- Line an 8 by 8-inch pan with aluminum foil. Set aside.
- In a large saucepan over medium heat, combine marshmallow cream, sugar, evaporated milk, butter, and salt. Bring to a full boil, and cook for 5 minutes, stirring constantly until thick.
- Remove from heat and pour in the milk chocolate chips. Stir until chocolate is melted and mixture is smooth. Stir in nuts and vanilla. Pour into prepared pan. Chill in refrigerator for 2 hours or until firm. Cut to small squares and wrap in the "dream" or parchment paper.

- Use a paper towel to grease an 8x8x2-inch pan with butter -- all over the sides and bottom. Set aside.
- Combine the sweetened condensed milk and chocolate chips in a saucepan. Heat the mixture over low heat, stirring constantly, until the chocolate is completely melted. Once the mixture is smooth, remove the pan from the heat.
- Stir in the vanilla extract until completely combined. Add the marshmallows and stir just enough to envelope them in the fudge mixture -- but don't overstir, the marshmallows will melt in if you stir too long.
- Pour the fudge into the prepared pan and smooth the top slightly. Refrigerate to set, 1 1/2 hours or longer. Once set, cut into 1-inch squares and devour.

- Lightly brush an 8-inch baking pan with butter, then line with parchment, leaving 2-inch overhang on two sides. Lightly butter parchment.
- In a medium saucepan, combine remaining 2 tablespoons butter, sugar, evaporated milk, and salt. Bring to a boil over medium-high heat, stirring constantly, then cook for 3 minutes more, until pale golden and thickened slightly. - Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
- In a large bowl, stir together the white sugar and cocoa. Mix in the melted butter until well blended. Beat in the eggs one at a time, then stir in 2 teaspoons vanilla. Combine the flour, baking powder and salt; stir into the chocolate mixture. Fold in walnuts. Spread evenly into the prepared pan.

- Over medium low heat, melt butter. Add half and half. Mix well.
- Pour in sugar and mix until melted. Turn up heat to just above medium, maybe medium high depending on how hot your stove gets. You don't want too much heat. Bring sugar mixture to a boil. Stir constantly. DO NOT STOP STIRRING.
- When the mixture begins to boil, use a candy thermometer or a handheld instant read thermometer to monitor temperature. Stir constantly until the temperature reaches 234°F. Don't let it go over! This took me about 7-8 minutes of boiling and stirring to reach this point. Be patient!
- Immediately remove from heat. Keep stirring. Pour in chocolate chips little by little. Completely melt each batch. When most of the chocolate is melted, stir in vanilla.
- Pour in marshmallow cream and mix until fully incorporated. Add nuts. Mix in.
- In a small cake pan (9x9, 8x8, 7x9) lined with parchment paper, pour in fudge mixture. Smooth top. Place in refrigerator and cool for about 3-4 hours.
- Remove from pan. Cut and enjoy!

- Prepare a 9-inch or 8-inch (for slightly thicker fudge) pan by lining it with lightly greased parchment paper or non-stick aluminum foil. Set aside.
- In a large, microwave-safe bowl place the chocolate chips, condensed milk, and marshmallow creme. Microwave for 90 seconds at 70 percent power. Use the residual heat to stir the mixture well until the chocolate is fully melted and smooth. If necessary, microwave for additional 15 second intervals.
- If you prefer the stove-top instead of the microwave, melt the mixture in the top of a double boiler or in a bowl on top of a saucepan of simmering water.
- Remove from the heat and stir in the vanilla extract and pinch of salt. Gently fold in the marshmallows.

MARSHMALLOW FUDGE COOKIES
This takes some time to prepare, but is well worth it. It also has elements of a candy-making recipe in it, so I am guessing that if you are an experienced candy-maker, then you are going to be able to finish it faster than I - this is the only kind of candy making recipe that requires knowledge about "soft boil stage" that I have used so far. - Combine diced marshmallows, graham cracker crumbs, and nuts in a medium bowl and mix well.
- Combine sugar, whole milk, unsweetened chocolate, and salt in a medium pot on the stove and boil to soft ball stage, watching for sticking and stirring frequently. (This is the tricky part -- you can't leave it- it can either stick or boil over).
- Gradually increase heat, stirring constantly. You are looking for a thick consistency and have to keep moving the heat up and down while stirring to try to reach soft ball stage. (If you don't make candy --- I don't, so I had to research this a bit --- and don't know what that means, here is how to do the soft ball test: have a bowl of cold water ready next to your stove. Drop a small amount of the mixture into the cold water to see if a ball forms. Once one does, you can remove the mixture from heat).
- Cool second mixture and add 1 t vanilla and 2 T butter. Mix well.
- Pour the sugar mixture into the bowl containing the marshmallow mixture, and mix well.
- Pack into a greased 9x13" pan and cool in fridge. Chill until firm.
- Cut into squares and toss in powdered sugar.

- Add butter, sugar and evaporated milk in heavy bottom good quality saucepan. I use my 6 quart Le Creuset Dutch Oven.
- Turn heat on high. Start stirring and continually stir while the mixture comes to a rolling boil.
- Continue stirring constantly for about 5 minutes or until it gets to a "soft ball" stage. Your candy thermometer should read between 234 - 240 degrees. If you don't have a candy thermometer, after 5 minutes drop a small dollop of the sugar mixture into a glass of cold water. If it forms a soft ball "clump" the sugar mixture is hot enough. If the ball doesn't form, cook for another minute or so.
- Remove from the pan from the heat; stir in the chocolate chips, and marshmallow creme. After a few stirs, add the vanilla. Mix until well blended then add nuts and stir to combine.
- Pour into a buttered 9 x 13 inch pan.
- Let the fudge completely cool at room temperature before cutting into squares.
