1 tablespoon soy sauce
2 teaspoons lemon juice
1 clove garlic, minced
1 teaspoon minced fresh ginger or ½ teaspoon powdered ginger
¼ teaspoon freshly ground pepper
2 boneless, skinless chicken breasts (about 8 ounces), trimmed

Steps:

  • In a bowl whisk together the syrup, soy sauce, lemon juice, garlic, ginger and pepper. Add chicken and turn to coat with the marinade; cover and refrigerate for 2 hours, turning once. Coat an indoor grill pan with cooking spray and heat over medium heat. Remove the chicken from the marinade (reserving the marinade) and cook 3 to 5 minutes per side. Meanwhile, pour the reserved marinade into a small saucepan and bring to a simmer over medium heat. Cook until reduced by about half, about 4 minutes. Liberally baste the chicken with the reduced sauce and serve.

Steps:

  • Whisk syrup, soy sauce, lemon juice, garlic, ginger and pepper in a small, shallow dish. Add chicken and turn to coat with the marinade; cover and refrigerate for 2 hours, turning once.
  • Coat an indoor grill pan with cooking spray and heat over medium heat. Remove the chicken from the marinade (reserving the marinade) and cook until an instant-read thermometer inserted into the thickest part of the breast registers 165 degrees F, 3 to 5 minutes per side.
  • Meanwhile, pour the reserved marinade into a small saucepan and bring to a simmer over medium heat. Cook until reduced by about half, about 4 minutes. Liberally baste the chicken with the reduced sauce and serve.

2 pounds skin-on, bone-in chicken breasts, cut into large chunks
Kosher salt
2 tablespoons extra-virgin olive oil
2 apples (1 red, 1 green), cored and cut into wedges
8 medium shallots, quartered lengthwise
1/4 cup fresh sage leaves, torn
1/2 cup low-sodium chicken broth
1/4 cup pure maple syrup
1/4 cup apple cider vinegar

Steps:

  • Pat the chicken dry and season all over with salt. Heat a large heavy skillet over high heat and add the olive oil. When the oil is hot, add the chicken skin-side down and cook, undisturbed, until the skin is browned and crisp, about 5 minutes.
  • Turn the chicken and add the apples, shallots and sage to the skillet. Reduce the heat to medium high and cook until the chicken is browned on the bottom, 4 to 5 minutes. Transfer the chicken to a plate and continue to cook the apples and shallots, stirring, until golden, about 2 more minutes.
  • Meanwhile, make the glaze: Mix the chicken broth, maple syrup, vinegar and 1/2 teaspoon salt in a small bowl. Add the mixture to the skillet with the apples and shallots and boil until reduced by about three-quarters, 2 to 3 minutes. Return the chicken to the skillet, turning to coat, until cooked through, about 2 more minutes.

4 chicken breasts, split, bone in, skin on
1/4 cup all-purpose flour
1 teaspoon salt
1/4 teaspoon black pepper
4 tablespoons butter
1/2 cup pure maple syrup
1 teaspoon dried savory, crushed
1/2 teaspoon dried thyme, crushed
1/4 teaspoon rubbed sage
1 medium onion, sliced
1/2 cup water

Steps:

  • Dredge chicken in the flour seasoned with salt and pepper. In a fry pan melt the butter until bubbly. Shake to remove excess flour from the chicken, brown the chicken breasts quickly on both sides. While chicken is browning layer the onion slices in the bottom of a 13x9x2 baking pan, add the 1/2 cup water. Place the chicken atop the onion slices. Pour the maple syup over the chicken. In a pinch bowl combine the savory, thyme and sage, mix together. Sprinkle the spices over the chicken. Bake, uncovered at 350' for 50-60 minutes or until chicken is no longer pink, basting chicken occasionally with the pan juices.

If your skillet is not ovenproof, brown the chicken breasts and reduce the glaze as instructed, then transfer the chicken and glaze to a 13 by 9-inch baking dish and bake (don't wash the skillet). When the chicken is fully cooked, transfer it to a plate to rest and scrape the glaze back into the skillet to be reduced." 4 (12 ounce) chicken breasts, bone-in, skin-on
2 teaspoons vegetable oil
1 medium shallot, minced (about 3 tablespoons)

Steps:

  • Adjust oven rack to middle position and heat oven to 375 degrees. Whisk 1 1/2 cups apple cider, corn syrup, maple syrup, mustard, vinegar, pepper flakes, 1/8 teaspoon salt, and 1/8 teaspoon pepper together in medium bowl. Place flour in pie plate, then season chicken on both sides with salt and pepper. Working with one chicken breast at a time, coat chicken with flour, patting off excess.
  • Heat oil in ovenproof 12-inch skillet over medium heat until shimmering. Add chicken breasts skin-side down; cook until well browned and most of fat has rendered from skin, 8 to 14 minutes.   • Transfer skillet to oven and bake chicken until thickest part of breasts registers 160 degrees on instant-read thermometer, 25 to 30 minutes, turning chicken skin-side up halfway through cooking. Transfer chicken to platter and let rest 5 minutes. Return skillet to high heat (be careful-handle will be very hot) and cook glaze, stirring constantly, until thick and syrupy (heatproof spatula should leave wide trail when dragged through glaze), about 1 minute. Remove pan from heat and whisk in remaining 2 tablespoons apple cider. Spoon 1 teaspoon glaze over each breast and serve, passing remaining glaze at table.

1 1/2 tablespoons meaux mustard (vintage mustard)
1/4 cup maple syrup
1 1/2 tablespoons extra virgin olive oil
1 tablespoon fresh tarragon, chopped or 1 teaspoon dry tarragon
3 pears, cut in 6 slices (Bosc)
6 boneless skinless chicken breasts (2 lb in total)
1 1/2 cups chicken stock
salt and pepper

Steps:

  • In a small bowl, mix mustard, maple syrup, olive oil and tarragon. Add salt and pepper. Brush each slice of pear with a little bit of this mustard mixture. Put 3 slices on a baking sheet, overlapping them slightly. Do the same with the remaining slices. Set aside.
  • In a bowl, pour remaining of mustard mixture, add chicken and stir to coat well. In a large non-stick skillet, cook chicken at medium heat 4 to 6 minutes or until golden (flip it at mid-cooking). Put chicken breasts on the bed of sliced pears. Cook in a preheated oven of 350 F for 15 to 18 minutes or until chicken is not pink inside.
  • Meanwhile, pour chicken stock in the skillet and scrape the bottom with a wood spoon and cook at medium heat 3 to 5 minutes or until the sauce has reduced to a third.

The last time I made it, I added extra because I was feeding more people. It still turned out delicious and so tender one can eat it with a fork. The maple and apple give the chicken a different flavor that makes a nice change.
