1 tablespoon low-sodium soy sauce
½ teaspoon ground black pepper
1 tablespoon extra-virgin olive oil (divided)
1 red bell pepper (cored and cut into thin slices)
3 cups chopped mixed vegetables of choice (such as broccoli, snap peas, or carrots)
1 8-ounce can sliced water chestnuts (drained)
3 medium green onions (finely chopped; divided)
1 tablespoon sesame seeds (optional)
Prepared brown rice (quinoa, noodles, or cauliflower rice - for serving)
1/3 cup low-sodium soy sauce
¼ cup water
3 tablespoons pure maple syrup

  • Prepare the sauce: In a medium mixing bowl or large measuring cup, stir together the soy sauce, water, maple syrup, rice vinegar, garlic, ginger, red pepper flakes, and cornstarch. Set aside.
  • Continue with the stir fry: In a large, deep sauté pan or wok, heat 1/2 tablespoon oil over medium-high heat. Once the oil is hot but not smoking, add the beef. Let simmer 3 to 4 minutes to thicken and warm the beef through. Stir in about half of the green onions. Sprinkle the sesame seeds and remaining green onions over the top. Serve warm, with additional red pepper flakes and/or soy sauce as desired.

TERIYAKI BEEF JERKY

Teriyaki Beef Jerky image

This homemade beef jerky recipe is a sweet and savory snack for your next adventure! The fresh teriyaki marinade loads the jerky with tons of great flavor, and it couldn't be easier to make.

Provided by Fresh Off The Grid

Categories     Snack

Time 4h10m

Number Of Ingredients 9

1 pound eye of round or top round
¼ cup soy sauce
2 tablespoons mirin
2 tablespoons brown sugar
1 -inch piece fresh ginger (minced (or 1 tablespoon pre-grated))
2 cloves garlic (minced)
1 teaspoon salt
¼ teaspoon Prague powder #1 or Instacure #1 (optional)
1 teaspoon sesame seeds

Steps:

  • Slice the meat into ⅛ - ¼ inch thick pieces, removing as much visible fat as possible. Place in a large zip-top bag and set aside.
  • Mix the soy sauce, mirin, brown sugar, minced ginger & garlic, salt, and Prague powder, if using, in a small bowl until the sugar dissolves. Pour into the zip top bag with the meat, taking care to ensure that the meat is evenly coated. Place in the fridge to marinate 12-24 hours.
  • After the meat has marinated, place the strips onto your dehydrator trays. Sprinkle with sesame seeds. Dehydrate at 160F for 4-6 hours, until the meat has dried. The general rule of thumb is if you bend a piece and it cracks, it's done - if you bend a piece and it breaks it's been cooked too long.
  • Remove from the dehydrator and set aside to cool completely before sealing in a bag or tupperware.
  • Jerky that has been marinated with Prague powder or Instacure will last a few weeks in a sealed bag at room temperature. Jerky marinated without any cure will last two weeks in your fridge.

  • Whisk the Teriyaki Sauce ingredients together in a small bowl. Remove 1/4 cup and add it to bag with the sliced beef. Massage to coat steak. Marinate at room temperature for 30 minutes (only recommend if using top sirloin) or refrigerate for up to 24 hours.
  • Heat a drizzle of vegetable oil in a large cast iron skillet over medium-high heat. Once hot, add pineapple and stir fry until caramelized, about 2 minutes; remove pineapple to a plate.
  • Heat 1-2 tablespoons vegetable oil in the now empty skillet over HIGH heat until very hot and sizzling. Drain/pat off excess marinade from beef (if there is any). Add half of the beef to the skillet in a single layer and sear for about 1 minute, flip over and cook 1 more minute (it will cook more in the sauce). Don’t overcook or it won’t be as tender! Transfer beef to a large plate and cover. Repeat with remaining beef.
  • To the now empty pan (don’t wipe out), heat one tablespoon oil over medium-high heat. Add broccoli, carrots, and bell peppers. Stir fry until vegetables are crisp tender, about 2 minutes. (Don’t over-cook because they will continue to cook in sauce.)

  • Prepare the teriyaki marinade first. Combine in a large bowl the soy sauce, water, oil, sugar, vinegar and spices. Whisk and set aside.
  • Use a sharp knife to prepare the steak: trim any silverskin and fatty parts. Slice the steak into long, 1-inch wide strips. Place the sliced steak into the prepared marinade, cover and refrigerate for at least an hour. For best results, refrigerate for 4 to 6 hours, or overnight. Turn the beef every couple of hours.
  • While the beef is marinating, pre-soak the bamboo skewers in water to prevent the wood from burning. Preheat an outdoor grill to 475F; or stove-top grill to medium-high. Skewer each strip of beef, one to two pieces per skewer. Grill the beef for 4 to 5 minutes per side.
  • While beef is grilling, finish preparing the teriyaki sauce. Pour the marinade into a small saucepan and bring up to a simmer over medium heat; simmer for 5 minutes. In a small bowl, combine the cornstarch and water, then add the slurry to the sauce. Whisk and cook the sauce for 1 minute, until the sauce is thickened. Use a pastry brush to add more sauce to the beef skewers.
