PORK WELLINGTON WITH CHERRY PORT SAUCE

2 tablespoons canola oil
1/2 yellow onion, diced
Kosher salt and freshly ground black pepper
1 teaspoon fresh thyme, chopped
2 cornbread muffins or 1/2 cornbread loaf
1 tablespoon olive oil
One 12- to 16-ounce pork tenderloin
Nonstick cooking spray, for the baking sheet
6 slices ham (about 4 ounces total)
1/4 cup Dijon mustard
One 10-by-15-inch sheet frozen puff pastry, thawed
All-purpose flour, for dusting
1 large egg, beaten
2 tablespoons cold unsalted butter
1 shallot, finely chopped
1 1/2 cups fresh or thawed frozen cherries
1/2 cup low-sodium chicken broth
1/4 cup tawny port
1 tablespoon honey
Kosher salt and freshly ground black pepper

Steps:

  • For the pork wellington: Preheat the oven to 400 degrees F.
  • In a large skillet, heat the canola oil over medium-high heat. Add the onions, season with salt and pepper and cook until the onions are soft and translucent, about 5 minutes. Remove from the heat and stir in the thyme leaves.
  • Break up the cornbread in a bowl, add the onion-thyme mixture and stir to combine. Set aside.
  • Meanwhile, in a large skillet, heat the olive oil over medium-high heat. Sprinkle the pork with salt and pepper. Sear the pork, turning as needed, until golden brown all around, 3 to 4 minutes. Transfer to a plate and let cool completely. Reserve the skillet to make the sauce.
  • Spray a baking sheet with nonstick cooking spray.
  • On a cutting board, lay out the ham slices, overlapping them to create a rectangle about 12 inches long. Rub the tenderloin completely with the mustard and place over the ham slices. Wrap the ham over the tenderloin to seal in the mustard.
  • Lay out the puff pastry sheet on a floured surface and roll out to a rectangle with the long sides 2 inches longer than the pork tenderloin. Spread the cornbread mixture around the pastry sheet, leaving about a 1-inch border all the way around. Place the wrapped tenderloin along one of the long sides of the pastry. Roll the tenderloin up in the pastry, making sure it's completely wrapped. Fold in the pastry ends, brush with the beaten egg and tuck in. Place the wrapped pork on the prepared baking sheet with the seam on the bottom and brush liberally with the beaten egg.
  • Bake until the crust is golden brown and the tenderloin registers an internal temperature of 140 degrees F on an instant-read thermometer, 25 to 35 minutes. Let rest for 10 minutes, then slice and serve.
  • For the cherry port sauce: In the same skillet you seared the pork, melt 1 tablespoon of the butter over medium heat, add the shallot and cook, stirring, for 30 seconds. Add the cherries, broth, port and honey. Increase the heat to high and simmer, stirring often, until the sauce is reduced to a glaze, about 10 minutes. Whisk in the remaining 1 tablespoon butter. Season with salt and pepper.

2 tablespoons finely chopped shallots (about 1 small)
1 cup ruby port
1/4 cup balsamic vinegar
1 cup frozen pitted cherries, thawed and halved
1 tablespoon dark brown sugar
Kosher salt and freshly ground black pepper

Steps:

  • Melt 1 tablespoon butter in a small saucepan over medium heat. When foaming subsides, add shallots and cook, stirring, until softened, about 4 minutes.
  • Stir in port, vinegar, cherries, and dark brown sugar. Bring to a boil, then reduce heat to a simmer and cook until sauce has reduced by half, about 30 minutes.

While visiting Los Angeles, I found this recipe on a card that you can pick up at the local grocers. This particular combination of meat and fruit had me intrigued so I brought it back for use at some later point. Filet mignon is pricey so this is certainly a special occasion food. Planning to serve it with roasted potatoes and maybe some nice asparagus.

2 teaspoons olive oil
2 shallots, chopped finely
1 large garlic clove, minced
1/3 cup dry red wine (shiraz or zinfandel)
1/3 cup balsamic vinegar
2 tablespoons cherry preserves
1 cup frozen dark cherries, thawed
4 (5 ounce) filet mignon
1/8 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Heat olive oil in a small heavy metal or ceramic saucepan. Add shallots and cook until they are soft and wilted, not browned (about 3 minutes). Add garlic and stir for 30 seconds. Add the wine, preserves, vinegar and cherries. Increase the heat to bring the sauce to a light boil, stirring occasionally. Let the sauce reduce to half the original amount (about 10-12 minutes). It should get thick and syrupy.
  • When the sauce is almost done, preheat broiler. Pat steaks dry and sprinkle salt and pepper on both sides of the steaks. Broil to the desired level of doneness.
  • For rare steaks: cook 2 1/2 minutes per side; for medium rare, cook 3 minutes per side; for medium, cook 3 1/2 minutes per side; for medium well, 4 minutes per side.
  • To serve, serve steaks on a serving platter and sauce on the side. Or you can spoon sauce over each steak served on individual plates.

10 each cherry peppers
1 (7 ounce) package mozzarella cheese
5 slices prosciutto
2 cups olive oil
3 tablespoons grated Parmesan cheese
2 cloves garlic, minced
1 teaspoon chopped fresh oregano
1 teaspoon chopped fresh thyme
½ teaspoon salt
½ teaspoon ground black pepper
½ teaspoon red pepper flakes

Steps:

  • Core out peppers by cutting a circle, at an inward angle, around the stem. Remove tops and scoop seeds and membranes out, like a tiny pumpkin.
  • Cut thumbnail-size cubes of mozzarella, varying size a little bit to fit each pepper. Cut prosciutto slices in half. Wrap each half around mozzarella cubes and stuff into the open peppers.
  • Pour olive oil into a jar or lidded container. Stir in Parmesan cheese, garlic, oregano, thyme, salt, black pepper, and red pepper. Whisk together well.
  • Add peppers to the oil mixture and seal the lid. Let marinate for 5 to 6 hours. Serve straight out of the jar.

1 cup ruby port
1/3 cup granulated sugar
3/4 cup dried cherries (4 1/2 ounces)
1 cup plus 1 tablespoon mascarpone cheese
3/4 cup heavy cream
1 tablespoon confectioners' sugar
Coarse salt
1 1/2 ounces bittersweet chocolate, finely chopped
8 store-bought chocolate wafer cookies

Steps:

  • Make the cherry-port sauce: Bring port and granulated sugar to a boil in a small saucepan. Boil until reduced by one third, about 5 minutes. Stir in cherries. Simmer for 2 minutes. Remove from heat. Let stand, covered, until plump, about 10 minutes. Refrigerate until thick, about 40 minutes.
  • Meanwhile, make the semifreddo: Whisk mascarpone, cream, confectioners' sugar, and a pinch of salt until medium-stiff peaks form. Fold in chocolate. Spread mixture into a 5-by-9-inch loaf pan; cover with plastic wrap. Freeze until edges beginto harden and semifreddo is very cold, at least 50 minutes. Scoop into 4 serving dishes. Spoon cherry-port sauce over tops. Serve with chocolate wafer cookies.

1/4 cup dried cherries
1 cup port wine or 1 cup other sweet red wine, divided
1/4 cup black cherry juice
1 lb beef tenderloin, trimmed
butter-flavored cooking spray
1/4 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil
2 tablespoons shallots, minced
1 large garlic clove, minced
1/2 cup low sodium beef broth
1/2 teaspoon dried thyme

Steps:

  • Set oven to broil.
  • Combine cherries, 1/4 cup port, and juice in a small bowl. Let stand for 30 minutes for the cherries to absorb most of the liquid.
  • Coat beef with cooking spray; sprinkle with salt and pepper. Broil 6 inches from heat for 15 minutes. Reduce heat to 375 and bake for 30 minutes or until meat thermometer reads 145 degrees. Let stand 10 minutes before slicing.
  • Heat oil in pan over medium-high heat. Add shallot and garlic; saute 1 1/2 minutes. Stir in cherry mixture, 3/4 cup port, broth, and thyme. Bring to a boil; cook 10 minutes or until reduced to 1/2 cup. Pour over steaks. Serve immediately.
  • Serving size is 1 steak with 2 tbsp sauce.

1 lb prosciutto (1 lb sliced is ~37 slices)
1/2 lb provolone cheese (sliced ~ 1/2" thick)
2 lbs cherry peppers (~ 2 pt or 49 peppers)
1/2 gallon white vinegar
1 quart extra virgin olive oil
1 quart canola oil
1 small onion, thinly sliced
rosemary
bay leaf
dill weed
basil
chopped garlic
parmesan cheese

Steps:

  • Wash cherry peppers and place whole, stems intact, in 1 gallon jar.
  • Fill jar with white vinegar.
  • Let stand at least one week.
  • I've let them soak as long as 3 weeks.
  • You may need to add more vinegar to keep the jar full as the peppers soak it in.
  • The peppers will float, make sure to keep them covered.
  • After soaking for at least a week, pour out vinegar and rinse peppers in cool water.
  • Remove stems and seeds.
  • Expect to lose 3 or 4 peppers during soaking.
  • Cut provolone to the appropriate size to fill the peppers.
  • (~1/2" cube) Cut the Proscuitto slices in half.
  • Wrap the provolone with a 1/2 slice of Proscuitto (or 2 for larger peppers) and stuff into pepper.
  • Add some Olive Oil to the jar.
  • Add Onion, Rosemary, 2 or 3 Bay Leaves, Dill Weed, Basil and chopped Garlic to oil.
  • Place the peppers in the jar and fill the jar with 50% Olive Oil and 50% Canola Oil.
  • Top off the jar with a sprikle coating of Parmesan cheese.
  • Let soak a minimum of one week.
  • I let them soak and store them at room temperature.
  • You may want to refrigerate for longer shelf life.
  • (I've had shelf life in excess of one month) ENJOY!
