Provided by lyuba

Categories     Breakfast     Dessert

Time 35m

Number Of Ingredients 16

1 3/4 cups all purpose flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 cup brown sugar
pinch salt
2 eggs
3/4 cup low fat buttermilk
2 tbsp sour cream
3 tbsp bacon grease
1/4 cup maple syrup
1 tsp maple extract ((optional))
1/3 cup crumbled bacon (3-4 slices)
1 cup powdered sugar
2 tbsp maple syrup
2 tbsp heavy whipping cream
2-3 bacon slices - crumbled (for topping)

Steps:

  • Preheat oven to 400°, line a rimmed baking sheet with aluminum foil, and place a cookie wire rack inside the baking sheet.
  • Lay raw bacon strips on the wire rack and bake for 13-20 minutes, depending on the thickness of bacon.
  • Take out of the oven and set aside. Make sure to save the bacon grease for the donut batter.
  • Preheat oven to 350° and grease a donut baking pan.
  • Combine all wet ingredients for the batter in a mixing bowl and whisk well. Sift in dry ingredients and whisk until incorporated. Fold in bacon pieces.
  • Scoop the batter into a large piping bag. Cut the tip off the piping bag, leaving only about 1/2- 3/4 inch opening.
  • Squeeze batter into the donut cups of the pan in one smooth circular motion, filling each cup about 3/4 full. Make sure there is an even amount of batter all around.
  • Bake for 11-12 minutes and let donuts cool on the wire rack, just until it's cooled enough to be handled. Spread paper towel under the cooling rack to catch glaze drippings.
  • Add powdered sugar into a small mixing bowl.
  • Heat up maple syrup in a microwave for a few seconds, until hot but not boiling. Add heavy whipping cream to maple syrup and whisk until smooth.
  • Pour the mixture into powdered sugar and whisk until completely incorporated.
  • Dip each donut into the glaze to coat it on the top and sides. (You can even dip the bottoms as well.)
  • Top each glazed donut with some bacon crumbles.

  • While hot, dip the donuts into Maple Glaze, then into bacon pieces and set onto wire racks to drain off excess.

MINI MAPLE-GLAZED DOUGHNUTS WITH COCONUT "BACON"

Mini Maple-Glazed Doughnuts with Coconut

You may not know this about me, but I'm not one to gravitate towards doughnuts if there are other sweet treats available. That was, until I made these mini doughnuts. They are sooo good-salty and sweet at the same time, which is my favorite flavor combo of all.

Provided by Kardea Brown

Categories     dessert

Time 1h10m

Yield 12 servings

Number Of Ingredients 16

1 cup large unsweetened coconut chips
1 tablespoon low-sodium soy sauce
1 teaspoon liquid smoke
1 teaspoon maple syrup
1/4 cup vegan butter
1/2 cup almond milk
2 tablespoons coconut oil
Peanut or canola oil, for frying
2 cups all-purpose flour
1/4 cup vegan cane sugar
1 teaspoon baking powder
1/4 teaspoon kosher salt
1 cup vegan confectioners' sugar
1/2 cup maple syrup
1/2 teaspoon maple extract
Pinch kosher salt

Steps:

  • For the coconut "bacon": Preheat the oven to 350 degrees F.
  • Mix together the coconut chips, soy sauce, liquid smoke and maple syrup in a medium bowl. Spread in a single layer on a parchment paper-lined baking sheet. Bake, stirring halfway through, until the coconut is golden brown, 8 to 10 minutes. Set aside to cool. The "bacon" will crisp up as it cools.
  • For the doughnuts: Melt the butter in a medium saucepan over medium heat. Add the almond milk and coconut oil. Remove from the heat and set aside.
  • Pour the peanut or canola oil halfway up the sides of a cast-iron skillet and heat to 350 degrees F.
  • Whisk together the flour, cane sugar, baking powder and salt in a medium bowl. Make a well in the center and pour the hot milk mixture in the well. Mix until a thick dough forms. Roll portions of dough into 12 balls and use your thumb to make holes in the centers.
  • Fry the doughnuts, in batches, until golden brown, 3 to 5 minutes on each side. Let drain on paper towels.
  • Meanwhile, make the maple glaze: Stir together the confectioners' sugar, maple syrup, maple extract and salt in a small bowl. Dip the doughnuts in the glaze and sprinkle with the coconut "bacon" before serving.

MAPLE BACON DONUTS - MINI DONUT RECIPE

Maple Bacon Donuts - Mini Donut Recipe image

Who doesn't love mini donuts that you can either pop into your mouth? These Maple Bacon Donuts might be the perfect brunch mini donut recipe.

Categories     Dessert

Time 25m

Number Of Ingredients 14

3 cups flour
1 tsp salt
1/8 tsp cinnamon
2 large eggs
1/4 cup butter, melted
1 tbsp baking powder
1/2 tsp nutmeg
3/4 cup white sugar
2 tsp vanilla
1 3/4 cup milk - I use almond milk
3 cup icing (powdered) sugar
1/4 cup milk
1 tsp maple extract
bacon - use maple bacon for even more pop!

Steps:

  • Start by creaming together the eggs and sugar. Add in the melted butter and mix well. Add baking powder and spices.
  • Mix in the flour and milk alternating between the two to make mixing easier. Start filling mini donut molds in your method of choice - recommend piping bag method.
  • While your maple bacon mini donuts are baking you need to start making some icing. And you need to fry up some bacon! I used bacon bits because then the work of chopping up the bacon is already done for me.
  • Let your mini donuts and bacon bits cool down before you start dipping them into the frosting so that it doesn't just runoff.
  • Give it a minute to set and then add some chopped-up bacon onto your mini donuts.

  • Whisk the warm milk, yeast, and sugar together in the bowl of your stand mixer fitted with a dough hook or paddle attachment. Cover and allow to sit for 5 minutes. The mixture should be a little frothy on top after 5 minutes. If not, start over with new yeast.
  • Add the eggs, butter, vanilla, nutmeg, salt, and 2 cups (245g) flour. Beat on low speed for 1 minute. Scrape down the sides of the bowl with a rubber spatula as needed. Add remaining flour and beat on medium speed until the dough comes together and pulls away from the sides of the bowl, about 2 minutes. If needed, add more flour, 1 Tablespoon at a time, until the dough pulls away from the sides of the bowl. Don’t add too much flour, though. You want a slightly sticky dough. *If you do not own a mixer, you can mix this dough with a large wooden spoon or rubber spatula. It will take a bit of arm muscle!*
  • Keep the dough in the mixer and beat for an additional 2 minutes or knead by hand on a lightly floured surface for 2 minutes.
  • Lightly grease a large bowl with oil or nonstick spray. Place the dough in the bowl, turning it to coat all sides in the oil. Cover the bowl with aluminum foil, plastic wrap, or a clean kitchen towel. Allow the dough to rise in a relatively warm environment for 1.5-2 hours or until double in size. (For a tiny reduction in rise time, see my answer to Where Should Dough Rise? in my Baking with Yeast Guide.)
