Basic British Scones image

After much trial and error, I've come up with this basic scone recipe which rivals the scones at Tea & Sympathy in NYC.

2 cups all-purpose flour
1 teaspoon cream of tartar
½ teaspoon baking soda
1 pinch salt
¼ cup margarine
⅛ cup white sugar
½ cup milk
2 tablespoons milk

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.
  • Sift the flour, cream of tartar, baking soda and salt into a bowl.
  • Rub in the butter until the mixture resembles fine breadcrumbs. Stir in the sugar and enough milk to mix to a soft dough.
  • Turn onto a floured surface, knead lightly and roll out to a 3/4-inch thickness. Cut into 2-inch rounds and place on the prepared baking sheet. Brush with milk to glaze.
  • Bake at 425 degrees F (220 degrees C) for 10 minutes then cool on a wire rack. Serve with butter or clotted cream and jam.

1 cup cake flour
2 tablespoons brown sugar
1-1/2 teaspoons baking powder

2 tablespoons canola oil
1/2 teaspoon vanilla extract

Steps:

  • In a large bowl, combine the flours, brown sugar, baking powder, salt and baking soda. Cut in butter until mixture resembles coarse crumbs. Combine the egg, buttermilk, oil and vanilla; add to crumb mixture and stir until a soft dough forms. Turn onto a floured surface; gently knead 6-8 times., Pat dough into a 6-in. circle. Cut into eight wedges. Separate wedges and place 1 in. apart on an ungreased baking sheet. Brush tops with milk; sprinkle with sugar. Bake at 400° for 12-14 minutes or until lightly browned. Remove to a wire rack. Serve warm.

350g self-raising flour, plus more for dusting
1 tsp baking powder
85g butter, cut into cubes
3 tbsp caster sugar
175ml milk
1 tsp vanilla extract
squeeze lemon juice (see tips below)
beaten egg, to glaze
jam and clotted cream, to serve

Steps:

  • Heat the oven to 220C/200C fan/gas 7. Tip the self-raising flour into a large bowl with ¼ tsp salt and the baking powder, then mix.
  • Add the butter, then rub in with your fingers until the mix looks like fine crumbs. Stir in the caster sugar.
  • Put the milk into a jug and heat in the microwave for about 30 secs until warm, but not hot. Add the vanilla extract and a squeeze of lemon juice, then set aside for a moment.
  • Put a baking tray in the oven. Make a well in the dry mix, then add the liquid and combine it quickly with a cutlery knife - it will seem pretty wet at first.
  • Scatter some flour onto the work surface and tip the dough out. Dredge the dough and your hands with a little more flour, then fold the dough over 2-3 times until it's a little smoother. Pat into a round about 4cm deep. Take a 5cm cutter (smooth-edged cutters tend to cut more cleanly, giving a better rise) and dip it into some flour. Plunge into the dough, then repeat until you have four scones. You may need to press what's left of the dough back into a round to cut out another four.
  • Brush the tops with a beaten egg, then carefully arrange on the hot baking tray. Bake for 10 mins until risen and golden on the top. Eat just warm or cold on the day of baking, generously topped with jam and clotted cream. If freezing, freeze once cool. Defrost, then put in a low oven (about 160C/140C fan/gas 3) for a few minutes to refresh.

3 1/4 cups /400 grams self-rising flour
2 ounces /55 grams butter (cold)
1/2 teaspoon baking powder (make sure it's level)
1/2 level teaspoon salt (make sure it's level)
1 ounces/25 grams sugar (if you want your scones a little sweeter)
2 large eggs (beaten)
1/2 cup/100 milliliters milk

Steps:

  • Gather the ingredients.
  • Heat the oven to 400 F/205 C/Gas 6. Grease and flour a heavy baking sheet.
  • Sieve the flour into a roomy mixing bowl then add the butter, baking powder, salt, and sugar, if using.
  • Quickly rub the butter into the flour until the mixture resembles fine breadcrumbs.
  • Make a well in the center and using a dinner knife, stir in the beaten eggs and enough milk to make a soft, lightly sticky but pliable dough.
  • Turn the mixture onto a floured board and knead very lightly until just smooth then lightly roll out to 3/4-inch thick.
  • Cut rounds with a 3-inch cutter. Place on the baking tray and brush with the beaten egg and milk mixture.
  • Bake near the top of the hot oven for 15 minutes or until golden brown and well risen.
  • Cool on a wire rack before eating. Serve with butter, or jam and cream.

Steps:

  • Whisk together flours, granulated sugar, baking powder, and salt in a large bowl. Cut in butter with a pastry cutter, or rub in with your fingers, until mixture has the texture of coarse meal. Stir in blueberries.
  • Whisk together buttermilk, 1 egg, and the vanilla. Drizzle over flour mixture, and stir lightly with a fork until dough comes together but a small amount of flour remains in bowl.
  • Turn out dough onto a work surface, and gently knead dough once or twice just to incorporate flour. Pat dough into a 1-inch-thick round. Cut into 12 wedges. Transfer to prepared baking sheet. Brush with egg wash, and sprinkle with sanding sugar. Bake until golden brown and cooked through, about 22 minutes. Transfer scones to wire racks to cool.

2 Tbsp sugar
4 tsp baking powder
½ tsp salt
3 Tbsp unsalted butter, cold
⅔ c milk
1 egg yolk beaten with 1 Tbsp milk, (to glaze)
Strawberry jam, (to serve)
Clotted cream, at room temerature (to serve)

Steps:

  • Preheat your oven to 425F.
  • In a medium bowl, place the flour, sugar, baking powder, salt, and butter. Rub the mixture together with your fingers to break up the butter, until the mixture resembles fine breadcrumbs.
  • Add the milk slowly, mixing as you add, using enough of the milk to get your dough to come together with no lumps remaining. (Your dough should be quite sticky. If a good consistency is not achieved with the listed amount of milk, continue adding until your dough reaches a good consistency.)
  • Spoon the dough out until a well-floured surface. Generously dust the top of the dough and knead the dough 2-3 times to coat it with flour and smooth the surface. Press the dough into a round that is roughly 1 inch thick.
  • Using a well-floured cookie cutter, cut the dough into 2 inch circles. (Be sure to press the cookie cutter straight down and up. Twisting the cookie cutter will impact the amount of rise you get on your scones.)
  • Place the rounds onto a greased and floured baking sheet. Brush them gently with the egg yolk and milk mixture.
  • Bake the scones for 12-15 minutes, until golden and firm.
  • Remove the baked scones from the oven and let them cool for 30 minutes (if you can resist). If you like softer scones, cover them with a clean tea towel as they cool.

3 cups flour
2 tablespoons baking powder
1/3 cup sugar
1/2 teaspoon salt
8 tablespoons butter, cut in cubes
2 eggs
1 cup milk
1/2 cup flour, for rolling

Steps:

  • Preheat oven to 500 degrees F. Line 2 baking sheets with parchment paper, set aside.
  • Place dry ingredients in bowl of food processor fitted with a metal blade; pulse until well combined.
  • Add butter cubes. They should be firm but not hard, and pliable if you squeeze one between your fingers. Pulse until butter is fully combined with flour mixture. No chunks of butter should remain.
  • Transfer flour & butter mixture to large mixing bowl. Add ¾ cup currants, stir into flour mix. Use your fingers, and separate any currants that are stuck together in clumps.
  • In a small bowl, whisk eggs and milk together. Reserve 2 TB of mixture to brush on tops of scones before baking. Add remaining eggs and milk to bowl with flour and currants. Stir together gently with a rubber spatula until all dry ingredients are moistened. Dough will be somewhat sticky.
  • Turn onto generously floured counter, knead 15 to 20 turns with floured hands. Use a bench scraper if needed to get dough off of counter.
  • Roll out 3/4 to 1" thick on floured board. Cut into 2 1/4 inch rounds, dipping cutter into flour between cuts, and do not twist the cutter- cut straight down. This should make about 18 scones, or more if using smaller cutter. Place onto baking tray lined with parchment. Knead scraps together once or twice and cut remaining rounds until all dough is used. Brush scones on tops only with reserved egg mixture.
  • Put scones into preheated 500 degree oven, turn heat down to 425 degrees F, and bake for 10-12 minutes until golden brown on top and bottom. Reverse pans halfway through baking time.
  • Cool on rack a few minutes before serving.

  • Preheat oven to 425 degrees F. Combine in mixing bowl the flour, salt, baking powder and sugar. With pastry blender cut in the shortening. Add raisins. Lightly beat the egg and add enough milk to total 2/3 cup liquid. Add liquid to dry ingredients and stir gently with folk until dough holds together. Gather dough into a ball and place on lightly floured board and knead gently, about 12 kneading strokes. No, your scone is NOT supposed to be a sad dry heap of useless carbs! The best scones are crispy on the edges and tender in the middle. They are buttery, flaky, perfectly moist pieces of breakfast perfection that are surprisingly easy to make with a few tips. Don't let the sad coffeehouse selections fool you into thinking you don't like scones. You just haven't tried this recipe yet!

2 & 1/2 cups all purpose flour (spooned and leveled)
1/2 cup granulated sugar
1/2 teaspoon kosher salt
1 & 1/2 tablespoons baking powder (yes really)
1/2 cup butter ((1 stick) COLD butter, frozen butter is great too)
1 large egg
2 teaspoons vanilla
1/3 cup heavy cream*
1/3 cup sour cream
more cream (for brushing)
1 (8-oz) package COLD cream cheese (chopped)
1/3 to 1/2 cup sugar (for coating cream cheese)
2 tablespoons butter (very soft)
1 & 1/2 cups powdered sugar
1/2 teaspoon vanilla
1/4 teaspoon kosher salt
1-3 tablespoons milk

Steps:

  • Dry ingredients: In a large bowl, combine 2 and 1/2 cups flour, 1/2 cup sugar**, 1/2 teaspoon kosher salt, and 1 and 1/2 tablespoons baking powder.
  • Wet ingredients: In another medium bowl, add 1 egg, 2 teaspoons vanilla (omit for savory scones), 1/3 cup cream and 1/3 cup sour cream. Whisk it together. Set aside.
  • Cut in butter: Now back to the dry ingredients. Use a pastry cutter to cut in the COLD or frozen butter. You can also grate the butter using a cheese grater and mix it in that way. Cut the butter in until it is incorporated and there are still pieces of butter about the size of a pea. Don't overdo it! See photos.
  • Add the wet ingredients to the dry ingredients. Use a wooden spoon to stir it together until it forms a shaggy dough.
  • Coat your hands with flour and finish kneading the dough in as few strokes as possible. (Overworking the dough makes for a tough scone.) Use your hands to fold the dough on top of itself, creating more and more layers until it has come together and all the flour is incorporated. You can add a tablespoon or two of ice cold water if you think it's necessary. I try to get the dough to come together in 5-8 folds. Do your best and remember that you will get better with practice!
  • Mix-ins: At this point add in any mix ins you plan to use. (If you want to add cream cheese like you can see in the photos, chop an 8 ounce block of cream cheese into 1/2 inch chunks. Coat with 1/3 to 1/2 cup sugar in a bowl, making sure all the cream cheese is coated. Carefully fold into the dough.)
  • Prepare a work space with plenty of flour. I like to use a pastry cloth. Transfer the dough to the work place and use your hands to shape the dough into a 6 to 8 inch circle. I like really thick, tall scones. The thicker your circle of dough is, the taller your scones will be. If you added mix ins, your circle will be a bit larger.
  • Use a sharp knife or pizza cutter to cut the circle in half. Cut each half into 3 equal triangles.
  • Place on a baking sheet that has been lined with a silicone baking mat or parchment paper. Place the scones at least 3 inches apart from each other.
  • Freeze for 30 minutes.*** If you don't have room in your freezer, you can put them in the fridge for 45 minutes. If you don't have room to chill a whole baking sheet, place the scones on a plate and then transfer to the baking sheet when they are frozen/cold.
  • 15 minutes before the scones are done freezing, turn your oven on to 400 degrees F.
  • Place the cold scones on a baking sheet if you haven't done so yet.
  • Brush the top of each scone with cream. This will make the scones get nice and brown. Top each scone with coarse sugar if you like, or a bit of salt if you are doing savory scones.
  • Bake: Put the scones in the oven and bake for 10 minutes at 400 degrees.
  • Turn the heat down to 375 without opening the oven.**** Bake for another 8-15 minutes, until the tops are golden brown. DO NOT OVER BAKE. This is where the magic happens, so stay nearby. If you over bake your scones, they will be dry even if you did everything else right. If you are not sure, use a spatula to lift up one of the scones. If they are a nice golden brown on the bottom, they are done.
  • Remove from the oven and let set up on the pan for 10-15 minutes. Transfer to a wire rack to cool completely.
  • Make the glaze: in a small bowl, whisk or use an electric beater to cream 2 tablespoons of very soft butter. Add 1 and 1/2 cups powdered sugar, 1/2 teaspoon vanilla, 1/4 teaspoon kosher salt, and 1 tablespoon milk. Whisk together and add more milk until you have a consistency you like. Drizzle over the tops of the scones and let harden (it usually takes 20-30 minutes.)
  • Top your scones with butter and jam! They are great reheated in the microwave.
  • Store scones covered on the counter for 2-4 days. They are best eaten on day 1 so that you can get those crispy edges. After storing for a while it's hard to avoid a bit of sogginess. (Starbucks solves this problem but leaving them out in the air, but then eventually the center gets dried out. So, pick your poison. Or just eat all 6 scones single handedly on day 1. No judgment here.)

I went to a talk by a person from Taste of Home and she made some recipes that were "made over" to make it healthier and lower fat. This is one of them.

1 1/4 cups all-purpose flour
1 cup cake flour
2 tablespoons brown sugar
1 1/2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
3 tablespoons cold butter
2 tablespoons canola oil
1 egg, lightly beaten
1/3 cup buttermilk
1/2 teaspoon vanilla extract
1 teaspoon sugar

Steps:

  • Preheat oven to 400°F.
  • In a large bowl, combine the flours, brown sugar, baking powder, baking soda and salt.
  • Cut in butter until mixture resembles coarse crumbs.
  • Combine the egg, buttermilk, oil and vanilla.
  • Add to crumb mixture and stir until a soft dough forms.
  • Turn onto a floured surface and knead gently 6-8 times.
  • Pat dough into a 6-inch circle and cut into eight wedges.
  • Separate wedges and place 1 inch apart on an ungreased baking sheet.
  • Brush tops with milk; sprinkle with sugar.
  • Bake for 12-14 minutes or until lightly browned. Remove to wire rack and serve warm.

  • Pre-heat oven to 200ºC (180ºC Fan). Sift the flour into a large mixing bowl. Add butter and rub with your fingertips until butter dissolves into the mixture, and the mixture resembles fine breadcrumbs.
  • In a jug, mix together one egg and buttermilk. Pour into the flour mixture and lightly mix together until combined. You might want to use your hands to bring the mixture together as it hardens up.
  • Lightly sprinkle a worktop with flour and gently knead the dough until smooth and soft. Roll to about 2.5cm (1in) thick. Using a round cookie cutter, cut out your scones – if you want you can use the rim of a floured wine glass – if you don’t have a cookie cutter.
  • Stamp out scones two at a time, re-rolling the mixture gently each time. Continue stamping until you have 8 scones. Arrange on a baking sheet and brush with the second beaten egg.
  • Bake for about 12-15 minutes until risen and lightly golden. Serve with clotted cream and strawberry jam.
