SHRIMP AND MAHI-MAHI BURRITO
Steps:
- First we add the shrimp and fish to the grill. Then we add the onion, bell pepper, tomato and corn. We cook everything well and then top it all with the shredded cheese, letting the cheese start to melt.
- At this point, we heat the tortillas up on the grill and transfer them to the prep table. The tortillas are layered with refried beans, Tomato Rice, the ingredients from the grill, lettuce and pico de gallo, and sprinkled with chives.
- We then add all five salsas before rolling up those fine burritos. The rolled burritos are placed back on the grill and cooked for a solid 30 seconds on all four sides, until crispy outside and heated through.
- The rolled burritos are wrapped in foil and ready to serve!
- Heat oil in a paella pan. Add the onions and garlic; cook until softened. Add the rice; fry until toasted. Add 2 cups of tomato puree. Simmer for 30 mins.
- Combine the tomatoes, onions, cilantro and lime juice in bowl. Add salt to taste. Mix well.
- Add the avocados, onions, cilantro, lime juice, a little salt and 2 cups water to a blender; blend well.
- Throw the tomato, onion and garlic on a grill. When cooked, blend with some cilantro, salt and pepper.
- Add the chipotles and milk to a blender; blend well. Add the cream cheese and a touch of salt; blend again.
- Grill the habaneros and the onion half. Add to a blender with water and salt; blend well.
- Add the chipotles and some tamarind sauce to a blender; blend well.
SHRIMP AND MAHI MAHI CITRUS CEVICHE

- For the ceviche: Place the shrimp into a pot of salted water. Place over medium heat and cook until just starting to turn opaque, 2 to 3 minutes. Drain before adding to the rest of the ceviche.
- Meanwhile, dice the mahi mahi into 1/4-inch pieces and set aside in a large nonreactive bowl.
- Peel the celery and place in a food processor with the lime juice and orange juice. Puree until smooth and set aside. Add the celery puree to the fish and sprinkle with the cumin, cayenne and some salt and black pepper. Add the shrimp and stir well to incorporate. Cover and chill the ceviche in the fridge for 15 to 20 minutes. The shrimp will turn pink and the fish will turn white when cooked. Toss with the cilantro just before serving.
- For the tortilla strips: In a large cast-iron pot over medium-high heat (or in countertop fryer), bring the oil to 325 degrees F. Add the tortilla strips and fry until golden brown, 3 to 4 minutes. Remove to towel-lined dish and drain. Season with salt.
- To plate: Spoon the ceviche into a serving bowl and garnish with the tortilla strips and lime wedges.

- For the salsa: Peel the mango and cut into 1/4 inch diced pieces.
- Put mango pieces in a small bowl with the remaining salsa ingredients; stir to combine.
- Cover bowl with saran wrap and refrigerate until ready to serve.
- For the marinade: In a small bowl, whisk together the soy sauce, sweet sake, vegetable oil, light brown sugar, fresh ginger, and minced garlic; set aside.
- Place the mahi mahi fillets in a large zip-lock plastic bag.
- Pour marinade into bag; press the air out of the bag and seal tightly.
- Turn/shake the bag to coat fillets with marinade.
- Refrigerate for 20-30 minutes.
- Take fillets out of bag and throw away marinade.
- Brush or spray both sides of fillets with vegetable oil.
- Grill over high heat until fish is opaque throughout, 8 to 10 minutes, turning once halfway through grilling time.
- Serve warm with salsa.

My husband and I are not big fish fans but our 5 yr old daughter loves fish so I wanted to make some. I couldn't find a recipe I liked so I made this one up. Everyone has loved it whenever I have made it, even us non-fish lovers. Tasted great and not fishy and really easy to make as well.

- Use a pan large enough to lay all of the filets inches.
- Cover bottom with a thin layer of olive oil.
- Stir in butter and cook over medium to low heat until butter is melted.
- Stir in onions and shallots. Cook until they are soft.
- Using a garlic press add in the garlic cloves.
- Stir in sour cream.
- Mix together and cook until sour cream is melted inches.
- Spread all ingredients evenly in pan and lay the filets over this.
- Squeeze half of the lemon over filets and sprinkle with salt and pepper. Let cook until that side is done, about 5 minutes.
- Turn filets over, squeeze other half of lemon and sprinkle with salt and pepper. Turn off heat and cover pan. Leave in pan until done cooking, about another 5 - 7 minutes.
- You can leave them in pan until you are ready to serve to keep warm. Turning off the heat before they are done cooking helps make sure that they don't get over cooked.

- Heat oil in skillet. Lightly season shrimp with pepper, garlic powder, and salt and then dredge in the flour, shaking off any excess.
- Lightly fry until shrimp turn pink and curl, about 2 minutes per side. Remove from skillet and drain. Saute onions in the same pan until they begin to soften. Add a couple tablespoons of flour and whisk well to make a roux. Season with a little more salt, pepper, and garlic powder. Whisk in water, 1/4 cup at a time until desired consistency is reached. Add shrimp and simmer in gravy for 10 minutes. Serve over white rice.

- Preheat oven to 450 degrees F. Combine oil, tamari, salt and lemon juice in a small bowl to make a marinade.
- In a large baking dish, combine onions, red bell peppers, green bell peppers and garlic with half of the marinade. Set aside to let marinate at room temperature for about 10 minutes.
- In a large bowl, combine mahi mahi and shrimp with remaining marinade. Cover and refrigerate for about 20 minutes.
- Bake vegetables until just tender, about 20 minutes, then remove from oven. Add mahi mahi and shrimp to baking dish with vegetables and toss gently to combine. Return to oven and cook until shrimp are curled and mahi mahi is opaque, about 10 minutes more.

- For the chipotle-lime poached shrimp: Combine the chipotles, lime juice, wine and salt with 4 cups water in a pot and bring to a boil. Prepare an ice water bath.
- Add the shrimp to the boiling liquid, reduce the heat to medium and poach the shrimp for 4 minutes. Remove the shrimp from the poaching liquid and chill in the ice bath. Slice the shrimp lengthwise along the seam.
- Cool the poaching liquid and store the shrimp in the chilled poaching liquid until ready to use.
- For the ceviche: Remove the shrimp from the poaching liquid. Combine the mahi-mahi, jalapenos, cantaloupe, honeydew, red onions, and shrimp in a large bowl.
- In another bowl, whisk together the lime juice, grapeseed oil, salt, sriracha and pepper. Pour over the fish and shrimp mixture and mix well. Store in the refrigerator 10 minutes before serving.
- For Plating: Spread the cream cheese on the bottom of 6 martini glasses and use it to "glue" the glasses to the centers of 6 serving plates. Divide the ceviche among the glasses. Garnish each with 2 sprigs of watercress and spread 10 tortilla chips around each glass.

- 1. In large skillet, add diced tomatoes and diced onions. Saute with butter for about 8 mins until tender. Add whipping cream and shredded pepper jack cheese and mix until smooth. 2. In another skillet place your shrimp, sprinkle with blackening seasoning, and cook on medium heat with olive oil for about 6 mins. Add the cooked shrimp to the cheese sauce and cook on low heat for about 5 mins. 3. While the sauce continues to cook, in a third skillet, take your Mahi Mahi filets and cover with black seasoning on each side. 4. - Pat fish dry with paper towels. Sprinkle with salt and pepper. Heat 1 teaspoon oil in large nonstick skillet over medium-high heat. Add 3 fish fillets to skillet. Cook fish on one side only until brown, about 3 minutes. Transfer fish to plate. Repeat with remaining 1 teaspoon oil and fish fillets.

- Divide Sautéed Fennel, Capers and Arugula among 6 plates. Place 1 fish fillet atop each. Top each with 3 shrimp. Spoon reduced fish cooking liquid over. Garnish with fennel fronds.

- Slice the mahi-mahi into 3" thick pieces.
- Salt and pepper the mahi mahi filet.
- Flour each piece and place on side.
- Heat butter in pan on medium low. Crush garlic and place in with butter while cooking.
- Add white wine immediately and bring up heat. Place mahi-mahi filet in pan and sauté on both sides.
- If desired, add 1/2 teaspoons capers to pan five minutes prior to completion of each individual filet.
- Cook with capers for another 2 minutes. Serve.
