CREAMY HALIBUT FLORENTINE
This is a restaurant-quality dish that is not only easy but so delicious, it's an elegant dish to serve at a dinner party. This recipe can easily be doubled and baked in a larger baking dish or a shallow roasting pan. Serve this with fresh mushrooms sauteed in butter and recipe#124730 you will think you are dining in a fancy restaurant!

Steps:
- Set oven to 350 degrees.
- Butter a 13 x 9-inch baking dish.
- In a heavy-bottomed saucepan over medium-low heat stir together the half and half cream with cheddar cheese and Parmesan cheese until melted and smooth; mix in the flour and water stirring constantly until thickend and smooth; remove from heat.
- Sprinkle the spinach evenly into the baking dish.
- Brush the halibut on both sides with melted butter, then season with seasoned salt (or white salt) and black pepper on both sides.
- Place the halibut steaks over the spinach, then pour the cheese sauce over the halibut.
- Bake 35-40 minutes or until fish flakes easily with a fork.
- Divide onto four plates.
- Delicious!

I HATE FISH! But this is so good! My mom made this for us and it is deelish - The fish is very mild and not fishy at all, I love spinach and the cheese, YUM - Next to "Yummy Chicken" I would have to say honestly that this is now one of my favorites!

Steps:
- Melt butter in sauce pan.
- Add flour.
- Add milk and stir until thick to make a white sauce.
- Add 1/4 cup of the parmesan cheese and stir until melted.
- Add salt and pepper to sauce to taste.
- Place spinach in bottom of casserole dish.
- Top with fish fillet(s).
- Cover with white sauce.
- Combine Mozzarella, 1/4 cup of Parmesan, cheddar cheese, bread crumbs and Old Bay Seasoning.
- Sprinkle over top of sauce.
- Bake at 350°F for 20-30 minutes (no need to cover with foil).

Steps:
- Heat grill to medium-high heat.
- Spoon 1/2 cup rice onto center of each of 4 large sheets of heavy-duty foil with sides slightly rolled up. Pour 1/2 cup warm water over each mound of rice; top with 1 fish fillet. Arrange spinach around fish; drizzle with dressing.
- Bring up foil sides. Double fold top and ends to seal each packet, leaving room for heat circulation inside.
- Grill 10 min. or until fish flakes easily with fork. Cut slits in foil to release steam before opening packets; top with cheese.

- Position the rack in the center of the oven and preheat the oven to 350 degrees F.
- Line a heavy large baking sheet with parchment paper. Stir the almonds, flour and zest in a medium bowl. Stir the sugar, butter, cream, and honey in a heavy medium saucepan over medium heat until the sugar dissolves. Bring the mixture to a boil. Remove the pan from the heat. Stir in the almond mixture. Cool the batter for 20 minutes, stirring occasionally. Using 2 teaspoons of batter for each cookie, spoon 8 mounds of the batter onto the prepared baking sheet, spacing evenly apart (the cookies will spread). Flatten the batter slightly with your finger.
- Bake the cookies until they are lacy and golden brown, about 10 minutes. Gently slide the parchment paper with the cookies onto a rack and cool completely. Transfer the cookies to paper towels. Repeat with the remaining batter, lining the baking sheets with clean parchment for each batch. (The cookies can be made up to this point 2 months ahead. Cool completely, then store airtight in the freezer. Defrost before continuing.)
- Stir the chocolate in a bowl set over a saucepan of simmering water until the chocolate melts. Spread the melted chocolate over the bottom of 1 cookie. Top with a second cookie, bottom side down, pressing lightly to adhere. Repeat with the remaining cookies and chocolate.

I was enthralled by Pvt Amys Mom's recipe of Halibut Florentine, but was lacking so many ingredients... so working on that I ended up with this! Thank you pvt. Amys mom...I cant wait to make your recipe. My Hubby adores this and thinks it is absolutely company worthy!!! LOVE IT! and I usually do not love my own cooking...my own worse critic and all...

Steps:
- In large frying pan, melt 2 tablespoons butter and saute 4 crushed cloves garlic 4 minute
- Add chard stems and cook 7 minutes untill a little tender.
- Add chopped Chard leaves and simmer 5 - 8 min untill leaves are wilted, not cooked.
- Remove from pan and set aside.
- In same pan, melt 2 Tablespoons butter,
- add 2 tbsp flour and mix till smooth.
- Add 3/4 cup milk slowly and simmer to make rue.
- Add 3 Tablespoons Parmesan to milk, stir.
- Add 1/2 cup tex mex cheese and blend gently.
- Place Chard in bottom of casserole dish.
- Place Halibut on top of Chard.
- Pour White sauce over halibut.
- Bake 350 degrees F for 20 min.
- Remove and sprinkle 1/2 cup tex mix over top.
- Broil another 7 min or so untill nicely golden.
