Number Of Ingredients 13

1/2 cup butter, softened
1/2 cup shortening
3/4 cup packed brown sugar
1/2 cup sugar
1 egg
1/2 teaspoon almond extract
2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger
6 ounces white baking chocolate, coarsely chopped
1-1/2 cups chopped pecans

Steps:

  • In a large bowl, cream the butter, shortening and sugars until light and fluffy. Beat in egg and extract. Combine dry ingredients; gradually add to creamed mixture and mix well. Stir in white chocolate and pecans. , Drop by rounded teaspoonfuls 2 in. apart onto greased baking sheets. Bake at 350° for 8-10 minutes or until lightly browned. Remove to wire racks to cool.

1 cup unsalted butter, softened
1 egg
2 teaspoons vanilla extract
¾ cup confectioners' sugar
2 ¼ cups all-purpose flour
salt
1 (12 ounce) package white chocolate chips
¾ cup multicolored candy sprinkles (jimmies), as desired

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease or line two cookie sheets with parchment paper.
  • Cream the butter in a mixing bowl until light colored and fluffy. Beat in the egg and vanilla until smooth. Add food coloring, if desired. Gradually mix in the confectioners' sugar, flour, and salt to make a smooth dough.
  • Place dough into cookie press cylinder fitted with 1 inch sawtooth ribbon disk. Press dough into long strips on prepared cookie sheets. Use a paring knife dipped into flour to score the strips every two inches.
  • Bake in preheated oven until edges are slightly golden, about 6 minutes. Remove from oven, cool slightly, and cut along score lines while they are still warm. Transfer to wire racks to cool completely.
  • Line a baking sheet with parchment paper. Melt white chocolate chips in the top of a double boiler placed over medium heat, or in the microwave. Add food coloring, if desired. Spread white chocolate icing on the bottom of one cookie and place the bottom of a second cookie into the icing to form a sandwich. Place cookie sandwich onto prepared baking sheet. Repeat to assemble remaining cookies, and refrigerate on the baking sheet 10 minutes to set icing. Remove and dip ends of cookies into white chocolate, then into candy sprinkles. Place cookies on wax paper until white chocolate is set.

Buttery cookies that have been Christmas favorites as far back as the 1500s. While there are many similar recipes this is the one I turn to each holiday time since finding Canada's own Anna Olson's recipe in an issue of Harrowsmith. My handwritten copy is well worn from years of use. Anna's recipe and instructions make spritz cookies very simple to reproduce at home - for those of us not able to pick them up at her Ontario bakeries. I may have to move! Thank you Anna for adding to our Christmas 'traditions in the making'.

Number Of Ingredients 6

1 cup butter (room temperature)
1/2 cup sugar (granulated)
1 large egg (separated, yolk for dough, reserve whites and beat for brushing tops)
1 teaspoon almond extract
2 1/2 cups sifted flour (start with 2 1/4 cups, may need up to 2 1/2 cups of flour)
sugar, for sprinkling (I use the white granulated, you may use tinted sugar)

Steps:

  • Preheat oven to 350.
  • Using an electric beater beat butter and sugar - I beat until nice and fluffy.
  • Add egg yolk and almond extract; beat well.
  • Add 2 1/4 cups of the sifted sifted flour over the butter mixture with wooden spoon or mixer on low.( a wooden spoon works best for me) thoroughly incorporate the flour and form dough into a ball.
  • NOTE: if dough is too sticky add 2 - 4 tablespoons flour - chill dough before moulding ( I cover bowl and chill in the fridge for 1/2 an hour) a chilled baking pan makes forming cookies much easier.
  • If using cookie press, press on sheet, wait a few seconds, then twist the press slightly as you lift it straight up.
  • NOTE: if dough is too stiff to press out beat another egg yolk into the dough - (moulding by hand you may need to use all of the 2 1/2 cups flour - flour hands lightly makes moulding by hand easier).
  • If you don't have a cookie press form into 1/2 inch balls - push a cherry into the centre.
  • Brush cookies with beaten egg white and sprinkle with sugar; bake at 350 for 8 - 12 minutes or until golden around the edges.
  • Cool on a wire rack.Yield will vary as to size of cookies.

1 cup butter, softened
3/4 cup sugar
1 large egg
1 teaspoon vanilla
2 1/4 cups flour
1/2 teaspoon salt
1/4 teaspoon baking powder
11 ounces white candy coating or 11 ounces milk chocolate confectionary coating
nuts (optional) or candy sprinkles (optional)

Steps:

  • Cream butter and sugar in mixing bowl.
  • Beat in egg and vanilla.
  • Combine flour, salt and baking soda, gradually add to creamed mixture.
  • Using a cookie press, press dough onto ungreased cookie sheet.
  • Bake at 375° for 7-9 minutes.
  • Original recipe says not to let brown but I prefer it when the edges are slightly brown, it makes the bottoms nice and crispy.
  • Remove to cooling rack and let cool completely.
  • Melt confectionary coating and dip each cookie half way and sprinkle with finely ground nuts or sprinkles.
  • I usually do half semi sweet chocolate and half white chocolate and sprinkle with holiday colored non periels.
  • Let harden on wax paper.

1 batch plain or tinted Basic Vanilla Cookie Dough (pressed into any shape)
1 cup melted white chocolate (8 ounces)
Small candies (optional)

Steps:

  • Knead dough briefly to soften. Fill a cookie press with dough, and fit with disk to make shapes. Squeeze cookies directly onto a baking sheet. Bake at 350 degrees until firm, 12 to 14 minutes.
  • Let cool completely before dipping in the white chocolate. Apply small or crushed candies while glaze is wet. Let white-chocolate-glazed cookies set in refrigerator, and keep chilled until ready to serve.

  • In a small bowl, cream butter and sugar until light and fluffy. Beat in the egg, milk and vanilla. Combine flour and salt; gradually add to creamed mixture just until combined. Stir in food coloring if desired. Cover and chill for at least 2 hours. , Fill cookie press and form into desired shapes on ungreased baking sheets. Decorate with sprinkles and colored sugars. , Bake at 400° for 8 minutes or until edges just begin to brown. Cool on wire racks.
