2 zucchini, cut into 1/2-inch slices
1 cup shredded Cheddar cheese
2 tablespoons butter

Steps:

  • Prepare the broiler. Lightly grease a medium baking sheet.
  • Over medium-low heat melt butter in a large saucepan. Stir in zucchini and cook slowly, stirring occasionally until zucchini is soft and golden brown.
  • Spread zucchini on the baking sheet and top with cheese.
  • Broil until cheese is melted.

QUICK AND EASY BAKED ZUCCHINI



Quick and Easy Baked Zucchini image

Recipe video above. This is just a really tasty, quick and easy way to cook zucchini in the oven. For all those times you need a quick veggie side dish! A little sprinkle of parmesan adds great flavour, and breadcrumbs adds a touch of terrific texture.Roasting at a high temp makes the parmesan golden and gets some browning on the zucchini before they turn into watery mush.

600g/ 1.2lb zucchinis ((4 large, 5 medium))
2 tbsp olive oil
1/2 tsp each salt and pepper
2 tbsp breadcrumbs
2 tbsp parmesan (, grated (store bought sandy type is best))

Steps:

  • Preheat oven to 240°C / 450°F (220°C fan) with the oven shelf set high in the oven.
  • Trim the ends off the zucchini. Cut medium zucchinis in quarters lengthwise, and large ones into sixths (halve then cut each half into 3 lengthwise to make 6 long "wedges").
  • Pile zucchini on a tray. Drizzle with 1 tablespoon oil, salt and pepper. Toss.
  • Line up in two rows so they're touching each other, with the skin side down.
  • Sprinkle evenly with breadcrumbs, then parmesan, drizzle with 1 tablespoon oil.
  • Bake 12 minutes until the parmesan is golden and zucchini is soft but not soggy.
  • Serve immediately!

Lynda's Favorite Zucchini Hot Dog Relish image

We love to add relish to our hot dogs. But we've never had one with zucchini, so this recipe intrigued us. We loved it! The flavors are tasty and it really gives the hot dog an extra zing. Try it on beans and vegetables, too.

10 c ground zucchini (skin on)
4 Tbsp salt (I use pickling)
dash(es) garlic salt (to your taste!)
4 c ground onion (I like Vidalia's!)
1 large chopped red pepper
5 c sugar
1 tsp dry mustard
1 tsp nutmeg (ground)
1/2 tsp pepper (black or white)
1 large chopped green pepper
2 c white vinegar
1 tsp turmeric
1 tsp corn starch
2 tsp celery seed

Steps:

  • 1. Grind 10 cups of zucchini and place in large pot (with a lid). Add the salt and garlic salt. Cover with cold water and soak overnight. (I add lots of ice cubes and place pot in a cool place. If not, put it in the fridge!)
  • 2. The following morning, drain and rinse well in a large colander. Return to pot and add the remaining ingredients. Bring to a boil and then simmer for 30 minutes, stirring occasionally. Seal in jars while the relish is very hot.
  • 3. Place jars in canning pot and cover with water. Boil the submerged jars for at least 15-20 minutes to make sure seals are airtight. Remove jars from canning pot with tongs and place on a towel in your sink until they cool (this prevents jars from cracking).
  • 4. After opening a jar of relish, store opened jars in the fridge!

2 pounds zucchini (about 3 medium)
½ cup white onion (thinly sliced)
¼ cup olive oil
1 juice of 1 lemon
⅓ cup feta cheese (finely crumbled)
2 tablespoons parsley (chopped)
1 tablespoons dill (chopped)
salt and pepper (to taste)

Steps:

  • Spiralize zucchini using the larger blade on a spiralizer. (see note if you do not have a spiralizer).
  • Chop zucchini noodles a couple of times so they are manageable to eat and toss (about 3").
  • Slice onion as thinly as possible and add to the zucchini.
  • Add remaining ingredients and gently toss.
  • Allow to sit for 15 minutes before serving.

1/3 cup extra virgin olive oil
1 pound ground beef 15% fat (85/15)
1 cup onion diced
1 ½ tablespoons garlic minced
Pinch red pepper flakes
1 small green bell pepper diced, about one cup
2 stalks celery minced fine, about one cup
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
2 pounds zucchini cut into bite sized pieces, see tip in notes below
1 pound potatoes such as all purpose or new red, see tip in notes below
1 14.5-ounce can diced tomatoes in juice
1 ½ cups water
2 tablespoons tomato paste
1 cup Parmesan grated plus more for serving
Additional salt and pepper to taste

Steps:

  • In a large Dutch oven or heavy bottomed pot, heat olive oil over medium high heat and add the ground beef, onion, garlic, pepper flakes, green pepper, celery, salt and pepper and sauté until meat has browned and the vegetables almost tender.
  • Add zucchini, potatoes, tomatoes and water. Bring to a gentle bubble, cover and reduce heat to low to medium low and cook for ten minutes.
  • Remove cover and add in tomato paste and cook for a few more minutes or just until the zucchini is cooked. Do not overcook the zucchini.
  • Remove from heat and add the cup of Parmesan and taste for additional salt and pepper.
  • Serve with additional Parmesan and crusty bread.

This is one of my favorite recipes, and is also a favorite of my non-vegan family! It takes some time to prepare but is well worth the effort. The mixture can be made ahead of time and left in the fridge to cool - this sometimes makes them easier to shape, especially if the vegetables were very juicy. Found in Lynda Stoner's 'Vegan Now'.

4 large potatoes
30 g vegan margarine
2 garlic cloves
1 small onion, chopped
1 small carrot, grated
2 small zucchini, grated (Courgette)
1 teaspoon curry powder
1 teaspoon egg substitute, premixed with 2 tablespoons water
2 tablespoons breadcrumbs
2 tablespoons vegan parmesan cheese
1/4 cup extra breadcrumbs
1 tablespoon parsley, chopped
1/4 cup oil

Steps:

  • Boil potatoes until soft, and then mash.
  • Melt vegan margarine in frying pan, add garlic, onion and curry powder. Cook until lightly browned. Add carrot and zucchini and continue to cook until soft.
  • Remove from the heat, add potatoes, and leave for a short time to cool. Add egg replacer mix, 2 tablespoons of crumbs and vegan parmesan and mix well.
  • When mixture is cool enough, shape mixture into small logs. Combine extra crumbs and parsley, then roll croquettes in the mixture until coated.
  • Heat enough oil in frying pan to cover it, the croquettes will also soak a lot of it up, so you will need to add some more as you go. Fry Croquettes on both sides until golden brown, and drain on absorbent paper.

Steps:

  • Slice the Zucchini.
  • In a large skillet, drizzle olive oil.
  • Add Slices of zucchini and minced garlic.
  • Heat over medium-high heat.
  • Season liberally with salt and pepper.
  • Let cook for about 3-5 minutes stirring frequently until starting to brown.
  • Remove them right before they are how you like them. Zucchini will continue to cook as it sits.
  • Serve.
