- To make Vanilla Simple Syrup:
- In a small saucepan, over medium heat combine the sugar, water, vanilla bean seeds, and vanilla pod. Bring to a boil, then reduce the heat to a simmer. Cook, stirring occasionally, until the sugar has dissolved, about 5 minutes. Remove the pan from the heat and allow the syrup to cool, about 20 minutes. Strain before using.
- Yield: 1 cup
HOMEMADE LEMONADE

Steps:
- Blitz the lemons in a food processor or blender with half of the sugar, some ice cubes and 500ml/18fl oz water. Strain the juice into a jug and reserve.
- Tip the lemon pulp back into the food processor. Add the rest of the sugar, more ice cubes and 500ml/18fl oz water and blitz again. Strain this into the jug with the reserved juice (discard the pulp). Serve with lots of ice.

- Beat together cream cheese, sour cream, lemon juice, lemon zest, vanilla and sugar with an electric mixer until smooth.
- Spoon and smooth mixture over graham cracker crust, then refrigerate until firm, at least 2 hours.

- If glazing; heat preserves, brandy and sugar in microwave 45 seconds, or until melted.

BLUEBERRY LEMONADE

- For the blueberry syrup: Put the blueberries, sugar and lemon juice in a saucepan. Bring to a boil, stirring constantly, then reduce the heat and simmer until thick, 20 to 25 minutes.
- Strain the blueberries through a fine-mesh strainer, pressing to get all the liquid out, then place the liquid in the fridge and chill until cold (or place the pan in a bowl of ice to chill down fast).
- For the lemonade: Mix the sugar with 6 cups of tap water and stir until the sugar is dissolved to make a simple syrup.
- Pour the lemon juice into a large vat. Pour in three-quarters of the simple syrup and 8 cups of water (give or take). Add the blueberry syrup, stir it around and then give it a taste. Add more simple syrup if it needs sweetness, or more water if it needs dilution. Top up with lots of ice before serving.

- Wash the lemons, then thinly slice them and put the slices into a large bowl with the sugar and citric acid.
- Pour on 2 litres of boiling water and stir to dissolve the sugar. Cover and then leave in a cool place overnight (you can transfer it to the fridge once it is cold).
- The next day, strain the lemonade through a sieve and discard the lemon slices, then pour the lemonade into sterilised bottles and store them in the fridge.
- To serve, dilute 1 part lemonade to 2 parts chilled sparkling water in a tall tumbler. Add plenty of ice, lemon slices and mint sprigs.

- Measure the flour and baking powder into a processor. Add the butter and process until a crumble, then add the sugar. Or make by hand by rubbing the butter into the flour using your fingertips until the mixture resembles fine breadcrumbs.
- Beat the eggs together until blended and make up to a generous 300ml (1/2 pint) with the milk, then put about 2 tablespoons of the egg/milk aside in a cup for glazing the scones later.
- Turn the dough onto a lightly floured surface and flatten it out with your hand, or use a rolling pin, to a thickness of 1-2 cm (1/2 – ¾ inch). Use a 5 cm (2 inch) fluted cutter to stamp out the dough by pushing the cutter straight down into the dough (as opposed to twisting the cutter) then lift it straight out.
- Arrange the scones on the prepared baking trays and brush the tops with the reserved beaten egg/milk mixture to glaze. Bake for about 10-15 minutes or until the scones are well risen and golden.
