Steps:
- Place the gammon joint in a large pot and add the onions and pineapple juice. Bring to a boil over high heat.
- Once boiling, reduce the heat to medium, cover, and simmer for 70 minutes. (Gammon joints need to cook for 40 minutes per kilo (2 ¼ lbs), so if you are using a smaller or large gammon joint, adjust the cooking time accordingly.)
- Once cooked, carefully remove the gammon joint from the pan and place on a baking sheet to cool slightly.
- Preheat the oven to 375°F (190°C).
- Make the glaze: in a small pan over a medium heat, combine the Dijon mustard, pineapple juice, and maple syrup and bring to a boil. Cook for 10 minutes, or until slightly reduced and glossy.
- Carefully remove the skin from the gammon joint, using a small paring knife to help ease the fat away from the skin. Be sure to leave a small layer of fat on top of the gammon.
- Score the fat in a diamond pattern and push a clove into each cross section.
- Liberally brush the gammon joint with the glaze, making sure to reserve at least half of the glaze.
- Roast the gammon joint for 40 minutes, glazing again halfway through.
- Carve and serve.
- Enjoy!

Steps:
- Let the ham sit at room temperature for about 30 minutes.
- Preheat the oven to 325 degrees F.
- Trim off any skin from the ham. Use a sharp paring knife to score through the fat in a diagonal crosshatch pattern without cutting through to the meat. Push the cloves into the ham, if using, placing them at the intersections of the cuts. Put the ham, flat-side down, on a rack in a roasting pan.
- Drain the pineapples, reserving the juice. Arrange the sliced pineapple all over the ham, securing with toothpicks. Add a maraschino cherry to the center of each pineapple slice and secure with a toothpick.
- Pour 1/4 inch water in the bottom of the pan and tent the ham with foil.
- Roast until an instant-read thermometer inserted in the thickest part of the ham (avoiding bone) registers 130 degrees F, about 2 hours 30 minutes (or about 15 minutes per pound).
- Meanwhile, combine the honey, brown sugar and reserved pineapple juice in a large saucepan set over medium heat. Simmer, stirring occasionally, until thickened, syrupy and reduced to about 3 cups, 25 to 30 minutes. Set aside.
- Increase the oven temperature to 425 degrees F.
- Uncover the pan and carefully brush a third of the glaze all over the ham. If the water in the roasting pan has evaporated, add more. Bake the ham for 15 minutes more. Brush with another third of the glaze and bake for 15 minutes more. Brush the remaining glaze over the ham and cook until the glaze is shiny and the skin is dark golden brown and crispy, about 15 minutes more. Let rest for 15 minutes.

Steps:
- Step 1 Heat oven to 275°F. Bring ham to room temperature 30 minutes before cooking. Using knife, cut rind (thick, leather-like cap) from ham. Trim fat to ½", if necessary. Score ham by making long, shallow cuts along surface of ham in cross-hatch pattern. Step 2 Place ham in medium roasting pan cut side-down. Pour 1 can pineapple juice over ham; cover pan tightly with foil. Place ham on middle rack of oven. Cook until ham is tender and warm through center (internal temperature registers 135°F on quick-read thermometer when inserted into thickest part of ham without touching bone), 2 - 2½ hours. Step 3 Meanwhile, add remaining 2 cans pineapple juice, brown sugar, garlic and cloves to small saucepan over medium-high heat. Bring juice to boil, stirring to dissolve sugar. Reduce heat to medium-low. Simmer, uncovered, stirring occasionally, until juice becomes thick and reduces to ¾ cup, 15-20 minutes; set aside. Step 4 Remove ham from oven; remove and discard foil. Set oven to broil. Using pastry brush, spread ham all over with glaze. Return ham to middle rack of oven. Broil ham, carefully spreading with glaze every 10 minutes, until ham is deeply caramelized and cooked through (internal temperature registers 145°F on quick-read thermometer when inserted into thickest part of ham without touching bone), 20-30 minutes. Remove ham from pan; tent with foil to keep warm. Let rest 15-30 minutes before carving. Serve warm or at room temperature.

PINEAPPLE MUSTARD GLAZED HAM
A baked spiral-sliced ham garnished with pineapple slices has a very retro feel. It's a recipe many of us are happy to revisit, especially around the holidays. Keeping the ham tightly wrapped in foil while it's in the oven ensures the meat will be succulent and juicy. Use canned pineapple slices packed in juice-fresh pineapple will not be as juicy and may dry out too quickly during cooking.

Steps:
- Preheat oven to 325°F Place ham in a shallow roasting pan. Score ham by making diagonal cuts, 1/4-inch deep, in a diamond pattern. Insert an oven-going meat thermometer into center of ham; the thermometer should not touch the bone, if present. Roast for 1-3/4 hours if using bone-in ham or 1 hour if using boneless ham.
- Meanwhile, in a bowl combine 3 tablespoons of the brown sugar, the 3 tablespoons mustard, and rosemary. Brush mixture over ham. Roast for 15 minutes more. Meanwhile, for glaze, in a 2-quart saucepan combine the remaining brown sugar, the pineapple juice, and 1/4 cup mustard. Bring to boiling over medium heat, stirring frequently. Remove 1/2 cup glaze to brush over ham. Set aside.
- Bake ham 30 minutes more or until thermometer registers 140 degree F, generously brushing with the 1/2 cup glaze several times during baking.
- Meanwhile, add pineapple to remaining glaze in saucepan. Bring to boiling; reduce heat. Simmer, uncovered, for 20 minutes. Transfer ham to serving platter. Slice ham and serve with pineapple sauce. Makes 16 to 24 servings.
- Grilled Pineapple Slices: Cut two peeled and cored pineapples into 1/2-inch-thick slices. Brush each slice on both sides with a little cooking oil; sprinkle lightly with some snipped fresh rosemary. Heat an indoor grill or grill pan. Grill pineapple slices just until they start to brown, 1 to 2 minutes per side, turning once.

Steps:
- Take ham out of the refrigerator 1-2 hours before baking to allow it to come to room temperature.
- Meanwhile, make the glaze. In a saucepan combine pineapple tidbits, brown sugar, cinnamon, and cloves.
- Bring to a boil, reduce heat to medium low and simmer for 20-30 minutes or until mixture has thickened.
- Preheat oven to 300 degrees F. Remove ham from packaging and throw away the glaze packet and the plastic disk that covers the bone.
- Place the ham flat/cut side down, in a deep baking dish or roasting pan. I like to line my pan with aluminum foil to make for easier clean-up.
- Brush just a few spoonfuls of the glaze onto the ham, all over the outside. Reserve the remaining glaze for later.
- Cover the ham tightly with a tent of aluminum foil. This will help keep the ham from drying out.
- Bake at 300 degrees F for 1 1/2 to 2 hours, or until internal temperature reaches 110 degrees. Note, the ham is already cooked, so we're just just trying to reheat it.
- Remove the ham from the oven and remove foil tent (set it aside for later).
- Increase the oven temperature to 400 degrees. Brush the remaining glaze all over the ham.
- Return to the oven and continue to bake for another 15 minutes.
- Remove from oven, tent with foil and allow to rest for 15 minutes before serving.

GLAZED HAM WITH PINEAPPLE
You can use a 14-pound bone-in ham also, and you can use more pineapple rings and maraschino cherries if desired to cover ham. A bone-in ham has just about the same amount of meat on it as a 7-8 boneless pound ham, as the bone accounts for about 4 pounds of the weight. This recipe can be made with both a bone-in or boneless ham. Stay close to the oven as this ham must be basted every 20 minutes. The cooking time is estimated depending on the size of ham, and also depends if you are cooking a bone-in or boneless ham, always check the weight on the package wrap and adjust the cooking time to that weight. The pineapple basting sauce can be made a day ahead and reheated before adding it into the roasting pan.

- Carve into thin slices, preferably with an electric knife, beginning with the butt end.

- Preheat oven to 300°. Stack 2–3 sheets of foil ample enough to cover ham on a work surface and arrange pineapple and orange slices on top in a single layer. Set ham on fruit (if using a bone-in ham and it has a fat cap, score very lightly, making cuts about ¾" apart) and wrap up tightly. Transfer to a wire rack set inside a large rimmed baking sheet and bake until an instant-read thermometer inserted into the thickest part of ham registers 115°, 3–3½ hours for boneless, 3½–4 hours for bone-in.
- Meanwhile, bring pineapple juice, vinegar, brown sugar, and hot sauce to a boil in a large saucepan. Reduce heat; simmer, swirling occasionally, until thick enough to coat a spoon. Keep warm.
- Remove ham from oven and increase oven temperature to 425°. Unwrap ham, peeling back the foil so it covers the baking sheet (this will make for easy cleanup). Once oven is at 425°, baste ham with warm glaze and return to oven. Bake, brushing with more glaze every 3 minutes or so, until glaze is deeply browned and thermometer registers 125°, 12–15 minutes. Carefully transfer ham to a cutting board and let rest 30–60 minutes before slicing.
- While ham is resting, roast fruit, spooning juices over from time to time, until deeply browned, 20–25 minutes.

- Pre heat the oven to 325F and then remove any packaging or netting the ham may be wrapped in. If the ham still has a rind, remove this. Score the fat with a sharp paring knife. Try to avoid cutting into the ham itself.
- Place the ham with the cut side down in a roasting pan and add 1/4 cup of water to the pan. Cover the ham with tinfoil or a roasting pan lid. This will help keep moisture in the ham as it comes up to temperature. Cook the ham for 1 hour, or until the ham reaches an internal temperature of 120F. Use a meat thermometer to check this.
- As the ham cooks prepare the glaze by combining all the glaze ingredients in a pot and gently bringing them to a simmer. Cook the glaze until it starts to thicken slightly.
- After the first hour is up, remove the lid from the ham and remove any liquid that may be in the pan. Set the juice aside, and turn the oven up to 350F. Take 1/3 of the glaze you made, and pour it over the ham, making sure to fully coat the ham. Roast the ham for 15 minutes
