1 (15 ounce) can fat free spicy refried beans
1/2 cup diced onion
1/4 cup enchilada sauce
1/2 cup shredded fat-free cheddar cheese

Steps:

  • Preheat oven to 350F and lightly spritz a small baking dish with cooking spray (Pam).
  • Spread beans in prepared dish first; add 1/2 cup of diced onions over the beans (if using), then enchilada sauce, and top with cheese.
  • Cover.
  • Bake for 25 minutes.
  • Serve with tortilla chips or corn chips.

I don't recall where I got this recipe from but we like these cookies. You can use full fat products if desired.

1/2 cup light butter
1/2 cup 1% low-fat milk
2 cups sugar
3 tablespoons unsweetened cocoa
1/2 cup reduced-fat peanut butter
1 teaspoon vanilla
1/4 teaspoon salt
3 cups quick-cooking oats
1/2 cup chopped pecans

Steps:

  • In a small saucepan, over medium heat, mix the butter, milk, sugar, and cocoa.
  • Bring to a boil and cook for 1 minute
  • Remove from heat and stir in the peanut butter, vanilla, and salt.
  • Mix in the oats and pecans.
  • Using a small cookie scoop or teaspoon, drop onto waxed paper and allow cookies to stand 1 hours
  • Store in an airtight container.

I came up with this dish to go with sausage and mash- it is a vegetable side and gravy in one. This recipe provides a total of 2 WW points, providing there is no fat in the beef stock. If you are not watching calories as closely, feel free to add more flour to produce a thicker gravy- add 1 WW point per tablespoon of flour added.

3 red onions
3 cups beef stock
2 tablespoons flour
4 tablespoons cold water
2 large sprigs fresh rosemary

Steps:

  • Peel and cut the onions into wedges, about an eighth of an onion each.
  • Put these onion wedges into a saucepan, add the beef stock and heat until just boiling.
  • Meanwhile, mix the flour with the cold water until all lumps are gone.
  • Slowly add the flour and water mixture to the stock, stirring quickly until it is all mixed in.
  • Put the rosemary sprigs in whole.
  • Turn the heat down to a simmer, cover and cook for 20-30 minutes, until the onions are cooked to your liking and the gravy has thickened.
  • Remove the rosemary sprigs and serve over your favourite meat dish.

EASY CHICKEN & BEAN TORTILLAS

This is a good way to use up left over chicken. Instead of cooking in a frying pan this can also be cooked on a panini grill or george foreman grill.

1 small boneless skinless chicken breast, cooked
2 tablespoons low-fat sour cream
2 tablespoons taco sauce
3 -4 tablespoons black beans, rinsed and drained
3 -4 tablespoons shredded sharp cheddar cheese
2 (6 inch) tortillas (or 3)
cooking spray

Steps:

  • Make sure the chicken is warm then cut into large pieces & put into a food processor along with the sour cream & taco sauce. Chop until shredded & well blended.
  • Mix the chicken mixture, beans & cheese in a small bowl. Divide the mixture between 2-3 tortilla shells then fold the shells in half. (so it looks like a half moon).
  • Heat a small frying pan over medium heat. Spray the pan with cooking spray then cook each tortilla until it is golden on each side.

1 lb lean ground chicken
2 (440 ml) cans kidney beans, rinsed and drained
1 (250 ml) can tomato sauce
1/2 cup salsa
1 teaspoon chili powder, and
cayenne pepper
1 garlic clove, minced
1 cup cheese, shredded

Steps:

  • Heat oven to 375F(190C). Cook chicken in skillet over medium heat until fully cooked.
  • In 2L casserole dish, mix chicken with all ingredients except cheese. Cover and bake 40-45 minutes.
  • Sprinkle with cheese. Bake uncovered until cheese is melted.
  • Cook to an internal temperature of 175F (80C).
