Before serving, add the lime juice, a little at a time, according to taste. Add more salt as needed. Serve sprinkled with fresh chopped cilantro.
