GREEN BEANS WITH WARM BACON DRESSING

- Cook the beans in a large pot of boiling water until tender-crisp, about 5 minutes. Drain. Pat dry. Place the beans in a large bowl.
- Cook the bacon in a skillet, and transfer to drain, reserving the drippings in the skillet. Add the shallots and garlic to the drippings. Saute over medium, 1 minute or just until soft. Add the vinegar, Dijon and dry mustard. Whisk, stirring to loosen the browned bits in the bottom of the skillet. Remove from the heat and slowly whisk in the olive oil.
- Toss the beans with the warm dressing. Season with salt. Arrange on a serving platter. Sprinkle with the reserved bacon, goat cheese and dried cranberries. Serve immediately.
ALL AMERICAN BACKYARD BURGER

- Preheat the grill to medium-high. In a large bowl, mix the ground beef, spinach, onion, Worcestershire sauce, and 3 teaspoons each of the salt and pepper.
- Divide the meat equally into 12 portions and form into patties about 1 inch thick. Season both sides of the patties lightly with salt and pepper.
- Lightly brush the grill grates with vegetable oil and place the patties on the grates. Grill the patties for 4 to 5 minutes, then flip and grill 4 minutes more for medium. Place a slice of cheese on top of the patties and cook an additional 1 minute or until melted. Toast the buns (if desired), cut sides down, 30 seconds to 1 minute, or until lightly toasted.
- Serve burgers with desired toppings.
BACON-CHEDDAR BUTTERMILK BISCUITS

- Preheat oven to 450 degrees. In a large bowl, whisk together flour, sugar, salt, pepper, baking powder, and baking soda for 30 seconds. Toss butter into dry mixture to evenly coat, then press between your fingers to create flower-petal shapes and return to bowl. Stir in bacon and cheddar.
- Slowly drizzle buttermilk over flour-butter mixture (to evenly distribute) while stirring with a fork. Stop stirring when dough begins to form but mixture is still crumbly. Transfer to center of a parchment-lined baking sheet. Gather dough with your hands, pressing firmly to bind, and flatten it into a 6-by-10-inch rectangle. Lift parchment along a short end of dough and fold in half, forming a 6-by-5-inch rectangle. Turn dough 90 degrees; gently reflatten to 6 by 10 inches. Fold in half again and flatten slightly into a 6-inch square.
- To keep things easy, form the dough on the same tray it's baked on. Cut it into thirds in both directions with a large, sharp knife, to form 9 biscuits. Brush tops with buttermilk. Bake until puffed, golden brown on top, and hollow-sounding when tapped on bottom, 16 to 18 minutes. Transfer to a kitchen towel-lined basket; cover to keep warm. Serve with butter and a fried egg.

- 1. Preheat oven to 450 ̊. Line a baking sheet with parchment paper (or lightly coat with vegetable oil). Whisk flour, sugar, baking powder and salt in a large bowl. Cut in butter using a pastry cutter (or using 2 knives) until butter resembles size of peas. Stir in cheese and bacon. Whisk together egg and buttermilk in a small bowl. Add to flour mixture; stir until just incorporated. 2. Turn dough out onto a lightly floured surface. Roll dough to 3⁄4-inch thickness. Cut into rounds using a 3-inch round cookie cutter. Place dough rounds on prepared baking sheet (spaced 2 inches apart). Reroll dough scraps; cut rounds, and add to baking sheet. Bake biscuits in oven until golden brown, 12 to 14 minutes.
