ARTICHOKE DIP WITH FONTINA

Everyone loves this warm, cheesy dip, especially when it's served with crunchy pita chips.

2 tablespoons extra-virgin olive oil
1/2 medium yellow onion, diced small
3 garlic cloves, finely chopped
3 cans (14 ounces each) whole artichoke hearts, drained and coarsely chopped
1/3 cup dry white wine
4 ounces Neufchatel cream cheese, room temperature
2 1/4 cups cubed Fontina cheese (about 3/4 pound)
1/4 cup chopped fresh parsley
8 pitas, each cut into 6 wedges

Steps:

  • Preheat oven to 400 degrees. In a large skillet, heat 1 tablespoon oil over medium. Add onion and cook until softened, about 5 minutes. Add garlic and cook until fragrant, 1 minute. Add artichokes and wine; cook until liquid evaporates, about 8 minutes.
  • Remove skillet from heat and stir in cream cheese until blended. Fold in 1 1/4 cups Fontina and parsley. Transfer mixture to a 2-quart baking dish; sprinkle with 1 cup additional Fontina. Bake until golden and bubbling, 30 minutes.
  • Meanwhile, in a large bowl, toss pitas with 1 tablespoon oil; spread on a rimmed baking sheet. Bake until golden and crisp, 15 to 20 minutes. Serve warm dip with pita chips.

This is our best version of the classic party dip. It's savory and creamy with a slight tang from sour cream and Parmesan -- so hard to resist. We like to use frozen whole leaf spinach and chop it ourselves for more control over the finished texture of the dish.

Nonstick cooking spray
8 ounces cream cheese, at room temperature
1/2 cup sour cream
1/4 cup mayonnaise
1 clove garlic, grated
One 10-ounce box frozen leaf spinach, thawed, drained, squeezed dry and coarsely chopped (see Cook's Note)
One 14-ounce can artichoke hearts, drained well and coarsely chopped
1/2 cup shredded whole-milk mozzarella
3/4 cup freshly grated Parmesan
Kosher salt and freshly ground black pepper
Crackers, chips or toasted bread, for serving

Steps:

  • Position a rack in the upper third of the oven and preheat to 350 degrees F. Spray a 1-quart baking dish with nonstick cooking spray.
  • Put the cream cheese, sour cream, mayonnaise and garlic in a large bowl. Mix vigorously until combined and smooth. (If you prefer, you can use a stand mixer fitted with the paddle attachment.) Add the spinach to the cream cheese mixture, breaking it up as you add it. Add the artichokes, mozzarella and 1/2 cup of the Parmesan, mixing to combine. Season with salt and pepper. Transfer the mixture to the prepared baking dish and top with the remaining 1/4 cup Parmesan.
  • Bake until the dip begins to bubble, 20 to 25 minutes. Turn the oven to broil and continue to cook, keeping an eye on it so it doesn't burn, until the top is golden brown, about 5 minutes. Serve warm with crackers, chips or toasted bread.

1 garlic clove
50g pine nut , toasted, plus extra
zest and juice 1 lemon
3 tbsp grated parmesan (or vegetarian alternative)
20g pack flatleaf parsley , a few leaves reserved
3 tbsp extra-virgin olive oil

Steps:

  • Combine all ingredients in a food processor or blender, then season with salt and pepper. Purée until fine, then scrape into a bowl. Sprinkle with extra pine nuts and the reserved parsley leaves to serve.

2 cans (14 ounces each) artichoke hearts in water, rinsed, drained, and coarsely chopped
1/2 cup light mayonnaise
1/4 cup plus 1 tablespoon grated Parmesan cheese
1 tablespoon fresh lemon juice
1 garlic clove, coarsely chopped
1 scallion, minced, plus more for garnish
Crudites (such as raw pepper wedges) or whole-wheat pita chips, for serving

Steps:

  • Preheat oven to 425 degrees. In a food processor, place half the artichokes, the mayonnaise, 1/4 cup Parmesan, lemon juice, and garlic. Process until smooth.
  • Add scallion and remaining artichokes; pulse once to combine. Transfer mixture to a 1-quart baking dish. Top with remaining tablespoon Parmesan.
  • Bake until golden and bubbling, 30 to 35 minutes. Garnish with scallion, and serve with crudites or pita chips.

This was served at my Red Hat Honey's club meeting last month and oh, how everyone raved about it. Gail was kind enough to share the recipe with us, so I am "paying it forward" and sharing it here. Servings depend on what else is served, so I have estimated. There were about 15 in our group, but we had at least 15 dishes in all. If you try it, I hope you enjoy it :)

1 medium onion, chopped
2 tablespoons butter
1 cup sour cream
1 cup mayonnaise
1 (1/2 ounce) package ranch dressing
1 (15 ounce) can artichoke hearts, drained and quartered
1 (15 ounce) can black beans, rinsed and drained
4 tablespoons parmesan cheese, shredded
1 cup mozzarella cheese
chips, of your choice

Steps:

  • Preheat oven to 350 degrees.
  • Saute onion in the butter.
  • Mix together the sour cream, mayonnaise, ranch dressing, artichoke hearts, black beans and parmesan cheese.
  • Combine the onions with the sour cream mixture in a baking dish.
  • Top with the cup of mozzarella cheese.
  • Bake at 350 for 30-40 minutes.
  • Serve with tortilla scoops or chips of your choice and enjoy!

  • Puree two 14-ounce cans black beans (drained and rinsed), 2 minced garlic cloves, 1/4 cup each olive oil and lemon juice, 1 tablespoon white wine vinegar, 1 teaspoon ground cumin and a pinch each of salt and pepper in a food processor until almost smooth. Let sit 15 minutes before serving.

1 can artichoke hearts, drained

2 T lemon juice (try LIME but M uses lemon)

1 tsp salt

  • 1. In a food processor, chop garlic and jalapenos. 2. Add remaining ingredients, and process until smooth. 3. Serve with tortilla chips.

SPINACH ARTICHOKE DIP

8 tablespoons (1 stick) butter, plus more for buttering the casserole dish
1/4 cup minced garlic
One 10-ounce bag fresh baby spinach
Kosher salt and freshly ground black pepper
Two 14-ounce cans artichoke hearts, rinsed, drained and quartered
3 tablespoons all-purpose flour
1 1/2 cups whole milk, plus more if needed
One 8-ounce package cream cheese, softened
3/4 cup grated pepper Jack cheese, plus more for topping
1/2 cup crumbled feta
1/2 cup grated Parmesan
1/4 teaspoon cayenne
Salted Pita Wedges, recipe follows, for serving
6 pita breads
1/2 cup olive oil
1 tablespoon kosher salt

Steps:

  • Preheat the oven to 375 degrees F. Butter a 9-inch round casserole dish.
  • Melt 3 tablespoons butter in a skillet over medium heat. Add the minced garlic and cook for a couple of minutes. Crank up the heat a bit and throw in the spinach. Stir the spinach around and cook for a couple of minutes until it wilts; season with salt and pepper. Transfer the spinach to a mesh strainer set over a bowl to drain. Set aside.
  • Melt 2 tablespoons butter in the same skillet, throw in the quartered artichokes and cook over medium-high heat until the artichokes start to get a little color, about 3 minutes. Transfer the artichokes to the strainer with the spinach.
  • In the same skillet or a different pot, melt the remaining 3 tablespoons butter and whisk in the flour until it makes a paste. Cook over medium-low heat for a minute or 2, then pour in the milk. Stir and cook until slightly thickened, about 3 minutes; splash in more milk if needed. Add the cream cheese, pepper Jack, feta, Parmesan and cayenne and stir until the cheeses are melted and the sauce is smooth. Chop the artichokes and spinach and add them to the sauce. Stir to combine.
  • Pour the mixture into the prepared casserole dish. Top with extra grated pepper Jack and bake until the cheese is melted and bubbly, about 15 minutes. Serve with the Salted Pita Wedges.
  • Preheat the oven to 375 degrees F.
  • Cut the pita breads into 6 wedges each. Lay the wedges on a foil-lined baking sheet and brush both sides generously with the olive oil. Sprinkle both sides with salt, then bake until they're golden brown and crisp, 15 to 18 minutes.

This delicious Artichoke Dip is one of my favorite easy appetizers, made with simple ingredients in less than 30 minutes! We love it served warm, with crackers or bread chunks for dipping.

8 ounce can artichoke hearts ((not marinated), drained and chopped)
1/2 cup sour cream
1/2 cup mayonnaise
8 ounces cream cheese (, softened)
1 1/4 cups freshly grated parmesan cheese
1 clove garlic (, minced)
dried dill weed (, to taste (fresh or dried))

Steps:

  • Preheat oven to 350 degrees F.
  • To a mixing bowl add sour cream, mayo, cream cheese, garlic and 1 cup of parmesan cheese. Combine until smooth.
  • Stir in chopped artichoke hearts and a little bit of dill weed, to taste.
  • Place in a greased baking dish (most pan sizes around 8x8 in or a little smaller will work. You could even use a pie pan).
  • Sprinkle remaining 1/4 cup of parmesan cheese on top. Sprinkle with a little extra dill weed, if desired.
  • Bake in preheated oven for about 20 minutes or until hot and bubbly. Serve warm with crackers, bread, or veggies.

8 ounces cream cheese, room temperature
1/3 cup sour cream
2 cans (6.5 ounces each) whole clams, such as Bar Harbor Premium, drained and coarsely chopped, 3 tablespoons liquid reserved
1/2 teaspoon Worcestershire sauce
2 teaspoons minced shallot
1/8 teaspoon cayenne pepper, plus more for sprinkling
Coarse salt
Potato chips, for serving

Steps:

  • Preheat oven to 375 degrees. Stir together cream cheese and sour cream in a medium bowl until smooth. Stir in clams and liquid, Worcestershire, shallot, cayenne, and 1/4 teaspoon salt until combined. Transfer mixture to a 2 1/2-to-3-cup baking dish.
  • Bake until bubbly and top is golden brown in spots, about 30 minutes. Serve warm, sprinkled with cayenne, with potato chips.

  • Place garlic and rosemary in a food processor and finely chop. Add lemon juice and blend. Add beans and artichoke hearts and puree until smooth, stopping the machine a few times to scrape down the sides. Salt and pepper to taste. Serve with carrot and celery sticks and/or pita bread (not potato chips!). Dip will keep refrigerated for 2 to 3 days.

3 lemons, halved
10 globe artichokes
Coarse salt
1 cup 10-Minute Vinaigrette (lemon variation), divided
6 cups mixed fresh beans, such as green, romano, and wax (1 1/2 pounds), trimmed
1/2 cup roughly chopped fresh flat-leaf parsley leaves, plus more for garnish

Steps:

  • Squeeze juice of 1 lemon into a bowl of cold water; add rinds. Working with 1 artichoke at a time, snap off dark outer leaves to expose yellow leaves with green tips. Cut off dark-green top of artichoke with a serrated knife until only the pale part remains. Trim dark-green parts from base and stem with a paring knife. Scrape out purple leaves and fuzzy choke with a spoon. Rub artichoke with lemon, and add to lemon water.
  • Bring a large pot of water to a boil. Add 2 teaspoons salt and the artichokes. Return to a boil, then reduce to a simmer. Cook until artichokes are tender when pierced with a knife, 15 to 20 minutes. Remove artichokes; let cool. Cut into 1/2-inch slices.
  • Transfer artichokes to a bowl. Add 1/2 cup vinaigrette. Let stand at room temperature 1 hour or refrigerate up to 1 week.
  • Bring a large pot of water to a boil. Add 1 tablespoon salt and half the beans. Boil until beans are tender and color is bright, about 5 minutes. Transfer beans to a colander with a slotted spoon; run under cold water. Repeat with remaining beans.
  • Just before serving, toss beans with 1/4 cup vinaigrette and the parsley. Arrange on a platter. Surround with artichokes; garnish with parsley.

6 tablespoons unsalted butter, room temperature
1/4 cup all-purpose flour
2 cups whole milk, warmed
2 teaspoons coarse salt
Freshly ground black pepper, to taste
1/8 teaspoon cayenne pepper
1 cup grated Parmesan cheese (3 ounces)
1 cup grated pecorino cheese (3 ounces)
1 large onion, finely chopped
1 tablespoon fresh thyme leaves, chopped, plus leaves for garnish
3 garlic cloves, minced
1 1/2 teaspoons finely grated lemon zest
1/4 cup fresh breadcrumbs
Sliced fennel, radishes, carrots, celery, and cauliflower florets, for serving

Steps:

  • Remove leaves from 1 artichoke heart; pat dry, and reserve. Thinly slice remaining artichokes; pat dry.
  • Preheat oven to 400 degrees. Melt 4 tablespoons butter in a saucepan over medium heat. Add flour, and cook, stirring constantly, for 2 minutes. Whisk in milk, and bring to a boil. Add salt, pepper, and cayenne, and simmer until thickened, about 2 minutes. Remove from heat, and stir in cheeses.
  • Melt remaining 2 tablespoons butter in a skillet over medium-high heat. Add onion, and cook 3 minutes. Add thyme, garlic, and sliced artichokes, and cook for 3 minutes. Add to cheese mixture along with zest. Transfer to an 8-cup baking dish. Top with reserved artichoke leaves. Sprinkle with breadcrumbs.
  • Bake until golden and bubbling, about 15 minutes. Let cool slightly. Garnish with thyme leaves. Serve with crudites.
