2 tablespoons vegetable oil
1 onion, finely chopped
1/3 cup chopped celery
1 tablespoon minced garlic
1 tablespoon paprika
1/2 teaspoon cayenne pepper
3/4 cup ketchup
1/2 cup beer
1/4 cup cider vinegar
1 tablespoon Worcestershire sauce

Steps:

  • In a medium saucepan, heat oil over medium.
  • Add onion and celery and saute 5 minutes or until tender.
  • Add paprika, garlic and cayenne.
  • Saute 1 minute more.
  • Add ketchup, beer, vinegar and Worcestershire sauce.
  • Simmer, uncovered, on medium-low until slightly reduced and flavors have blended, about 30 minutes.
  • This can be prepared in advance and refrigerated or frozen.

1 3/4 pounds semi sweet chocolate, broken into small chunks
1 cup sugar
1 cup warm water
1 cup light corn syrup
1/2 cup unsalted butter, melted
1 tablespoon vanilla extract

Steps:

  • In the top of a double boiler over gently simmering water, melt the chocolate, stirring occasionally. Remove from the heat. In a bowl, stir together the sugar and the water until all granules of sugar have dissolved. Stir in the dissolved sugar mixture and the corn syrup thoroughly into the chocolate until all are absorbed. Return the pan to low heat and stir in the margarine and the vanilla. Serve at once or cool, cover, and refrigerate in 1 cup containers. Reheat to the desired temperature before serving.

I have messed around for a few years on this recipe. This I find is extremely tasty and easy. I like it because you can choose to add things like Italian Sausage, Meat Balls,Veggies and more. you can use over many types of Pasta and other dishes that call for tomato sauce. If you like a little heat with your sauce add cayenne pepper to taste. Have fun and enjoy

1 lb beef ground sirloin or 1 lb ground round
1 lb ground pork or 1 lb ground chicken
1 large onion, chopped
1 green bell pepper, chopped
7 garlic cloves, sliced
1 tablespoon basil or 3 tablespoons chopped fresh basil
1/2 tablespoon oregano
1/4 teaspoon cayenne pepper
1 tablespoon garlic salt
1 teaspoon fresh ground pepper
2 tablespoons thyme
4 (14 1/2 ounce) cans diced tomatoes with basil, ect
2 (14 1/2 ounce) cans peeled tomatoes
1 (4 ounce) can tomato paste
4 tablespoons olive oil
1/2 cup red wine

Steps:

  • Put Chopped Onion, Green Pepper and Garlic in fairly large pot.Add Olive oil and cook till Tender. Add spices and cook for around 2 minute Stir every so often to mix.add everything that is in a can plus the wine . Stir and bring to a slight boil. Cut back to simmer cover and cook for 2-3 Hours. Add the Tomato Paste cover and simmer for another. Salt and pepper to taste and enjoy.

I have been experimenting with cranberries to try and come up with a sauce that has some delightful flavors. I used various combinations of ingredients and woweee, this one so far is the best.

Number Of Ingredients 9

12 ounces fresh cranberries or 12 ounces frozen cranberries
1/2 cup frozen concentrated orange juice
1/2 cup cold water
1/2 cup granulated sugar
3/4 cup pineapple-orange marmalade
3 inches cinnamon sticks
1/4 teaspoon freshly grated nutmeg
1 tablespoon lemon zest
2 teaspoons orange zest

Steps:

  • Wash the cranberries thoroughly in cold water. If using frozen cranberries, thaw first.
  • In a medium size saucepan, add cranberries, orange juice, water, sugar, orange-pineapple marmalade, cinnamon stick, nutmeg, lemon zest and orange zest.
  • Bring mixture to boil.
  • Reduce heat and simmer for about 10 minutes or until most of the cranberries pop, stirring occasionally.
  • When cooked, discard cinnamon stick.
  • Let cool and then store in a glass container with lid or a dish covered with plastic wrap.
  • Keep refrigerated.
  • Use as required.
  • NOTE: If desired, add 1 1/2 ounces of Light Bacardi Rum when cooking the sauce.
  • This is for ADULTS only who accept liquor.
  • This gives the cranberry sauce a whole new taste. This is YUM, YUMMY good.

This is the basting sauce my Southern friend used when barbequing a whole pig. It makes a large batch that keeps well, up to 6 months in the fridge. I use it on pork roast, chops and poultry. Marinate the meat of choice and brush it often while grilling.

½ cup Worcestershire sauce
¼ cup hot sauce
¼ cup salt

  • Combine vinegar, sugar, ketchup, Worcestershire sauce, hot sauce, salt and pepper in a large jar and shake well.n
