JALAPENO CORNBREAD

Steps:
- Preheat oven to 425 degrees. Place cast-iron skillet in oven as it is preheating.
- Mix dry ingredients in a bowl and set aside. In another bowl mix milk, egg and oil until blended. Add chopped jalapenos. Combine wet ingredients with dry ingredients and stir until moistened and fairly smooth (about 1 minute.)
- Carefully remove hot skillet from oven and grease with butter. Pour batter into skillet and bake 20 to 23 minutes or until toothpick inserted in the center comes out clean.
TEXAS JALAPENO CORN
A simple, delicious addition to any meal, Tex-Mex or otherwise. I personally like a bit of spice, so I use 3 jalapenos. You may use 2 if you can't handle much of a kick.

- In large bowl, mix cream cheese and sour cream. Add garlic, green onions, jalapenos, salt and pepper. Mix well.
- Stir in corn.
- Spread mixture evenly in large glass baking dish. Top with shredded cheese.
- Bake for approximately 30 minutes.

- Preheat oven to 425°. In a large bowl, whisk flour and cornmeal. In another bowl, whisk buttermilk, egg substitute, 2 tablespoons oil, honey and mayonnaise. Pour remaining oil into an 8-in. cast-iron or other ovenproof skillet; place skillet in oven 4 minutes., Meanwhile, add buttermilk mixture to flour mixture; stir just until moistened. Fold in corn, cheese and peppers., Carefully tilt the skillet to coat bottom with oil; add batter. Bake until a toothpick inserted in center comes out clean, 20-25 minutes. Serve warm., Note: As a substitute for 1 cup of self-rising flour, place 1 1/2 tsp of baking powder and 1/2 tsp. of salt in a measuring cup. Add all-purpose flour to measure 1 cup.
