It's a perfect Autumn dessert that makes the most of ripe pears when they're in season. Smart and yet rustically casual, this tart is fitting for any occasion!

1 Sweet Tart Crust ((Note 1))
4 pears ((of equal size, 220g/7oz each, ~10cm/4" tall, Note 2))
1 lemon (, to acidulate water and stop pears from going brown (Note 3))
2 litres / 2 quarts water
1 cup white sugar
1/2 tsp vanilla extract (or 1/4 tsp vanilla powder (Note 4))
100g / 7 tbsp unsalted butter (, softened, cut into 1cm / 0.4" cubes)
1/2 cup caster sugar
2 large eggs (, 55-60g / 2 oz each, at room temperature)
3/4 cup pistachios (unsalted, roasted) (, shelled and skinned (blitz until fine powder))
2 1/2 tbsp pistachios (unsalted, roasted) (, finely chopped (for sprinkling))
2 tbsp apricot jam (, mixed with 1 tsp water and warmed in microwave (for glazing))

Steps:

  • Make and bake Tart Crust, then fully cool before using.

Butterscotch Blondies
3/4 cup coarsely chopped dried pear
3/4 cup shelled pistachios, coarsely chopped (3 1/4 ounces)
1/4 cup chopped candied ginger

Steps:

  • Follow the recipe for Butterscotch Blondies, buttering a 9-inch springform pan in step 1. Proceed with recipe.
  • At the end of step 3, mix dried pear, the pistachios, and candied ginger into batter. Bake until a cake tester inserted into blondies (avoid center and edges) comes out with a few crumbs but is not wet, 33 to 35 minutes.

9 tablespoons (1 stick plus 1 tablespoon) unsalted butter, room temperature, plus more for pan
1 2/3 cups all-purpose flour
1 teaspoon baking powder
3/4 teaspoon coarse salt
1 cup packed light brown sugar
2 large eggs
1 teaspoon pure vanilla extract
3/4 cup coarsely chopped dried pears (4 ounces)
3/4 cup shelled pistachios, coarsely chopped (3 1/4 ounces)
1/4 cup coarsely chopped candied ginger (1 1/4 ounces)

Steps:

  • Preheat oven to 325°F. Butter a 9-inch springform or round cake pan. Line bottom with parchment paper; butter parchment.
  • Whisk together flour, baking powder, and salt in a bowl. Put butter and brown sugar in the bowl of an electric mixer fitted with the paddle attachment. Mix on medium speed until pale and fluffy, about 3 minutes. Add eggs and vanilla; mix until combined. Reduce speed to low; mix in flour mixture until combined. Mix in pears, pistachios, and candied ginger.
  • Pour batter into prepared pan; smooth top. Bake, rotating pan halfway through, until a cake tester inserted into center comes out clean, about 50 minutes. Let cool on a wire rack 15 minutes. Remove side of springform (or invert pan if using a cake pan). Transfer to a wire rack and let cool completely. Cut into wedges. Blondies can be stored between layers of parchment in airtight containers at room temperature up to 3 days.

APRICOT & PISTACHIO FRANGIPANE BLONDIES

Number Of Ingredients 12

100g unsalted butter , melted, plus a little extra for the tin
200g light muscovado sugar
½ tsp fennel seeds
1 large egg
120g plain flour
50g pistachios , roughly chopped
1-2 tbsp milk
6 large ripe apricots , halved and stoned
65g golden caster sugar
80g unsalted butter , softened
1 egg
100g pistachios , ground to crumbs

Steps:

  • Heat oven to 200C/180C fan/gas 6 and butter and line a rectangular baking tin, approx 20 x 25cm. To make the frangipane, beat together the sugar and butter until fluffy, then add the egg and pistachios.
  • In a bowl, stir together the muscovado sugar, fennel seeds and melted butter with a pinch of salt. Add the egg and stir vigorously, then tip in the flour and half the pistachios and fold until well combined and no streaks remain. Add the milk to loosen.
  • Spoon two-thirds of the batter into the tin and smooth with the back of a metal spoon or spatula, then arrange the apricot halves on top and press into the batter. Dot the frangipane around the batter too, then top with the remaining spoonfuls of batter so that it's part covering the frangipane and apricots. Scatter over the rest of the pistachios. Bake for 25-30 mins until a skewer comes out with some crumbs that are a little moist, but not raw. Cool completely in the tin, then cut into 12 squares.
