Nachos for dessert!? That's right?fresh fruit over a creamy topping on cinnamon-dusted crispy tortillas. Genius!

4 whole wheat tortillas (6 inch), each cut into 6 wedges
1/2 tsp. ground cinnamon
1 lemon
1 small mango, chopped
1 small banana, chopped
2 kiwis, peeled, chopped
1 cup BREAKSTONE'S or KNUDSEN 2% Milkfat Low Fat Cottage Cheese
1 pkg. (1 oz.) JELL-O Vanilla Flavor Sugar Free Fat Free Instant Pudding
3/4 cup milk
1-1/2 cups thawed COOL WHIP LITE Whipped Topping, divided

Steps:

  • Heat oven to 400ºF.
  • Spray tortillas lightly with cooking spray; sprinkle with cinnamon. Place in single layer on parchment-covered baking sheet. Bake 5 to 7 min. or until crisp. Cool.
  • Grate enough lemon peel to measure 1 tsp. zest; reserve for later use. Squeeze 1 tsp. juice from lemon; toss with mangos, bananas and kiwi in medium bowl.
  • Process cottage cheese, dry pudding mix, milk and reserved lemon zest in food processor until smooth. Spoon into separate medium bowl; gently stir in 1/2 cup COOL WHIP.
  • Spread tortilla chips with pudding mixture just before serving; top with fruit salsa and remaining COOL WHIP.

A sweet, creamy and fruity dessert nacho to serve as an appetizer, after your hot and spicy Mexican meal or to serve as a special treat at breakfast.

2 cups strawberries, hulled and diced
2 large kiwi fruits, peeled and diced
1 (11 ounce) can mandarin oranges, drained
1 (15 ounce) can pineapple, tidbits drained
1/4 cup sugar
1 teaspoon cinnamon
10 (7 -8 inch) flour tortillas
1 (8 ounce) package cream cheese
1/2 cup orange juice
3 tablespoons honey

Steps:

  • Combine chopped and drained fruit in a small bowl.
  • Cover and chill for up to 4 hours.
  • Combine sugar and cinnamon in a shallow dish.
  • Brush 1 tortilla at a time lightly with water on both sides.
  • Cut tortilla into 6 wedges.
  • Dip one side of the tortilla wedges into the sugar and cinnamon mixture.
  • Arrange in a single layer on a foil lined baking sheet, sugared side up.
  • Bake in a 500 degree oven until wedges are crisp and golden (3 to 4 minutes) Cool slightly on racks while preparing the rest of the wedges.
  • While wedges are baking, combine cream cheese, orange juice and honey in a 2 qt sauce pan.
  • Stir over low heat until sauce is smooth.
  • To serve nachos, mound chips on individual serving plates.
  • Pour some of the sauce over chips.
  • Top with fruit salsa.

Enjoy these chilled creamy fruit squares without worrying about your waistline! Removing fat--but not flavor--is easily accomplished with reduced-fat cream cheese and frozen whipped topping.

1 1/2 cups Gold Medal™ all-purpose flour
1 cup margarine, softened
1/2 cup powdered sugar
1/2 cup almonds, finely chopped
1 package (8 oz) reduced-fat cream cheese (Neufchâtel), softened
2/3 cup granulated sugar
2 teaspoons vanilla
1 can (20 oz) crushed pineapple, drained, 1 cup juice reserved
3 cups Cool Whip lite frozen whipped topping, thawed
2 cups miniature marshmallows
1 tablespoon cornstarch
1 cup kiwifruit slices or strawberries, quartered

Steps:

  • Heat oven to 400°F. In large bowl, beat flour, margarine and powdered sugar with electric mixer on low speed 1 minute, scraping bowl constantly. Beat on high speed about 2 minutes or until creamy. Stir in almonds. Spread in ungreased 13x9-inch pan. Bake 12 to 15 minutes or until edges are golden brown; cool.
  • In large bowl, mix cream cheese, granulated sugar and the vanilla until smooth. Reserve 1/2 cup pineapple. Stir remaining pineapple into cream cheese mixture. Fold whipped topping and marshmallows into cream cheese mixture. Spread over pastry crust. Cover and refrigerate at least 8 hours but no longer than 48 hours.
  • In 2-quart saucepan, gradually stir reserved 1 cup pineapple juice into cornstarch. Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute; cool. Fold in reserved pineapple and the kiwifruit. Cut dessert into squares; serve with fruit mixture. Store in refrigerator.

  • Mix all of the ingredients up to the cilantro in a medium size bowl. Heat the lime juice and honey in the microwave in a microwave save bowl for 15 seconds and then whisk to combine. After it has cooled, add 2 tablespoons to salsa and gently fold to combine. Add more honey lime juice to taste.
  • Place a layer of Cinnamon Sugar Tortilla Chips on a heat proof plate then top with a handful of shredded cheese, then a few spoonfuls of salsa, top with more tortilla chips and repeat 2 or more times ending with cheese. Place in a toaster or regular oven and broil for 3-5 minutes until cheese melts. Top with more salsa and serve hot.
