1 pound cooked medium shrimp, peeled and deveined
1 small red onion, thinly sliced
2-1/2 teaspoons capers
1/3 cup canola oil
1/4 cup white wine vinegar
1/2 teaspoon salt
1/2 teaspoon celery seed

Steps:

  • In a large serving bowl, combine the shrimp, onion and capers. In a small bowl, whisk the oil, vinegar, salt and celery seed. , Pour over shrimp mixture; toss to coat. Cover and refrigerate for 6 hours or overnight, stirring occasionally. Serve with a slotted spoon.,

This makes an elegant and easy first-course for your holiday meal (or at any time). The subtle flavors blend beautifully and really enhance the taste of the shrimp. Prep time does not include marinating time. What's great about this is that you can prepare it a day ahead and then assemble it in a jiffy.

10 tablespoons extra virgin olive oil
1 1/2 lbs large raw shrimp, peeled, deveined
3 tablespoons fresh lemon juice
2 tablespoons Dijon mustard
2 tablespoons chopped fresh dill
2 large garlic cloves, minced
1 tablespoon grated lemon peel
salt and pepper, to taste
1/4 cup drained nonpareil capers
2 scallions, thinly sliced
1 head butter lettuce, leaves separated
1 lemon, cut into rounds (for garnish)
fresh dill sprig (for garnish)

Steps:

  • Heat 2 T. olive oil in a heavy large skillet over medium-high heat. Sprinkle shrimp with salt and pepper; add shrimp to skillet and saute until just opaque in center, about 3 minutes. Transfer to plate.
  • Whisk next 5 ingredients in a large bowl. Whisk in 8 T. olive oil; season with salt and pepper. Mix in shrimp and their accumulated juices, capers, and scallions. Cool slightly, then cover and refrigerate at least 3 hours or up to 1 day.
  • Arrange butter lettuce leaves on 8 pltaes. Top with shrimp, dividing equally. Drizzle with more marinade and garnish with lemon rounds and fresh dill sprigs.

3 pounds large raw shrimp, peeled and deveined
4 oranges, peeled and sectioned
2 to 3 medium white onions, sliced
1 to 1 1/2 cups cider vinegar
1 cup vegetable oil
2/3 cup fresh lemon juice
1/2 cup ketchup
2 tablespoons drained capers
2 tablespoons minced parsley
2 teaspoons salt
2 teaspoons mustard seed
1/4 teaspoon pepper
2 cloves garlic, crushed

Steps:

  • Cook shrimp in boiling water only 2 minutes. Rinse with cold water until thoroughly chilled. Drain. Combine shrimp, oranges, and onions in a large bowl. Mix remaining ingredients and pour over shrimp mixture. Cover and refrigerate 8 hours or overnight, stirring occasionally. Drain and serve on a bed of lettuce or in individual shells.

1½ lbs Raw Shrimp (large, typically 16-20 count per lb.), peeled
1 Sweet Onion (preferably Vidalia), thinly sliced
¾ cup Apple Cider Vinegar
½ cup Vegetable Oil
⅓ cup Sugar
1 Garlic Clove, minced
Zest of 1 Large Orange
2 T Orange Juice (freshly squeezed)
2 T Lemon Juice (freshly squeezed)
1 t Salt
1 t Mustard Seeds
½ t Freshly Ground Black Pepper
2 T Capers, drained (to finish)
2 T Italian Parsley, finely chopped (to finish)

Steps:

  • In a large soup pot, bring 6 cups water to boil along with 1 T salt.
  • While the water is coming to a boil, prepare an ice bath by combining equal parts ice and cold water in a large mixing bowl; set aside.
  • Add the shrimp to the boiling water and cook 3 minutes. Drain the shrimp and immediately transfer them to the prepared ice bath. Cool the shrimp in the ice bath 5 minutes, then drain the shrimp and set aside.
  • In a large mixing bowl, layer the shrimp and onions, alternating layers.
  • Whisk together all ingredients listed from the vegetable oil through the freshly ground black pepper until emulsified; pour over the shrimp and onions.
  • Cover the dish and let marinate in the refrigerator over night, or at least 8 hours.
  • Before serving, drain the marinated shrimp and onions and finish with the capers and fresh Italian parsley.

1 1/2 pounds peeled shrimp and 1/2 cup chopped tomatoes

Steps:

  • Put 1/4 cup olive oil in a large skillet over medium-low heat.
  • Add 3 sliced garlic cloves, 2 tablespoons capers and 1/2 cup chopped pitted black olives, and cook until the garlic is golden.
  • Stir in 1 1/2 pounds peeled shrimp and 1/2 cup chopped tomatoes.
  • Cook, turning the shrimp once or twice, until they are pink, 5 to 10 minutes.

3/4 pound large uncooked shrimp, peeled, deveined
3/4 pound bay scallops
3 1/2 tablespoons Sherry wine vinegar or red wine vinegar
1 1/2 teaspoons minced garlic
1/2 teaspoon dried crushed red pepper
1/2 medium-size red onion, sliced
1/3 cup drained capers
8 cups mixed baby greens
3 medium tomatoes, sliced
1 large avocado, peeled, pitted, sliced

Steps:

  • Heat 1 tablespoon oil in heavy large skillet over high heat. Add shrimp to skillet; sauté 2 minutes. Add scallops and season with salt and pepper; sauté just until cooked through, about 1 minute. Transfer to bowl; cool. Drain off juices.
  • Whisk vinegar, garlic and crushed red bell pepper in small bowl. Whisk in 1/2 cup oil. Season with salt and pepper. Add to shrimp mixture. Mix in onion and capers. Chill at least 1 hour or up to 3 hours, tossing occasionally.
  • Place greens in large bowl. Drizzle with some dressing from shrimp mixture atop greens. Using slotted spoon, arrange shrimp mixture atop greens. Place tomato and avocado slices in border around salad, overlapping slices; drizzle with any remaining dressing.
