PIMENTO CHEESE
This pimento cheese is the best! It's cheesy, tangy, peppery (spicy if you wish), and spreadable. Recipe yields 2 cups.

Steps:
- In a large mixing bowl or the bowl of your stand mixer, combine the cheddar, cream cheese, pimento peppers, mayonnaise, garlic powder, onion powder, cayenne pepper and jalapeño (if using), and several twists of black pepper.
- Beat the mixture together with a hand mixer, your stand mixer, or by hand with a sturdy wooden spoon or spatula. Beat until the mixture is thoroughly combined.
- Taste, and add more black pepper if desired, and/or salt for more overall flavor (I usually add a pinch of two). If you'd like your pimento cheese to have more of a kick, add another pinch of cayenne. Blend again.
- Transfer the mixture to a smaller serving bowl. Serve your pimento cheese immediately, or chill it in the refrigerator for up to 1 week. Pimento cheese hardens as it cools; let it rest for 30 minutes at room temperature to soften.

I just threw this together one day for a party where I knew there wouldn't be any sandwiches for us non meat eaters. Definitely not for the Vegan. This is a quick and yummy alternative to store bought pimento cheese spread.

MAMA'S PIMENTO CHEESE
My mother taught me to make this when I was a child. I have modified it a bit over the years, but it's something that is requested if the group knows I am going to be contributing to the refreshments. When my 4 adult kids are around, this is the first request! Enjoy!

- Mix all together in large bowl. Adjust mayonnaise to desired consistency for spreading. Spread on your favorite bread and enjoy!
- This will serve a group (makes about 20 sandwiches) To adjust down, use 1 lb. cheese and the small jar of pimentos and small can of green chiles.

- Cut the cheese into 8 pieces and pulse in a food processor until finely chopped. You can chop the cheese by hand if you don't have a food processor.
