SMOKED TURKEY SALAD

Steps:
- Remove the skins from the Smoked Turkey Legs, pull off the meat and chop into 1/2-inch cubes.
- Place the turkey, celery, apple, pecans, vinegar, parsley, black pepper and mayonnaise in a medium-sized bowl. Stir to combine and serve.
- Place the water, kosher salt and brown sugar in an 8-quart plastic container and stir until fully dissolved. Add the ice before submerging the turkey legs in the brine. Cover and refrigerate for 4 hours or up to 12 hours.
- Set up your favorite smoker and add a handful of hardwood chunks. If you have heat control, set it to 150 to 170 degrees F and allow the wood to smoke for approximately 30 minutes.
- While the smoker is heating, drain the legs, pat them dry and arrange them on a rack. Smoke the legs on the rack for 3 hours, rotating the legs halfway through.
- Heat your oven to 350 degrees F. Make 2 pouches out of double-layered heavy-duty tin foil, adding 3 legs and 1/2 cup of chicken stock to each pouch. Braise the legs in their pouches for 1 hour, then carefully drain and reserve the jus.
- Defat the jus, remove the skins and serve the legs alongside the smoky jus.
CHICKEN OR TURKEY SALAD
This is very good served over a bed of lettuce or as a sandwich. It's a good way to use up left over turkey at Thanksgiving. I am basing prep and cook time on using left over meat. Cook time is actually the chill time.

- Combine chicken and celery in bowl.
- Mix salad dressing (I used Miracle Whip), salt, poultry seasoning, onion salt and pepper.
- Pour over chicken and celery; toss.
- Cover; chill at least 2 hours.
- For variation, fold in one of the following: 1 cup chilled fruit (mandarin orange segments, chopped apple, seedless green grapes or pineapple tidbits) or: 1/4 cup chopped sweet pickle or: 4 slices bacon, crsply fried and crumbled or: 1/3 cup chopped nuts.

- Place turkey in a 3-qt. slow cooker. Sprinkle with ginger and pepper flakes. Top with oranges. In a small bowl, combine marinade and broth; pour over turkey. Cover and cook on low for 4-5 hours or until a thermometer reads 170°. , Stir vegetables into the slow cooker. Cover and cook 30 minutes longer or until vegetables are heated through. , Sprinkle with sesame seeds and green onion. Serve with rice if desired. Freeze option: Cool turkey mixture. - Step 1: Cook pasta shells according to package directions (about 10 minutes). Drain and rinse in cold water. Set aside.
- Step 2: Drain 1 can (11 ounces) mandarin orange segments, reserving the liquid. In a large bowl, stir together 1/2 cup mayonnaise, 1/2 cup plain yogurt, 2 teaspoons Dijon mustard, 1/2 teaspoon ground ginger, 1/4 teaspoon salt, and 1/8 teaspoon black pepper until blended.
- Step 3: Add the cooked, cooled pasta shells, 4 ounces cubed turkey or chicken breast, 1 can (11 ounces) drained mandarin orange segments, 1/2 cup sliced almonds and 1/2 cup sliced green onions. Stir in about 2 tablespoons of the reserved orange liquid, or to desired consistency.
