BLENDED MUSHROOM AND BEEF BURGERS
For some of the juiciest, most flavorful burgers you've ever had try making blended mushroom and beef burgers. Blended burgers combine beef and mushrooms to create tastier, healthier burgers with a lower environmental footprint.

- Wash and clean the mushrooms before giving them a rough chop to break them into chunks.
- In a food processor mince the onions and garlic. Once they're done, add the mushrooms and use the pulse mode to mince them. Using the pulse mode and giving the mushrooms a rough chop helps them hold on to their liquid, making the burgers easier to form.
- Combine the mushrooms with the smoked paprika, salt, pepper, and Worcestershire sauce.
- In a large bowl mix the mushrooms and ground beef together.
- Using your hands, form the mixture into five patties, using your thumbs to create a small indentation in the top.
- Grill the burgers on a medium-high grill for 6 minutes per side.
- Serve on toasted buns with your favorite condiments.

BLENDED BEEF, WHITE BEAN AND SQUASH BURGERS
This smoky, juicy burger is a three-in-one combination of a classic beef burger, a veggie burger and a bean burger. It's a delicious and easy way to cut down on meat while still getting lots of satisfying flavor. After you've tried this version, put your own spin on it by subbing in your favorite spice blend instead of the paprika, garlic and onion powder used here.

- Position a rack in the center of the oven and preheat to 425 degrees F.
- Add the beans, smoked paprika, garlic powder and onion powder to a large bowl. Stir to combine, then set aside.
- Combine the butternut squash, olive oil, a large pinch salt and a couple grinds black pepper on a small baking sheet. Toss to coat and spread in an even layer. Roast in the oven until the squash is tender and deeply browned in spots, about 25 minutes, rotating the baking sheet once halfway through the cooking time.
- Add the squash to the bean mixture and stir to combine. Allow to cool completely.
- Once cooled, use a fork to roughly mash the squash and beans. It should be mostly smooth but with small chunks of squash and beans throughout. Add the beef and 1/2 teaspoon salt and use your hands to mix until combined. Divide into 4 portions and form each into a patty about 4 inches in diameter and a little more than 1/2 inch thick.
- Heat a large cast-iron skillet over medium-high heat. Once the pan is hot, add the canola oil and swirl to coat. Season the patties liberally on both sides with salt and pepper and add to the pan. Cook until deeply browned and a crust is formed on the first side, 3 to 4 minutes. Flip carefully and cook until the second side is also browned, 2 to 3 minutes. Layer 2 pieces of the cheese (1 slice total) on top of each patty, then cover the pan and cook until cheese is just melted, about 1 minute.
- Layer the patties, lettuce and tomato on the toasted hamburger buns and serve ketchup, mustard and mayonnaise alongside.

- Place the mushrooms and oats in the bowl of a food processor fitted with a metal blade. Pulse until finely chopped. Add the beef, seasoning blend and salt. Pulse until well combined. Form the mixture into six 4-inch patties.
- Set a greased grill pan over medium-high heat. Place the burgers on pan and cook without turning for 5 to 7 minutes. Flip burgers and cook for an additional 5 minutes.
- Add cheese and cook for 1 minute more. Serve on hamburger buns with traditional toppings.

- Gently wipe any dirt off the mushrooms with a damp paper towel. Break the mushrooms into pieces and place into the bowl of a food processor. Pulse mushrooms, scraping down the sides and stirring as needed until they are minced fine (avoid over processing to the point that they become a paste).
- Heat the oil in a large skillet over medium-high heat. Add the minced onion and mushrooms, stirring occasionally. Cook until the mushrooms have released all their moisture, and the mixture becomes browned, dry, and crumbly (it will resemble cooked ground beef - see photo), about 10-15 minutes. Set aside to cool.
- Mix the cooked mushroom mixture into the ground beef until the two are incorporated. Form into 4 hamburger patties. Season each of the patties evenly on both sides with seasoning or salt and pepper.
- Cook burgers fully with your favorite burger cooking method (they can be grilled, or cooked on a griddle or skillet) until they are fully cooked (the center of the burger should read 160°F on an instant read thermometer).
