Steps:
- Toast the English muffin until it's golden brown. Butter the bottom bun of the English muffin and set aside. You can hot-hold the English muffin in a 200 degree Fahrenheit oven while you cook the remaining ingredients, if you like.
- If you're making your own patties, form the bulk sausage into a round ball and flatten it between your palms. Form it into a patty that's roughly 3 inches in diameter.
- Cook the sausage patty in a skillet over medium heat for 5 to 6 minutes a side, until it's browned through and reaches an internal temperature of 165 degrees. Alternatively, you can cook multiple patties at once in a 400 degree oven. Bake the patties in a single layer on a baking sheet for 8 to 10 minutes a side, flipping once, until they reach the proper internal temperature. Set aside.
- Meanwhile, grease the lid of a canning jar with the melted butter or oil. Place the lid in a small saute pan and heat it over medium-high heat.
- Crack the egg into the lid and break the yolk with a fork. Pour 1/4 cup of water to the pan, taking care not to pour the water inside the mason jar ring. Cover the pan with a lid and cook for 3 to 4 minutes, until the egg is cooked through.
- Carefully remove the hot mason jar lid from the pan. Using a butter knife, release the egg from the lid.
- Assemble the sandwich by placing the American cheese on the English muffin bottom bun. You can melt the cheese briefly under the broiler, if desired.
- Place the sausage patty on top of the cheese, followed by the egg and the top bun. Serve warm.

Recipe video above. This is my copycat of McDonald's Sausage and Egg McMuffin. The sausage patties are made from scratch and it really does taste similar to the McDonald's Sausage patty - but it tastes pure, like real food should! Great make ahead breakfast - grab and run!

Steps:
- Preheat the oven to 325 degrees F. Spray a 9-by-13-inch baking or jelly roll pan generously with nonstick cooking spray.
- Combine the cream and eggs in a large bowl and whisk until thoroughly combined. Whisk in some salt and pepper. Pour the egg mixture onto the prepared pan and carefully place in the oven. Cook for 6 to 7 minutes, and then sprinkle with the cheese and cook until the eggs are set but not browned, another 6 to 7 minutes. Cut into 12 equal squares. Set aside.
- Meanwhile, in a 12-inch skillet set over medium heat, add the sausage patties and press down until "smashed." Cook until slightly charred and no longer pink in the middle, about 5 minutes per side. Remove the patties and let drain on a paper towel-lined plate.
- To build the sandwiches, layer the bottom of each English muffin with a piece of egg and sausage and cover with the English muffin top. Repeat with the remaining ingredients. Individually wrap each sandwich tightly in plastic wrap, place in a resealable bag and freeze.
- To reheat, remove the plastic from the sandwich, wrap in a paper towel and heat in a microwave until totally defrosted and hot, about 2 minutes!
