Whip up this simple peanut sauce recipe in just 10 minutes. Serve with chicken or vegetable skewers for a starter or party nibble. Kids love it too!

½ lime, juiced
1 tsp clear honey
1 tbsp soy sauce
1 tbsp curry powder
3 tbsp smooth peanut butter
165ml can coconut milk

Steps:

  • Mix the lime juice, honey, soy sauce, curry powder and peanut butter in a small bowl. Add a splash of water if it's too stiff. Transfer to a small pan with the coconut milk, and heat gently for 5 mins stirring continually, until combined.

This is a wonderful, easy thai recipe I received when I did a Thai cooking course. Be warned - it is hot but it is truly wonderful. You would never go back to bought satay sauce again. What's more it freezes well so make a big batch!!

1 tablespoon oil
2 -3 teaspoons crushed dried chili pepper flakes
1/2 cup finely sliced spring onion
1 tablespoon red curry paste
2 kaffir lime leaves, vein removed,chopped finely
1 -1 1/2 cup coconut milk
3/4 cup crunchy peanut butter
2 tablespoons palm sugar (or white will do)
1 lime, juice of

Steps:

  • Heat the oil and carefully fry the dried chilli flakes on low heat.
  • Add the spring onion, red curry paste and lime leaves and cook until fragrant.
  • Stir in 1 cup of coconut milk, the peanut butter and sugar.
  • Bring to the boil, stirring, and add the lime juice.
  • Thin to desired consistency with remaining coconut milk.

3 tablespoons reduced-sodium soy sauce
2 tablespoons lime juice
1 tablespoon dark brown sugar
1 tablespoon minced garlic

1 teaspoon curry powder
1 teaspoon dried cilantro
2 pork tenderloins (about 1 1/2 pounds)
1/2 cup reduced-fat creamy peanut butter
1/2 cup water
2 tablespoons minced garlic
2 tablespoons minced fresh ginger
2 tablespoons rice vinegar
1 teaspoon hot sauce
2 teaspoons reduced-sodium soy sauce
1 teaspoon dark brown sugar
1 peanut crunch candy bar, finely crushed (recommended: Planters Peanut bar)
2 ounces fat free pretzels, finely ground (about 1/3 cup)

Steps:

  • To make the satay: Combine all ingredients except the pork and pour into a shallow, nonreactive dish. Cut the pork tenderloins across into 2-inch-thick pieces. Pound each piece until very thin and even. Place in the dish and turn to coat. Cover and refrigerate at least 2 hours and up to 24 hours.
  • To make the sauce: Stir all ingredients except peanut crunch candy bar and pretzels until smooth. Place in a serving bowl. Combine peanut crunch candy bar and pretzels and place in a separate serving bowl.
  • Remove the pork from the marinade, pat dry and cut into 1 1/2-inch thick strips. Thread onto the skewers. Light a grill or heat a grill pan over medium-high heat. Grill the skewers until just cooked through, 3 to 4 minutes per side.
  • Serve immediately, with the sauce for dipping. Have guests first dip satay in sauce and then in crunch bar and pretzels.

1 small onion (diced)
2 garlic cloves (crushed)
1 teaspoon chili (crushed)
1 teaspoon curry powder
2 tablespoons peanut butter
125 g tinned chopped peeled tomatoes
1 cup vegetable stock
1/2 lemon
salt and pepper

Steps:

  • In a saucepan add oil, onions and garlic stir until the onions become transparent.
  • Add chilli and curry powder and stir for a further 2 minutes to release the flavor.
  • Stir in penut butter and then add tomatoes and stock.
  • Simmer for 5-7 minutues.
  • Add lemon salt and pepper to taste.
  • Enjoy!

This recipe came about when we were having a bbq and I decided I really wanted satay sauce on my steak. Not having any on hand or time to make a real one I mixed up the following and was pleasantly surprised. Measurements were just (roughly) what I used for a bbq for two but you could make this as big as you want, tweek for taste. Best of all, this is a no cook recipe, just stir and serve.

2 tablespoons crunchy peanut butter
1 tablespoon Thai sweet chili sauce
1 dash stir-fry sauce (any asian sauce like oyster, hoisin, etc should work just as well.)

  • You could add a few fresh ingredients such as garlic and fresh chilli but that may pay to heat on the stove to cook through. Fresh corriander could be nice too.
