BBQ APPLE CIDER RIBS

Saucy and tender bbq apple cider ribs are finger-lickin' AMAZING.

1/2 cup brown sugar
3 tsp garlic powder
4 tsp ancho chile powder (or regular chili powder)
2 tsp salt
1 tsp black pepper
1 tsp onion powder
1/2 tsp smoked paprika
1/4 tsp cayenne pepper
1/4 tsp cinnamon
1/2 cup apple cider
1/3 cup honey
2 racks pork spare ribs (about 6 pounds total)*
1 cup your favorite barbecue sauce (I personally like Head Country Bar-B-Q's Hot & Spicy)

Steps:

  • Preheat oven to 250˚F. Line a large baking sheet with aluminum foil. Spray lightly with cooking spray.
  • In a small bowl, stir together 1/4 cup brown sugar, garlic powder, ancho chile powder, salt, black pepper, onion powder, smoked paprika, cayenne pepper, and cinnamon.
  • Remove 1 Tbsp of this spice mix to a medium bowl, reserving the rest of the spice mix. Add cider, honey, and 1/4 cup remaining brown sugar to the medium bowl. Whisk to combine and set aside.
  • Remove the membrane from the underside of the ribs. Rub the ribs evenly with the spice mixture on both sides. Bake, meaty side up, for 2 1/2 hours.
  • Remove the pan from the oven. Pour the cider mixture over the ribs, turning to coat them evenly. Cover tightly with foil and return to the oven, baking for an additional hour.
  • Preheat a grill. Uncover ribs and brush the top with barbecue sauce. Grill for 15 minutes, turning and brushing with barbecue sauce every few minutes, until glazed.
  • Let rest for 10 minutes before cutting into individual ribs and serving.

Oven-Braised Country Style Pork Ribs With Apple Cider image

Slow braising in the oven makes these country-style pork ribs tender and flavorful. This pork dish is perfect for fall and winter family meals.

3 1/2 to 4 pounds bone-in country style pork ribs (or about 2 to 2 1/2 pounds boneless)
Kosher salt and freshly ground black pepper
3 tablespoons extra virgin olive oil ( divided )
1 large onion ( chopped or sliced)
1 large carrot (diced)
2 ribs celery (chopped)
3 to 4 medium cloves garlic (finely minced)
3/4 cup apple cider
1/4 cup cider vinegar
1 cup chicken broth
2 tablespoons tomato paste
2 bay leaves
1/2 teaspoon dried leaf thyme

Steps:

  • Gather all ingredients.
  • Heat the oven to 300 F (150 C/Gas 2).
  • Sprinkle the pork ribs with kosher salt and freshly ground black pepper.
  • Heat 2 tablespoons of olive oil in a large Dutch oven over medium heat. Add the ribs, in batches if necessary, and sear on all sides. Remove to a plate and set aside.
  • Add the remaining 1 tablespoon of olive oil to the pan. Add the onion, carrot, and celery. Cook, stirring until onion is translucent and lightly browned. Add the minced garlic and continue cooking for 1 to 2 minutes longer.
  • Add the ribs back to the pan. In a bowl, combine the cider, vinegar, chicken broth, and tomato paste; blend well. Add the bay leaves and thyme; pour over the ribs. Cover the Dutch oven and bake for 3 hours, or until very tender.
  • Skim the fat from the juices and remove bay leaves. Taste and add salt and pepper, if needed. If desired, thicken the juices (see note below).
  • Serve the ribs with the vegetables and juices, along with boiled or mashed potatoes. Note: To thicken the juices, combine 1 1/2 tablespoons of flour with 2 tablespoons of cold water, stirring until smooth. Bring the skimmed juices to a simmer on the stovetop; stir in the flour mixture and cook, stirring, until thickened.

It's time to give back to the Allrecipes community for all they have given to me. This recipe is the culmination of learning how to make BBQ ribs for competition, plus learning from my family members who are all pressure cooker experts. The end result, after years of trial and error, will have everybody licking their fingers in complete ecstasy. You can save a few teaspoons of BBQ sauce, throw it into 2 boxes of mac and cheese, and serve the ribs alongside.

2 quarts apple cider
1 teaspoon garlic powder
1 teaspoon salt
½ teaspoon paprika
½ teaspoon ground black pepper
2 racks baby back ribs, cut into individual ribs
2 (12 ounce) bottles BBQ sauce
6 cloves garlic, coarsely chopped
2 tablespoons brown sugar
1 tablespoon chili garlic sauce

Steps:

  • Pour apple cider into an 8-quart multi-functional electric pressure cooker (such as Instant Pot®) to about 1/2 inch below the rack line. Stir in garlic powder, salt, paprika, and pepper. Place rack inside and heat the liquid completely; place ribs on rack.
  • Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 27 minutes. Allow 10 to 15 minutes for pressure to build.
  • Preheat the oven to 350 degrees F (175 degrees C). Line a baking pan with a roasting rack.
  • Pour about 2 cups BBQ sauce into a large cup. Add garlic, brown sugar, and chili sauce. Mix with a hand blender until completely smooth. Combine with the remaining BBQ sauce in a large bowl. Set aside to come to room temperature.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes.
  • Remove ribs carefully and drain cooking liquid. Fully submerge each rib into the BBQ sauce. Place on the roasting rack so they are not touching. Brush extra BBQ sauce on top to make them extra sticky.
  • Bake in the preheated oven until sauce is set, 15 to 20 minutes.

2 lbs baby back ribs
1 1/2 cups apple cider
dry rub seasonings or barbecue sauce, of your choice

Steps:

  • Place a 2 lb. rack of baby back ribs in a foil lined shallow pan.
  • Add 1 1/2 cups apple cider and cover lightly with foil.
  • Bake at 250° for 3 hours basting every 1/2 hour or so with the cider.
  • After 3 hours remove from oven and add rub or sauce to ribs.
  • Drain off some liquid if needed.
  • Return to oven and bake uncovered for 1 hour at 325°.

2 racks of baby-back pork ribs (baby back)
1 cup kc Masterpiece Original barbecue sauce
1/4 cup dark brown sugar
4 teaspoons garlic salt
4 teaspoons chili powder
2 teaspoons salt
1 teaspoon black pepper
1/2 teaspoon celery salt
1/4 teaspoon red pepper
1/4 teaspoon cinnamon
1/4 teaspoon white pepper
1/2 cup apple cider
1/4 cup apple jelly
1/4 cup honey
1/4 cup brown sugar

Steps:

  • Remove membrane from the back of rib slabs. In a small bowl, combine dry rub ingredients and mix well. Reserve one tablespoon of the rub for the liquid seasoning mixture.
  • Generously apply dry rub onto front and back sides of ribs. Gently pat to ensure that rub will adhere.
  • Build a charcoal fire for indirect cooking by situating the coals on only one side of the grill, leaving the other side void. Add a small aluminum pan to the void side of the grill and fill it halfway with water.
  • When the charcoal grill reaches 250°F, place ribs meat-side up on grill grate and cook over indirect heat for 2 hours and 15 minutes.
  • Remove ribs from grill. Place each slab meat-side down on its own doubled aluminum foil square. The foil should be large enough to completely wrap each slab. Mix liquid seasoning in a small bowl. Pour 1/2 cup of the liquid over each slab.
  • Then, tightly wrap and seal each slab with aluminum foil. Place the wrapped ribs back in cooker for 1 hour at 250°F.
  • Remove ribs from grill, unwrap, and discard foil. Brush finishing glaze on both sides of ribs.
  • Place ribs back on the grill for 15 minutes, or until sauce caramelizes.
