There's something inherently festive about these tiny pies, packed full of sunny pineapple and capped with airy meringue. And since they're portable, guests can nibble while conversing.

Number Of Ingredients 18

For pastry:
3/4 cup salted macadamia nuts (about 3 ounces)
1 cup all-purpose flour
2 tablespoons sugar
1/4 teaspoon salt
1/2 stick (1/4 cup) cold unsalted butter, cut into 1/2-inch cubes
1 large egg, lightly beaten
For filling:
3 tablespoons unsalted butter
2 1/4 cups diced (1/4 inch) cored peeled fresh pineapple (labeled "extra sweet")
1/4 cup packed light brown sugar
1 tablespoon fresh lemon juice
For topping:
2 large egg whites
1/8 teaspoon cream of tartar
1/4 cup sugar
Special Equipment
12 (2- to 2 1/2-inch) metal pie plates or a mini-muffin pan with 12 (1/8-cup) cups; an offset metal spatula

Steps:

  • Make pastry:
  • Put oven rack in middle position and preheat oven to 375°F. Toast nuts in 1 layer in a shallow baking pan in oven, stirring once or twice, until golden, about 5 minutes. Cool completely in pan on a rack. Coarsely chop 1/4 cup nuts and set aside.
  • Pulse flour, sugar, salt, and remaining 1/2 cup nuts in a food processor until nuts are finely chopped, then add butter and pulse until mixture resembles coarse meal. Add egg and process until dough begins to come together into a ball but is still crumbly. Form dough into a ball with your hands. Press about 1 tablespoon dough evenly over bottom and up side of each pie plate. Chill shells until firm, about 30 minutes.
  • Lightly prick bottoms and sides of chilled pie shells all over with a fork.
  • Bake until edges are golden and bottoms are pale golden, 12 to 15 minutes.
  • Cool completely in pans on racks. Loosen edges of shells carefully with offset spatula, then carefully remove shells from pans and transfer to a shallow baking pan. Sprinkle chopped nuts into bottoms of shells. Leave oven on.
  • Make filling:
  • Simmer butter, pineapple, brown sugar, and lemon juice in a 12-inch heavy skillet over moderate heat, stirring occasionally, until most of liquid is evaporated and pineapple is slightly translucent, about 10 minutes.
  • Cool slightly, then spoon a heaping tablespoon of filling into each shell.
  • Make meringue topping:
  • Beat whites with cream of tartar in a large bowl with an electric mixer at high speed until they just hold soft peaks. Gradually beat in sugar and beat until meringue holds stiff, glossy peaks. Spoon about 2 tablespoons meringue over filling of each pie, covering filling completely and sealing meringue to pastry.
  • Draw meringue up into small peaks and bake until tops are golden in spots, about 5 minutes.
  • Cool pies on racks, about 30 minutes. Serve warm or at room temperature.

MACADAMIA MERINGUE TRIANGLES

Butter for greasing a baking sheet
1 cup whole macadamia nuts, about 1/4 pound
4 tablespoons sugar
3 egg whites

Steps:

  • Butter the surface of a baking sheet measuring about 14 by 16 inches. Place in the freezer and let stand an hour or longer.
  • Put the macadamia nuts and 2 tablespoons of the sugar into the container of a food processor or electric blender. Blend well. Set aside.
  • Put the egg whites into the bowl of an electric mixer. Start beating while gradually adding the remaining 2 tablespoons of sugar. Beat until the whites are stiff and stand in peaks. Add the ground nut mixture and fold it in.
  • Preheat the oven to 350 degrees.
  • Spoon and scrape the meringue onto the baking sheet. Smooth it over with a spatula to make a thin layer. Place in the oven and bake 15 or 16 minutes or until the meringue layer is lightly browned.
  • Remove from the oven. Trim the outside of the meringue neatly and evenly. If the meringue sticks, return the baking sheet to the oven until it is heated. Work quickly. Cut the meringue into strips, each about 3 inches wide. Cut these strips into triangles measuring about 3 inches to a side.
  • Carefully, but as quickly as possible, run a metal spatula under the triangles to loosen and remove them. Let stand until cool.

WHITE CHOCOLATE JAZZ (A BUTTER-CREAM MOUSSE)

7 ounces white chocolate, available in specialty shops (see note)
1/2 cup heavy cream
8 tablespoons butter, at room temperature
2 pints berries such as raspber ries or strawberries
2 tablespoons sugar
Macadamia meringue triangles (see recipe), optional

Steps:

  • Combine the white chocolate and cream in a mixing bowl, preferably metal. Set the bowl in a basin of simmering water. When the chocolate is melted, beat the mixture briskly with a wire whisk. When well blended set aside to cool to almost room temperature. Add the butter and beat until pale in color.
  • Pour or spoon equal portions of the mixture into each of 4 small ramekins or souffle dishes, each with a capacity of about 1/3 cup. Arrange the ramekins in a dish and place in the freezer. Let stand 8 hours or longer.
  • Set aside a dozen or more whole berries to be used as a garnish. Put the remaining berries into the container of a food processor and add the sugar. Blend thoroughly. Put the puree through a fine sieve, preferably of the sort known in French kitchens as a chinois. Press with a rubber spatula to extract as much liquid as possible. There should be about 1 cup of this sauce.
  • Unmold the ramekins. To do this, dip the base of each ramekin briefly in a basin of hot water. Run a knife around the inside of each ramekin to loosen the sides. Shake the ramekin over a plate. You may have to encourage the unmolding with a knife. This mousse is incredibly rich. You may serve 1 mousse as an individual portion, or you may cut each in half crosswise to make 2 round halves. If desired, serve one-half per person. Keep chilled until ready to serve.
  • To serve, spoon an equal portion of sauce on 4 or 8 serving dishes. Smear it over evenly. Arrange a portion of mousse in the center. Surround it with berries.
  • Serve, if desired, with macadamia meringue triangles (see recipe) or macaroons.

Citrus Cookie Dough
1/2 cup chopped dried papaya
1/2 cup macadamia nuts
1/2 cup shredded sweetened coconut

Steps:

  • Once the flour is incorporated according to dough recipe, beat in papaya, macadamia nuts, and coconut. Divide dough into 2 pieces. Shape each into a 10-inch-long triangular log. Wrap in parchment. Refrigerate until very firm, about 2 hours.
  • Slice dough crosswise slightly thicker than 1/8 inch. Reshape if needed. Bake at 350 degrees on parchment-lined baking sheets until firm, 12 to 14 minutes.

MACADAMIA COCONUT CAKE

3/4 stick (6 tablespoons) unsalted butter, softened
1 cup sugar
1 1/4 cups cake flour (not self-rising)
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup milk
1 teaspoon vanilla extract
3 large egg whites
For filling
1/3 cup plus 3 tablespoons sugar
3/4 cup macadamia nuts
3 large egg yolks
3/4 cup milk
2 tablespoons cornstarch
3/4 teaspoon vanilla extract
1/4 cup chilled heavy cream
For frosting
1 cup sugar
1/4 cup water
2 large egg whites
1/4 teaspoon salt
1 cup sweetened shredded coconut for coating cake
macadamia nuts brushed with honey for garnish

Steps:

  • Make cake:
  • Preheat oven to 350°F. Line bottom of a buttered 9-by-2 inch round cake or springform pan with a round of wax paper and butter paper. Dust pan with flour, knocking out excess.
  • In a bowl with an electric mixer cream butter with 2/3 cup sugar until light and fluffy. Onto a sheet of wax paper sift together flour, baking powder, and salt. Stir flour into butter mixture alternately with milk in batches, beginning and ending with flour. Stir in vanilla and blend batter until just combined well.
  • In another bowl with clean beaters beat egg whites until they hold soft peaks. Beat in remaining 1/3 cup sugar gradually and beat meringue until it holds stiff peaks. Stir one fourth meringue into batter to lighten and fold in remaining meringue gently but thoroughly.
  • Spread batter evenly in prepared pan and bake in middle of oven 30 to 35 minutes, or until cake begins to pull away from side of pan and a tester comes out clean. Cool cake in pan on a rack 10 minutes. Invert cake onto rack and cool completely. Cake may be made 1 day ahead and kept at room temperature, tightly wrapped.
  • Make filling:
  • In a dry heavy skillet cook 1/3 cup sugar over moderate heat, undisturbed, until it begins to melt. Cook, stirring with a fork, until melted completely and a light caramel. Add macadamia nuts and cook, stirring, until nuts are coated well and caramel is deep golden. Pour praline onto a sheet of foil and cool completely. Break praline into pieces and in a food processor grind fine. (Do not purée to a paste.)
  • In a small saucepan whisk together remaining 3 tablespoons sugar, egg yolks, milk, and cornstarch. Bring pastry cream to a boil over moderate heat, whisking, and cook over low heat, whisking constantly, 2 minutes. Whisk in vanilla. Transfer pastry cream to a bowl and chill until cold, its surface covered with plastic wrap. (Pastry cream will be very stiff.)
  • In a bowl beat heavy cream until it just holds stiff peaks. Whisk pastry cream to loosen and whisk in praline. Fold in whipped cream and chill while making frosting.
  • Make frosting:
  • In a metal bowl set over a pan of simmering water whisk together frosting ingredients until mixture is warm and sugar is dissolved. With a portable electric mixer on high beat frosting 6 to 7 minutes, or until thick and fluffy. Remove bowl from heat and beat frosting until cooled slightly.
  • Assemble cake:
  • With a long serrated knife cut cake horizontally into 3 layers. Spread filling between layers on a cake plate and spread cake with frosting. Coat cake with coconut. Cake may be made 6 hours ahead and chilled, covered loosely. Garnish cake with macadamia nuts.

1 3 1/2-ounce jar roasted macadamia nuts, rinsed, dried
1 cup fine vanilla wafer cookie crumbs (about 26 cookies)
1 tablespoon sugar
1/4 cup (1/2 stick) butter, melted
1/2 cup plus 2 tablespoons fresh lime juice
1 teaspoon unflavored gelatin
3 egg yolks
1 14-ounce can sweetened condensed milk
1 teaspoon grated lime peel
1 cup chilled whipping cream, whipped to stiff peaks

Steps:

  • Preheat oven to 350°F. Place nuts on cookie sheet and toast until golden brown, stirring several times and watching carefully, about 2 minutes. Remove from oven. Cool completely. Maintain oven temperature. Grind 1/2 cup macadamia nuts in processor. Transfer nuts to medium bowl. Add cookie crumbs, sugar and butter and mix. Press mixture into 9-inch pie pan. Bake until golden brown, about 10 minutes. Cool.
  • Place 2 tablespoons lime juice in small bowl. Sprinkle gelatin over and let stand until softened, about 10 minutes. Meanwhile, whisk egg yolks and condensed milk in heavy medium saucepan to blend. Whisk in remaining 1/2 cup lime juice. Stir over medium heat 6 minutes to cook eggs (do not boil). Add softened gelatin and lime peel and stir until gelatin dissolves. Pour filling into prepared crust and refrigerate until filling is set, about 6 hours or overnight.
  • Spread whipped cream decoratively over pie. Chop remaining macadamia nuts and sprinkle over cream. Cut into wedges and serve.
