½ cup whole cloves
1 (20 ounce) can pineapple rings in heavy syrup
½ cup packed brown sugar
1 (12 fluid ounce) can or bottle lemon-lime flavored carbonated beverage
1 (4 ounce) jar chopped maraschino cherries

Steps:

  • Preheat the oven to 325 degrees F (160 degrees C).
  • Place ham in a roasting pan. Score the rind of the ham with a diamond pattern. Press a clove into the center of each diamond. Drain the juice from the pineapple rings into a medium bowl, and stir in the brown sugar and lemon-lime soda. Coat the ham with this mixture. Arrange the pineapple rings over the outside of the ham. Place a maraschino cherry in the center of each pineapple ring, and secure with a toothpick.
  • Bake uncovered for 4 to 5 hours, basting frequently with the juices, until the internal temperature of the ham is 160 degrees F (72 degrees C). Be sure the meat thermometer is not touching the bone. Remove toothpicks before serving.

3 ¾ lb gammon joint
2 onions, quartered
3 qt pineapple juice
2 teaspoons dijon mustard
½ cup pineapple juice
½ cup maple syrup
25 cloves

Steps:

  • Place the gammon joint in a large pot and add the onions and pineapple juice. Bring to a boil over high heat.
  • Once boiling, reduce the heat to medium, cover, and simmer for 70 minutes. (Gammon joints need to cook for 40 minutes per kilo (2 ¼ lbs), so if you are using a smaller or large gammon joint, adjust the cooking time accordingly.)
  • Once cooked, carefully remove the gammon joint from the pan and place on a baking sheet to cool slightly.
  • Preheat the oven to 375°F (190°C).
  • Make the glaze: in a small pan over a medium heat, combine the Dijon mustard, pineapple juice, and maple syrup and bring to a boil. Cook for 10 minutes, or until slightly reduced and glossy.
  • Carefully remove the skin from the gammon joint, using a small paring knife to help ease the fat away from the skin. Be sure to leave a small layer of fat on top of the gammon.
  • Score the fat in a diamond pattern and push a clove into each cross section.
  • Liberally brush the gammon joint with the glaze, making sure to reserve at least half of the glaze.
  • Roast the gammon joint for 40 minutes, glazing again halfway through.
  • Carve and serve.

One 9- to 10-pound bone-in fully-cooked smoked ham (butt or shank half)
1 tablespoon whole cloves, optional
Two 20-ounce cans sliced pineapple
20 maraschino cherries
2 cups honey
2 cups light brown sugar

Steps:

  • Let the ham sit at room temperature for about 30 minutes.
  • Preheat the oven to 325 degrees F.
  • Trim off any skin from the ham. Use a sharp paring knife to score through the fat in a diagonal crosshatch pattern without cutting through to the meat. Push the cloves into the ham, if using, placing them at the intersections of the cuts. Put the ham, flat-side down, on a rack in a roasting pan.
  • Drain the pineapples, reserving the juice. Arrange the sliced pineapple all over the ham, securing with toothpicks. Add a maraschino cherry to the center of each pineapple slice and secure with a toothpick.
  • Pour 1/4 inch water in the bottom of the pan and tent the ham with foil.
  • Roast until an instant-read thermometer inserted in the thickest part of the ham (avoiding bone) registers 130 degrees F, about 2 hours 30 minutes (or about 15 minutes per pound).

3 cups (from 33.8 oz.) GOYA® Pineapple Juice
½ cup packed dark brown sugar
1 tsp. GOYA® Minced Garlic, or 2 cloves garlic, finely chopped

  • Step 1 Heat oven to 275°F. Bring ham to room temperature 30 minutes before cooking. Using knife, cut rind (thick, leather-like cap) from ham. Trim fat to ½", if necessary. Score ham by making long, shallow cuts along surface of ham in cross-hatch pattern. Step 2 Place ham in medium roasting pan cut side-down. 1 cup pineapple juice, divided
1 cup brown sugar, divided
½ cup butter, melted
1 cup water

  • Place ham in a large baking pan and score the surface with a knife. Mix 1/4 cup pineapple juice, 1/4 cup brown sugar, and butter together in a bowl. 1 cup packed dark brown sugar
1/3 cup Dijon mustard
1/4 cup whole grain mustard
1 spiral-sliced bone-in half ham

  • Drain pineapple, reserving 3/4 cup juice. Whisk juice, brown sugar, and mustards in bowl.
  • Remove ham from packaging and discard plastic disk that covers bone.
  • Line 13 by 9-inch baking dish with two 24-inch-long pieces of foil.

1 (8 -10 lb) bone-in ham, cooked rump half or 1 (4 -6 lb) cooked boneless ham
1 1/4 cups packed dark brown sugar, divided use
3 tablespoons dijon-style mustard
2 tablespoons snipped fresh rosemary or 2 teaspoons dried rosemary, crushed
1/2 cup pineapple juice
1/4 cup dijon-style mustard
1 medium pineapple, peeled, cored, and coarsely chopped (4-1/2 cups) or 3 (20 ounce) cans pineapple tidbits, drained (reserve 1/2 cup juice)

Steps:

  • Preheat oven to 325°F Place ham in a shallow roasting pan. Score ham by making diagonal cuts, 1/4-inch deep, in a diamond pattern. Insert an oven-going meat thermometer into center of ham; the thermometer should not touch the bone, if present. Roast for 1-3/4 hours if using bone-in ham or 1 hour if using boneless ham.
  • Meanwhile, in a bowl combine 3 tablespoons of the brown sugar, the 3 tablespoons mustard, and rosemary. Brush mixture over ham. Roast for 15 minutes more. Meanwhile, for glaze, in a 2-quart saucepan combine the remaining brown sugar, the pineapple juice, and 1/4 cup mustard. Bring to boiling over medium heat, stirring frequently. Remove 1/2 cup glaze to brush over ham. Set aside.
  • Bake ham 30 minutes more or until thermometer registers 140 degree F, generously brushing with the 1/2 cup glaze several times during baking.
  • Meanwhile, add pineapple to remaining glaze in saucepan. Bring to boiling; reduce heat. Simmer, uncovered, for 20 minutes. Transfer ham to serving platter. Slice ham and serve with pineapple sauce. Makes 16 to 24 servings.
  • Grilled Pineapple Slices: Cut two peeled and cored pineapples into 1/2-inch-thick slices. Brush each slice on both sides with a little cooking oil; sprinkle lightly with some snipped fresh rosemary. Heat an indoor grill or grill pan. Grill pineapple slices just until they start to brown, 1 to 2 minutes per side, turning once.

8-10 pounds bone-in fully-cooked, spiral-cut ham
20 ounce can pineapple tidbits (, or crushed pineapple)
3/4 cup light brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves

Steps:

  • Take ham out of the refrigerator 1-2 hours before baking to allow it to come to room temperature.
  • Meanwhile, make the glaze. In a saucepan combine pineapple tidbits, brown sugar, cinnamon, and cloves.
  • Bring to a boil, reduce heat to medium low and simmer for 20-30 minutes or until mixture has thickened.
  • Preheat oven to 300 degrees F. Remove ham from packaging and throw away the glaze packet and the plastic disk that covers the bone.
  • Place the ham flat/cut side down, in a deep baking dish or roasting pan. I like to line my pan with aluminum foil to make for easier clean-up.
  • Brush just a few spoonfuls of the glaze onto the ham, all over the outside. Reserve the remaining glaze for later.
  • Cover the ham tightly with a tent of aluminum foil. This will help keep the ham from drying out.
  • Bake at 300 degrees F for 1 1/2 to 2 hours, or until internal temperature reaches 110 degrees. Note, the ham is already cooked, so we're just just trying to reheat it.
  • Remove the ham from the oven and remove foil tent (set it aside for later).
  • Increase the oven temperature to 400 degrees. Brush the remaining glaze all over the ham.
  • Return to the oven and continue to bake for another 15 minutes.
  • Remove from oven, tent with foil and allow to rest for 15 minutes before serving.

You can use a 14-pound bone-in ham also, and you can use more pineapple rings and maraschino cherries if desired to cover ham. A bone-in ham has just about the same amount of meat on it as a 7-8 boneless pound ham, as the bone accounts for about 4 pounds of the weight. This recipe can be made with both a bone-in or boneless ham. Stay close to the oven as this ham must be basted every 20 minutes. The cooking time is estimated depending on the size of ham, and also depends if you are cooking a bone-in or boneless ham, always check the weight on the package wrap and adjust the cooking time to that weight. The pineapple basting sauce can be made a day ahead and reheated before adding it into the roasting pan.

  • In a saucepan combine the pineapple juice, ginger slices and garlic; bring to a boil, reduce heat to medium-low and simmer for 30 minutes (reducing the liquid to about 2 cups).
  • Strain and reserve all liquid through a fine strainer.
  • Set oven to 350 degrees F.
  • Trim the thick rind with fat, but leave about 1/4-inch fat from the surface of the ham.
  • With a very sharp knife, "score" a diamond pattern all over the ham, then insert the whole cloves at the crossed points of the diamonds.
  • Set the ham in a shallow baking pan.
  • Brush the mustard all over the top.
  • Pat the sugar into the top of the mustard, pushing it in with a spoon or your hands.
  • Starting at the butt end, and working towards the bone, decoratively arrange the pineapple rings securing with whole cherrries and toothpicks in the centers.
  • Pour the reserved pineapple juice into the bottom of the pan and place in the oven.
  • Bake for about 1-1/2 hours, basting about every 15-20 minutes (the cooking time might take longer depending on the weight of the ham).
  • When ham is cooked, place it on a fancy serving platter and let it rest for 10-15 minutes.
  • Carve into thin slices, preferably with an electric knife, beginning with the butt end.
  • Serve warm with the sauce from the pan in a serving cup.

1 fresh pineapple
2 (6 ounce) cans pineapple juice
1 cup brown sugar

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Place the ham, cut side down, into a roasting pan.
  • Cut the skin off the pineapple with a sharp knife and cut out any brown spots of skin left behind. Slice the pineapple into 1/2-inch slices and cut the cores out of the slices. Pin the slices onto the ham with toothpicks.
  • Bake ham in the preheated oven until a meat thermometer inserted into the thickest part of the ham reads 140 degrees F (60 degrees C), 1 1/2 to 2 hours.
  • While the ham is baking, mix the pineapple juice and brown sugar in a microwave-safe ceramic or glass bowl and microwave on medium power until the glaze is boiling and slightly thickened. Work carefully because the glaze will be sticky and very hot.

1 smoked bone-in Virginia ham (14 to 16 pounds)
4 cups pineapple juice
1-inch piece fresh ginger, peeled and sliced
4 cloves of garlic, peeled and smashed
12 to 16 whole cloves
1/4 cup Dijon mustard
1 cup light-brown sugar
About 10 pineapple rings
About 10 maraschino cherries

Steps:

  • 1. Combine the pineapple juice, ginger, and garlic in a saucepan. Bring to a boil, reduce the heat to medium-low and simmer 25 minutes, reducing the liquid by half (to 2 cups). Strain and reserve.
  • 2. Preheat the oven to 350°F.
  • 3. Carefully trim the thick rind and all but 1/4 inch of fat from the surface of the ham. With a sharp knife, score a diamond pattern and insert the cloves at the crossed points of the diamonds.
  • 4. Set the ham in a shallow baking pan. Brush the mustard all over the top. Pat the sugar atop the mustard.
  • 5. Starting at the butt end, decoratively arrange the pineapple rings, securing with cherries and toothpicks in the centers, working toward the bone. Pour the reserved pineapple juice into the bottom of the pan and place in the oven.
  • 6. Bake for 1 1/2 hours, basting every 15 minutes.
  • 7. When the ham is done, place it on a serving platter and let rest for 15 minutes. Carve into thin slices, beginning at the butt end. Serve warm with pan sauce alongside. Remove the pineapple slices and cherries as you carve and serve them with the ham.

Posted at the request of my sister. Glazing a ham while cooking is wonderful but the first person to the platter usually makes off the the glazed ends and the rest of the people get a "glazed rim". The solution in our house is to make lots of glaze and pour it over each slice!

1 cup brown sugar
1 (10 ounce) can crushed pineapple
2 tablespoons lemon juice
1 tablespoon dry mustard or 1 tablespoon prepared mustard
1 tablespoon cornstarch
1/4 teaspoon salt

Steps:

  • Place all ingredients in a small saucepan including the juice/syrup from the pineapple.
  • Turn heat on to medium and stir constantly to prevent burning.
  • Continue to heat until mixture thickens and comes to a boil.
  • Allow mixture to boil for approximately 1 minute.
  • If mixture refuses to thicken, add more cornstarch- a little at a time.
  • (Be sure to mix your cornstarch with a little cold water in a cup to make a smooth liquidified mixture before adding it to the hot sauce.) Pour finished sauce into a serving bowl, complete with a ladle, and let your guests pour it over baked sliced ham.
