Soy-Maple Salmon with Cauliflower and Pistachios image

Not only is salmon family friendly, it cooks quickly so there is time for a short marinade to infuse it with even more flavor while getting the rest of the meal together. In this recipe, maple syrup, soy sauce and orange juice add fresh sweet-salty flavors that lightly caramelize on the fish while it roasts. Recipe developed by Food Network Kitchen.

2 tablespoons low-sodium soy sauce
2 tablespoons maple syrup
1 tablespoon fresh orange juice, plus 1 teaspoon grated orange zest
3 cloves garlic, smashed
4 5-ounce skinless center-cut salmon fillets (preferably wild)
4 cups cauliflower florets (from 1 small head)
1/4 cup fat-free low-sodium chicken broth (or use water)
Cooking spray
Kosher salt and freshly ground pepper
1 tablespoon extra-virgin olive oil
2 tablespoons dried cranberries
2 tablespoons chopped pistachios or almonds
2 tablespoons chopped fresh parsley

Steps:

  • Preheat the oven to 400 degrees F. Mix the soy sauce, maple syrup, orange juice, 2 garlic cloves and 2 tablespoons water in a large bowl; add the salmon and turn to coat. Cover and refrigerate 20 minutes.
  • Meanwhile, put the cauliflower and broth in a microwave-safe bowl; cover loosely with plastic wrap and microwave until tender, 6 minutes.
  • Coat a rimmed baking sheet with cooking spray. Drain the fish, season with salt and pepper and place on the prepared baking sheet. Bake until slightly golden around the edges, 8 to 10 minutes.
  • Meanwhile, heat the olive oil and remaining garlic clove in a large skillet over medium-high heat; cook, breaking up the garlic with a spoon, until softened, about 2 minutes. Add the cauliflower and broth, the cranberries, pistachios, orange zest, parsley, 1/4 teaspoon salt, and pepper to taste and stir to heat through. Serve with the fish.

MAPLE SYRUP MARINADE

1 tablespoon apple cider vinegar
2 teaspoons whole-grain mustard

1/2 cup extra-virgin olive oil
Large pinch of salt

Steps:

  • To the maple syrup bottle (or a glass bottle with a lid), add the syrup, shallot, vinegar, mustard, rosemary, garlic and pepper. Cover and shake vigorously to combine. Add the oil, cover and shake vigorously again to combine. Season with the salt.

2 lbs sirloin steak ( or tenderloin steak)
3 Tbsp Worcestershire sauce
2 Tbsp red wine vinegar
3 Tbsp pure maple syrup
5 cloves garlic (minced)
1/2 tsp black pepper
salt and pepper

Steps:

  • Trim steaks of any excess fat or silverskin and place in a medium-sized bowl or a resealable plastic bag. Blend Worcestershire, red wine vinegar, maple syrup, garlic and ½ tsp pepper in a small bowl then pour over steaks. Stir or toss to coat steaks in marinade and allow to sit at room temperature about 30 minutes or in refrigerator for up to 4 hours.
  • Preheat grill to medium-high, remove steaks from marinade and pat dry. Brush each steak with oil and season both sides with salt and pepper. Place on grill and cook 3 minutes per side for medium-rare or until steaks reach desired level of doneness.
  • Remove steaks from grill. Allow steak to rest on a plate, uncovered, for 5-10 minutes before serving. Enjoy!

1 teaspoon coarse salt

4 skinned salmon fillets
1/2 cup maple syrup
1 lemon, juiced
2 tablespoons dark soy sauce
2 teaspoons garlic, minced
2 teaspoons fresh ginger, grated

Steps:

  • Gather the ingredients.
  • Lay salmon fillets on a piece of paper towel and dry carefully. Check fish over for any bones. Remove with tweezers if you find any. Lay fillets side by side in a glass or ceramic dish.
  • Combine maple syrup, lemon juice, soy sauce, garlic, and ginger and mix thoroughly. Add chile flakes and stir again.
  • Pour marinade over salmon. Cover and let marinate for 20 minutes at room temperature. Turn after 10 minutes, so all sides of fillets come into contact with marinade.
  • Heat a griddle or cast-iron frying pan over high and add oil. Heat until hot but not smoking.

  • Then flip over and cook for an additional 4 minutes. Remove from pan and keep warm.
  • While salmon is cooking, transfer marinade to a small saucepan and bring to a gentle boil. Reduce to create a thick, syrupy sauce, then strain.

1/4 cup pure maple syrup
1 tablespoon soy sauce
1 tablespoon rice vinegar
1/2 teaspoon hot pepper sauce
3/4 cup dry Sherry
1 4 1/2-pound chicken, fat and giblets removed, rinsed and patted dry
2 tablespoons (1/4 stick) butter, room temperature
1/2 orange, cut into 4 pieces
2 1/2-inch slices fresh ginger, smashed
2 garlic cloves, smashed

Steps:

  • Preheat oven to 375°F. Whisk maple syrup, soy sauce, rice vinegar, and hot pepper sauce in small bowl for glaze. Simmer Sherry in small saucepan until reduced to 1/2 cup, about 3 minutes.
  • Run hands under chicken skin to loosen; rub most of butter under skin over breast and thighs. Rub remaining butter over outside of chicken. Sprinkle cavity with salt and pepper. Place chicken in roasting pan. Squeeze some juice from each orange piece over chicken. Stuff cavity with orange pieces, ginger, and garlic. Tuck wing tips under. Pour Sherry over chicken.
  • Roast chicken 20 minutes. Add 1/4 cup water to pan. Roast 15 minutes longer. Brush chicken with glaze. Roast chicken until thermometer inserted into thickest part of thigh registers 170°F, brushing chicken with glaze every 10 minutes, about 40 minutes longer. Tilt chicken to allow juices from cavity to run into roasting pan. Transfer chicken to platter. Let stand 10 minutes (internal temperature will rise).
  • Spoon fat from surface of pan juices. Add any remaining glaze to pan juices. Place roasting pan over 2 burners; bring sauce to boil. Serve sauce alongside chicken.

3/4 cup maple syrup
1/4 cup soy sauce
4 (6-ounce) salmon fillets, skin removed
1/4 cup coarsely ground black pepper (Grind it yourself, or purchase "cracked" pepper at your grocery store)
1/2 teaspoon peanut (or other vegetable) oil, or a spritz of oil spray

Steps:

  • In a re-sealable bag or a small deep bowl, mix maple syrup and soy sauce. Arrange fillets so that marinade completely covers fish. Marinate in the refrigerator for as long possible (a minimum of 4 hours, but ideally 24 hours to do it justice).
  • Preheat oven to 500 degrees F.
  • Rub oil on a 10 by 10-inch sheet of aluminum foil.
  • Place pepper on a small plate. Remove salmon from marinade and pat topside only into cracked pepper to coat. Place fillets, pepper side up, on foil.
  • Bake on the top rack of the oven for approximately 7 minutes. (Syrup may cause fish to smoke when cooking, do not be alarmed.) Salmon can also be grilled directly over hot coals for about 3 minutes per side. But do not even think about using a microwave. Avoid overcooking the fillets. Salmon is best when the color has turned to a pale pink, but the fish is still moist throughout. Serve immediately on warmed plates.

  • Using an oven proof casserole dish, transfer the salmon and place into the dish, skin side down.
  • Pour the pan juices and the marinade over the salmon.
  • Sprinkle salmon with dried dill weed.
  • Bake in preheated 400 F oven (uncovered) for 5 to 7 minutes or until fish flakes easily with a fork.
  • The salmon should be firm, but not dry; do not overcook.
  • Serve with Apple Chutney spooned over the top if desired or use any favorite sauce of your choice.
  • For those who find sweetness overtakes the flavor of salmon, I suggest that you reduce the Maple Syrup to 1/4 cup.
  • This recipe can be doubled without any problems.

4 (6 oz) skinless salmon fillets
1/3 cup real maple syrup*
3 Tbsp soy sauce ((not low-sodium))
2 cloves garlic (, minced)
Freshly ground black pepper and chopped green onions ((optional))

Steps:

  • In a mixing bowl whisk together maple syrup, soy sauce and garlic. Place salmon into a baking dish then pour maple syrup mixture evenly over salmon.
  • Cover and refrigerate 30 minutes, carefully rotating salmon once halfway through. Preheat oven to 400 degrees during last 10 minutes of marinating salmon.
  • Spray a 13 by 9 inch baking dish with cooking spray then transfer marinated salmon into greased dish (don't discard marinade). Bake in preheated oven until salmon is cooked through, about 15 minutes.
  • Meanwhile, pour marinade into a small saucepan, bring to a boil over medium-high heat, stirring frequently. Once it reaches a boil, reduce heat slightly and allow to cook several minutes, stirring frequently, until reduced to 1/4 cup.
  • Serve salmon warm with 1 Tbsp of the maple soy glaze drizzled over top and black pepper and green onions if desired (I don't think it needed salt because of the soy but feel free to add it if you think it needs it).

I love the combination of maple syrup, lime, soy sauce and garlic in this super easy maple glazed salmon recipe. Simple, pretty and delish. There are two key ingredients that take the flavors from good to great. Real maple syrup (not the artificial kind) and fresh lime.

1 pound (450 grams) salmon fillets, Note 1 (2 filets )
kosher salt and black pepper to taste
1/4 cup (50 ml) real maple syrup ((or 5 tablespoons brown sugar))
1 lime, juice and zest
1 teaspoon minced garlic ((1 clove))
2 tablespoons soy sauce
1/4 teaspoon red pepper flakes (optional)
1 teaspoon cornstarch (to be added AFTER marinating)
chopped parsley, chives, toasted sesame seeds and/or flaky sea salt

Steps:

  • HEAT OVEN to 425F/218C. Line a baking sheet with parchment paper or foil, sprayed with oil for easy clean up.
  • MARINATE SALMON: In a medium measuring cup or small bowl, mix together maple syrup, lime juice and zest, garlic, soy and red pepper flakes if using. Pour 1/3 of mixture into a sealed bag or onto a plate (reserve the rest to make glaze). Place salmon fillets in marinade on plate, skin side up. Or put in bag and seal, ensuring salmon is well coated. Marinate for 30 minutes (or less if you don't have time).
  • BAKE SALMON: Note 3. Remove salmon from bag and place it skin side down on baking sheet. Sprinkle with salt and pepper. Pour any marinade left in the bag on top. Bake salmon in preheated oven for 10-12 minutes, depending on its thickness. Figure about 10 minutes cooking time per inch if thickness. Don't overcook. Cook just until fish flakes and is still slightly warm pink in the middle (fish should not be white and dry). An instant thermometer should read 130-135F, depending on how you like your salmon. Temp will rise in 5 minutes.
  • FINISH MAPLE SALMON WITH GLAZE: While the salmon is baking, whisk cornstarch into the reserved sauce. Microwave for a minute or bring to boil in a small saucepan on the stove until the glaze thickens. If too thick, add a few drops of water. When salmon is done, transfer to plates or a platter (I use a spatula slipped between the skin and flesh to lift salmon off and separate it from the skin). Brush glaze on top of the salmon. Sprinkle on garnishes as desired. Serve over rice or quinoa.

Store-bought sauce has nothing on this easy homemade version, which uses maple syrup for sweetness and Sriracha for heat. Use whatever bone-in chicken parts you like and save the leftover sauce for everything else you plan to grill this week.

2 Tbsp. extra-virgin olive oil
3 garlic cloves, crushed
6 Tbsp. double-concentrated tomato paste
½ cup pure maple syrup
¼ cup soy sauce
¼ cup Worcestershire sauce
2 Tbsp. unseasoned rice vinegar
4 tsp. Sriracha or other hot sauce
Vegetable oil (for grill)
1 (3½-4-lb.) whole chicken, cut into 6-8 pieces, or whatever bone-in cut of chicken you feel like cooking
Kosher salt

Steps:

  • Heat olive oil in a small saucepan over medium. Cook garlic, turning occasionally, until golden brown, about 4 minutes. Add tomato paste and cook, stirring constantly and scraping bottom of pan, until slightly darkened, about 3 minutes. Add maple syrup, soy sauce, Worcestershire sauce, vinegar, and Sriracha. Bring to a boil, then reduce heat to medium-low and simmer until flavors have come together, about 1 minute. Remove from heat. Transfer about half of barbecue sauce to a heatproof bowl and set aside for serving.
  • Prepare a grill for medium-high indirect heat (for a charcoal grill, bank coals on one side of grill; for a gas grill, leave one or two burners off); oil grate. Season chicken generously with salt. Grill chicken over direct heat, turning every minute, until browned on all sides, about 5 minutes. Move chicken over indirect heat. Cover, positioning vent (if your grill has one) over chicken, and continue to grill, keeping grill covered as much as possible and turning every 5 minutes or so, until an instant-read thermometer inserted into thickest part registers 140°F-145°F, 18-25 minutes depending on the size of the pieces. Baste chicken with barbecue sauce and grill, turning and basting occasionally, until an instant-read thermometer inserted into thickest part registers 160°F for breast and 165°F for dark meat, about 10 minutes longer.
  • Arrange chicken on a platter. Serve with reserved barbecue sauce alongside.
  • Do Ahead: Barbecue sauce can be made 2 weeks ahead. Transfer to an airtight container; cover and chill.

  • Heat heavy nonstick skillet over medium heat. Add salmon and cook until slightly charred outside and just opaque in center, about 3 minutes per side.
  • Meanwhile, boil marinade until reduced to scant 1/4 cup sauce, about 4 minutes. Place 1 salmon fillet on each of 4 plates, drizzle with sauce, and serve.

  • Grease a sheet of aluminum foil with the oil (vegetable oil sprays work well). Preheat oven to 500°F. Put pepper in small bowl or plate and dip top of salmon pieces into pepper. Place each peppered piece on foil, then cook in oven for 3 to 4 minutes. Serve immediately.
