DEEP-FRIED MAHI-MAHI MACADAMIA NUT FINGERS
Steps:
- In a saucepan, combine the pineapple, papaya, gooseberries and 1 cup of sugar. Bring to a boil, then simmer, stirring every 5 minutes to avoid scorching, for 1 hour or until mixture reaches jam consistency. Cool. Divide papaya mixture into 3 bowls. - In a mixing bowl, combine the eggs, green onions, garlic, ginger, soy sauce, sherry, remaining teaspoon of sugar and cornstarch. Mix well. Season with salt and pepper. In a large mixing bowl, marinate the mahi-mahi "fingers" in the marinade for 10 minutes. Drain. Season the flour with salt and pepper. Dip the fish pieces in the seasoned flour and then the egg. In a mixing bowl combine the panko bread crumbs and the macadamia nuts. Mix well. Dip the fish in the macadamia nut mixture. Coat well. In a wok or deep, heavy kettle, heat 2 1/4 to 3 inches of oil on medium-high heat until it registers 365 degrees F on a deep fry thermometer. Fry fish fingers a few at a time until golden. MACADAMIA AND COCONUT CRUSTED MAHI MAHI WITH PINEAPPLE SALSA
I just returned from a fabulous trip from Hawaii, and I wanted to figure out a way to make a dish that reminded me of all of the island flavors-- here is the result! Mahi Mahi is a great Hawaiian fish that is easy to find here in the States (as opposed to Opah or Ono fish which are delicious but impossible to find here...). I also wanted to try making a pineapple salsa after visiting the Dole Pineapple Plantation, and it turned out really well-- sweet and spicy! I hope you enjoy this one! Aloha!

- Slice the onion up and lay the slices down on the foil to create a bed for the fish. This not only flavors and gives the fish a wonderful aroma, but also ensures that the fish does not stick to the foil. Slice the lime into rounds, and rub the fish on both sides with the lime. Season the fish with plenty of salt and pepper on both sides, and lay the fillets on top of the onion bed. Lay the lime rounds right on top of the fish, and seal the foil up all around the edges. Pop it into the oven, and bake for 7 minutes.
- Remove from the oven, open up the foil, and remove the lime wedges. Brush the tops of the fish with the coconut milk, then use your fingers to pack the macadamia crust on top of the fish.
