FUDGE PIE
Adapted from "Take Big Bites" by Linda Ellerbee. This is a crustless pie- something like a brownie. Top it with a scoop of ice-cream and some berries- sinful.

Steps:
- Preheat oven to 375 degrees. Place chocolate and butter in a 4 cup Pyrex measure or microwave-safe bowl. Place in microwave and heat on high, for 1 minute, stir, and heat for 30 seconds more. Let sit for a minute or so and stir until chocolate dissolves completely.
- Add sugar, flour, eggs, vanilla, and salt. Stir until well combined.
- Pour into lightly oiled 9 inch pie pan.
- Bake for 25 minutes. Let cool for as long as you can wait. If you can't wait, vanilla ice cream helps cool a slice of pie on your plate.

Steps:
- Unfold piecrust; fit into 9 inch pie pan. Prebake crust according to package directions. Remove from oven.
- Lower the oven temperature to 325 degrees F (165 degrees C).
- Beat together sugar, flour, cocoa powder, butter or margarine, eggs and vanilla in a medium-size bowl. Spoon into pie shell.
- Bake for 25 to 30 minutes or until set. Allow to cool to room temperature. Serve with whipped topping or a scoop of vanilla ice cream.

- Preheat oven to 375.
- In a saucepan melt the stick of butter and the chocolate.
- Add a cup of sugar.
- Beat two eggs in a separate bowl.
- Take the chocolate mixture off of the stove and mix two tablespoons or so of the chocolate to the eggs to temper them.
- Now you can add the eggs to the chocolate without fear of them scrambling!
- Pour into a pie shell and bake at 375 for 20-25 minutes.

I saw this on Paula Deen and tried it for Valentines Day (a little early). It's very rich - but oh so good. I served it warm with Vanilla Ice Cream.

- Melt chocolate and butter together in heavy saucepan over low heat.
- Remove the pan from the heat and add sugar, then eggs; beat well.
- Pour the filling in unbaked pie crust and bake for 25 minutes or until just set.

- 1. Preheat oven to 350 degrees F. Combine butter and sugar, in a small boowl. Set Aside
- 2. Combine flour, salt, corn starch, and cocoa powder, in medium sized bowl...Set aside.
- 3. Beat eggs with a fork until frothy, add vanilla to eggs. combine with sugar/ butter mixture. Combine with flour mixture. You won't have to use a mixer, just gently combine.
- 4. Pour into pie shell, bake 35 minutes or until center is set. ALLOW TO COMPLETELY COOL, The pie will set.
- 5. SERVE A SLICE WITH STRAWBERRY COOL WHIP AND SLICED STRAWBERRIES.

- Lightly grease an 8 or 9-inch square pan.
- Combine dry ingredients in heavy 4 quart saucepan.
- Stir in milk.
- Bring to a "bubbly" boil over medium heat, stirring constantly.
- Boil, without stirring, to 234 degrees (soft ball stage). Remove from heat. Cool at room temperature to 110 degrees.
- Beat with wooden spoon until thickens and loses gloss.
- Quickly spread in prepared pan.
