4 salmon fillets (, skin on best (150-180g/5-6oz each, Note 1))
Olive oil (, for cooking)
1/3 cup (85 ml) soy sauce (, low sodium)
2 tbsp lemon juice
3 tbsp honey
2 tbsp olive oil
2 garlic cloves (, minced)
Parsley, chives or green onion (, finely chopped)
Lemon slices

Steps:

  • Place marinade in a ziplock bag and mix to combine.
  • Add salmon and massage to coat. Marinate for 3 - 24 hours (1 hr minimum).
  • Take out of fridge 30 minutes prior to cooking.
  • Remove salmon onto plate, allowing excess marinade to drain off.
  • Pour remaining marinade into a small saucepan and simmer over medium high for 3 to 5 minutes until syrupy.
  • Pour into bowl/jug (some used for basting, some for serving).
  • Brush BBQ grills with oil. Then preheat to medium (or medium low for strong BBQ's).
  • Drizzle salmon with oil, the place onto the BBQ flesh side down (skin side up).
  • Cook for 3 minutes or until golden, then use tongs to carefully turn.
  • Brush the flesh with Sauce, then close BBQ lid.
  • Cook for 3 - 4 minutes, basting one more time halfway through, or until the internal temperature is 50C/120F(medium rare) or 55C/130F (medium).
  • Transfer salmon to plate and serve with remaining Sauce.

2 sticks of fresh lemongrass
1 bunch of fresh coriander, (30g)
5cm piece of fresh ginger
4 cloves of garlic
½ x small bottle of low-salt dark soy sauce
1 large salmon fillet, (about 1kg), ask your fishmonger, scaled and pin-boned, from sustainable sources
4 tablespoons runny honey
2 red chillies
4 spring onions
2 limes

Steps:

  • Bash up your lemongrass. Pick the coriander leaves and finely slice the stalks. Peel and finely grate the ginger and garlic.
  • Mix the lemongrass, coriander stalks, ginger and garlic with the soy sauce, then rub all over the salmon fillet. Leave it to marinate for an hour or so, either in a plastic bag or on a tray covered with clingfilm.
  • Preheat your grill to its highest setting. When you're ready to cook the salmon, remove it from the marinade, brush with the honey and grill for 10 minutes.
  • Deseed the chillies and finely slice with the spring onions.
  • Fork up the cooked salmon a little so everyone can see the lovely, dark, sticky outside and the juicy, pink fish underneath.
  • Sprinkle the chillies and spring onions over the salmon with the reserved coriander leaves. Squeeze over the lime.

  • Make several shallow slashes in the skinless side of the salmon fillets.

  • Mix together soy sauce, honey, ginger, garlic spring onions and lime juice - taste to your liking and season with black pepper.
  • Rinse the fish with clean water and gently pat dry with kitchen paper.
  • Pour the sauce over the fish in a large bowl, making sure the fillets are covered. Seal the bowl with cling film and leave to marinade in the fridge for 20 minutes.
  • Once marinaded, loosely wrap the fish in individual foil parcels with a couple of spoonfuls of the marinade, leaving a 1 inch gap in the top of the foil.
  • Place on a tray in a pre-heated oven at around 160°C for 15-20 minutes. Pour the remaining marinade into the parcels half way through cooking. Meanwhile, cook your rice or noodles.
  • Serve with vegetables such as broccoli, green beans or red peppers. Unwrap the parcels and use a flat utensil to lift the fish out and place onto your plate.
  • Sprinkle the fish with sesame seeds and fresh chopped spring onion to garnish.

4 tablespoons olive oil
1 1/2 tablespoons honey
1 1/2 tablespoons soy sauce
1 teaspoon lemon zest

1/2 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon minced garlic

Steps:

  • Place the olive oil, honey, soy sauce, lemon zest, parsley, thyme, salt and pepper in a bowl. Whisk to combine.
  • Reserve 1 tablespoon of the marinade for later use. Add the garlic to the bowl.
  • Add the salmon and marinade to a resealable freezer bag and seal. Shake to coat the salmon with the marinade.
  • Marinate in the refrigerator for at least 30 minutes, or up to 6 hours.
  • Remove the salmon from the marinade and scrape off any excess bits of herbs or garlic (otherwise they could burn on the grill!).

GRILLED SWORDFISH SALMORIGLIO



Grilled Swordfish Salmoriglio image

2 pounds fresh swordfish * see Notes below
2 lemons, zest and juice divided
1 tablespoon fresh garlic, minced
½ cup good quality extra virgin olive oil
1 teaspoon dry oregano
1 teaspoon kosher or sea salt
½ teaspoon freshly ground black pepper
¼ cup fresh Italian flat leaf parsley, chopped fine
4 tablespoons cold butter

Steps:

  • If you purchased one large two-pound swordfish steak, cut in half to have two equal pieces about 1 ½ inches thick. Place in a gallon zip lock bag.
  • In a small bowl mix lemon zest, garlic, olive oil, oregano, salt and pepper.
  • Mix and add only half of this liquid to the bag with the swordfish. Seal the bag and let sit for one hour at room temperature.
  • While the swordfish sits for the hour, add the lemon juice (about ¼ cup of lemon juice) and parsley to the reserved half of the liquid and set aside to serve with the cooked fish.
  • Heat outdoor grill to high on one side and cool on the other.
  • Clean and oil the grill grates.
  • Remove the swordfish from the bag and brush off any garlic or zest and place the two pieces on the hot side of the oiled grill. Brush some of the liquid from the bag over the fish as it cooks.
  • Cook two minutes and turn each piece one quarter turn to get cross hatch marks. Cook two more minutes then flip. After two more minutes turn one quarter turn and cook two minutes. (Total of eight minutes so far.)
  • Take a sheet of foil and fold four times and place on the cool side of the grill. The foil once folded, should be big enough to hold the swordfish.
  • After the eight minutes of searing both sides, move the swordfish to the foil and close the cover. Try to keep a consistent temperature of 350 degrees F. in your grill.
  • From here you will cook for 1-6 more minutes based on how thick your steaks are. Our 1 ½ inch swordfish steaks cooked for exactly six more minutes for a grand total of 14 minutes. If your steaks are thinner, this last cook time on the foil will be less. You are looking for an internal temperature of 145 degrees F. Do not overcook.
  • As soon as they come off, place the four tablespoons of cold butter over the top to melt in as you serve.
  • To serve, cut each piece in half to yield four servings and serve with the sauce made earlier on the side or over each portion.

This recipe was taken from the September 2007 issue of Food & Wine, and is just lovely. Cooking times may vary depending on what type of fish you choose to use. When I made this I used 7 ounce Salmon filets and cooked them for about 13 minutes on each side, and then I put them under the broiler for about 2 minutes just to crispen up the breadcrumbs. We really enjoyed this dish, and I hope you do too!

2 lbs ruby trout fillets or 2 lbs halibut fillets
salt
2 tablespoons fresh lemon juice
1/3 cup dry breadcrumbs
2 tablespoons fresh thyme leaves
1 1/2 tablespoons fresh lemon juice
1 tablespoon Dijon mustard
salt
2 tablespoons unsalted butter, softened
3 tablespoons olive oil

Steps:

  • Preheat oven to 400 degrees.
  • Sprinkle a little bit of the vinegar on the fish filets, rinse them and pat them dry on a paper towel.
  • Rub a little bit of salt into the filets.
  • Place the fish into an oven safe casserole dish.
  • On one side sprinkle the filets with half of the lemon juice and then coat them with half of the bread crumbs.
  • Note if you need more than 1/3 of a cup of bread crumbs use them it's up to your taste. I also used italian bread crumbs and they were very tasty.
  • Drizzle the filets with olive oil. Make sure that all of the bread crumbs are coated in olive oil even if you need to use more than the suggested amount so that it crisps up nicely.
  • Turn the filets over and repeat steps 5-7 with the remaining olive oil, lemon juice, and bread crumbs.
  • Cover the fish and marinade at room temperature for 30 minutes.
  • While the fish marinades, make the sauce by adding the thyme, lemon juice, mustard and salt to taste to a food processor and pulse for 1 minute.
  • Add the butter and process until smooth.
  • Slowly drizzle in the olive oil until the sauce fully incorperates into a smooth mayonnaise like consistency.
  • After the fish has marinaded, place the casserole dish uncovered in the 400 degree oven. Again, cooking times may vary depending on what type of fish you use. I cooked the 6 oz 1-1 1/2 in thick salmon filets that I used for 13 minutes on each side, and then broiled them on one side for 2 minutes to give the crust some color. You could also grill the fish if you prefer.
  • Serve the fish with the sauce drizzled over them.
  • Enjoy!
