CARIBBEAN SMOTHERED CHICKEN WITH COCONUT, LIME, AND CHILES



Caribbean Smothered Chicken With Coconut, Lime, and Chiles image

Smothered pork chops may be an iconic soul food specialty, but this recipe proves you can smother anything. All it really means is coating slow-cooked meat with a blanket of saucy aromatics that end up as gravy too.

Number Of Ingredients 10

1 teaspoon vegetable oil
4 large bone-in, skin-on chicken thighs (1½ pounds)
Kosher salt and freshly ground black pepper
6 large sprigs thyme
2 large onions, thinly sliced
2 garlic cloves, chopped
1 habanero chile, slit
1 cup light coconut milk
Zest and juice of 1 large lime, plus wedges for serving
1/2 teaspoon mild yellow curry powder

Steps:

  • Heat the oil in a shallow Dutch oven or casserole with a lid over high heat.
  • Season the chicken generously with salt and pepper and add to the hot oil, skin side down. Sear, flipping once, until browned on both sides and the fat renders, about 5 minutes.
  • Push the chicken to one side of the pan, add the thyme and onions to the other side, and reduce the heat to medium-low.
  • Cook, stirring, until the onions get some color, about 4 minutes. Add the garlic, chile, ½ teaspoon salt, and ½ teaspoon pepper. Cook, stirring, for 1 minute, then add the coconut milk and ¼ cup water. Bring to a boil, stirring.
  • Arrange the chicken in a single layer skin side up and surround with the onion mixture. The skin should be just above the liquid line. Cover and simmer until the chicken is cooked through, about 20 minutes.
  • Uncover and stir in the lime juice. Simmer uncovered until the sauce thickens, about 5 minutes. Stir in the curry powder and lime zest.
  • Serve immediately with lime wedges.
  • DO AHEAD: The cooked chicken can be refrigerated for up to 3 days.

I couldn't find a recipe for coconut chicken that is typically served at a Chinese buffet, so I made my own. This is baked, not fried. I like to serve this with rice and edamame. My husband and picky 2 year old love this!

1 (14 ounce) can coconut milk, divided
1 clove garlic, minced
1 tablespoon soy sauce
1 tablespoon lime juice
1 ½ pounds skinless, boneless chicken breast halves, cut into strips
1 cup sweetened shredded coconut
1 cup panko bread crumbs
½ teaspoon salt
½ teaspoon ground black pepper
½ cup all-purpose flour
1 egg, beaten
½ cup reduced-fat mayonnaise

Steps:

  • Pour half the coconut milk, the garlic, soy sauce, and lime juice into a resealable plastic zipper bag, and shake to thoroughly combine the marinade. Place the chicken strips into the bag, squeeze several times to coat the chicken with marinade, and refrigerate at least 3 hours. Reserve the rest of the coconut milk.
  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil and grease with olive oil.
  • Place the shredded coconut into a blender or food processor and pulse several times until the coconut is ground into crumbs. Mix it with panko crumbs, salt, and black pepper in a bowl. Place the flour into a second bowl, and the egg into a third shallow bowl. Shake excess marinade from chicken strips, and dip them into the flour to thoroughly coat; then dip into egg, and finally into the coconut crumb mixture. Place the coated strips onto the prepared baking sheet.
  • Bake the chicken strips in the preheated oven until golden brown, about 30 minutes.
  • Mix the reserved coconut milk and mayonnaise in a small saucepan, and bring to a simmer over medium-low heat; serve the sauce drizzled over the chicken strips or on the side for dipping.

1 whole chicken, de-boned and cut into pieces
1 lemon, juice of
1 teaspoon grated lemon rind
salt
pepper
cayenne pepper
oil (for frying, coconut oil if possible)
2 onions, chopped
2 garlic cloves, minced
2 -3 tomatoes, chopped
1 teaspoon fresh ginger, minced
1 cup unsweetened coconut milk

Steps:

  • Marinate the chicken in the lemon juice, lemon rind, salt and pepper for about an hour.
  • Heat oil in dutch oven or large covered pot. Saute the onion and garlic for a few minutes.
  • Add the chicken and continue to cook and stir until the chicken is nearly done.
  • Reduce heat, add tomatoes and ginger and stir for a few minutes.
  • Add coconut milk and simmer over low heat until chicken is fully cooked and sauce is thickened.
  • Serve over rice.

6 -8 chicken breasts
1 tablespoon olive oil
1 onion
1 (14 ounce) can coconut cream
1 (14 ounce) can diced tomatoes
2 green onions, for color
salt
pepper
1 zucchini (optional)

Steps:

  • Cut up the chicken breast into bite size pieces. Brown the chicken with the olive oil, but do not cook it completely. Add the chopped onion and let cook for about 1 minute, stirring it occasionally. Add the coconut cream and the can of chopped tomatoes. Add the chopped green onions. Add a dash of salt and dash of pepper. Let simmer for 1 hour covered, stirring occasionally.
  • Optional: Add 1 chopped zucchini squash around the last 10 minutes.
  • Serve with rice and you are done.

2 (1/2 lb) boneless skinless chicken breast half
2/3 cup coconut milk
1 1/2 cups yellow onions, chopped
1 bell pepper, chopped, any color
3 garlic cloves, minced
2 teaspoons ground ginger
1 lemon, juice and zest of
1/3 teaspoon cayenne, adjust to taste
salt and pepper, to taste

Steps:

  • Grate the lemon rind, removing the yellow only and leaving the bitter pith on the fruit. Reserve rind.
  • Cut chicken into bite sized pieces and squeeze the juice of the lemon over the meat. Allow if to marinate for 30 minutes. Drain and season with salt and pepper to taste.
  • In a hot skillet with a little oil or cooking spray, brown chicken over medium heat leaving chicken only partially cooked.
  • Remove chicken and discard any oil, leaving just a light film or spray pan again. Add onions and cook until slightly browned.
  • Add bell pepper and garlic and saute for 3 minutes. Reduce heat to simmer, add coconut milk, ginger, cayenne powder, and grated lemon rind.
  • Return chicken to pan, cover and simmer 30 min or until in thick stew consistency. If mixture is too thin simmer with lid removed until desired consistency is reached.
  • Serve over a bed of steamed white rice.
