Apple-Sauerkraut Stuffing image

Whether you call it stuffing or dressing, this healthy apple-and-sauerkraut stuffing recipe made with seeded rye bread is a flavorful twist on the classic holiday side. If you're an extra-moist-stuffing type, bake it covered for the full 50 minutes; if you like some crispy bits on top, follow the recipe as written: bake covered for about 30 minutes, then uncovered for an additional 20 minutes.

10 cups cubed seeded rye bread (1/2- to 1-inch pieces)
2 tablespoons extra-virgin olive oil
2 cups chopped onions
2 cups chopped apples
2 cloves garlic, minced
¼ cup chopped fresh parsley or 4 teaspoons dried
4 tablespoons unsalted butter
2-3 cups low-sodium broth
½ cup shredded Gruyère cheese
½ cup sauerkraut, rinsed, squeezed dry and chopped
½ teaspoon ground pepper

Steps:

  • Preheat oven to 275 degrees F. Spread bread on a large rimmed baking sheet and bake until dry to the touch, about 30 minutes. Let cool. Transfer to a large bowl.
  • Increase oven temperature to 350 degrees . Coat a 9-by-13-inch baking dish with cooking spray.
  • Heat oil in a large skillet over medium-high heat. Add onions and apples; cook, stirring often, until just starting to brown, 3 to 5 minutes. Reduce heat to medium and cook, stirring often, until tender, 3 to 5 minutes more. Add garlic and cook, stirring, for 30 seconds. Add parsley and cook, stirring, for 30 seconds. Scrape the mixture on top of the bread. Melt butter in the pan, scraping up any browned bits, then scrape onto the bread. Add broth to taste, cheese, sauerkraut and pepper to the bread mixture and stir to combine. Transfer to the prepared baking dish. Spray one side of a piece of foil with cooking spray and cover the stuffing, sprayed-side down.
  • Bake for 30 minutes. Uncover and continue baking until golden brown, about 20 minutes more.

1 tablespoon extra-virgin olive oil
1 1/2 pounds hot or mild (or a combination) Italian turkey sausages (4 to 6 sausages)
1 1/2 tablespoons unsalted butter
1/4 teaspoon caraway seeds
1 large bulb fennel, trimmed, quartered and thinly sliced, plus 1 tablespoon fronds for topping
1 Gala apple, cored and thinly sliced
1 pound sauerkraut, well drained
Kosher salt and freshly ground pepper

Steps:

  • Heat the olive oil in a large nonstick skillet over medium-high heat. Add the sausages and cook, turning, until browned all over, 6 to 8 minutes. Add 1/4 cup water, cover and cook until the sausages are just cooked through, about 2 minutes. Transfer to a plate to cool, then slice into 2-inch pieces.
  • Reduce the heat under the skillet to medium; add the butter and caraway seeds and cook, stirring, until the butter is melted. Add the fennel and apple and cook, stirring, until slightly softened, about 3 minutes. Add the sauerkraut and sausage slices and cook, stirring, until the sauerkraut is warmed through, about 3 more minutes. Season with salt and pepper. Top with fennel fronds.

Number Of Ingredients 6

2 cups sauerkraut, well-drained, chopped
1 medium onion, chopped
2 medium tart apples, peeled, cored and chopped
1 1/2 tablespoons brown sugar
pepper
1/4 cup summer savory

Steps:

  • In a large bowl, combine sauerkraut, onion, apples, brown sugar, pepper and savory. Loosely pack into turkey cavity - it shouldn't be more than 3/4 full since the dressing will expand. Fasten with skewers or sew to close cavity.
  • Place turkey in roasting pan, tuck wings under bird, tie legs together and rub oil over skin. Loosely "tent" with foil, and roast at 325F for 3 1/2 - 3 3/4 hours. Remove foil and baste frequently during the last hour.
  • Bird is done when drumstick moves easiy in the joint. Let stand, covered for 15 minutes before carving. This recipe makes enough to stuff a 10-12 lb. turkey.

3 potatoes, peeled and cubed
½ cup butter
2 celery stalks, finely chopped
1 large onion, minced
2 tablespoons dried summer savory
2 eggs, beaten
6 slices bread, cut into cubes
salt and ground black pepper to taste

Steps:

  • Place potatoes into a large pot and cover with salted water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to steam dry for a minute or two, then mash.
  • Melt the butter in a skillet over medium heat; cook the celery and onion in the butter until the onion has turned translucent, 5 to 7 minutes. Fold into the mashed potatoes along with the savory, and allow to cool until just warm.
  • Place the cooled mashed potatoes into a large bowl, and stir in the beaten egg. Gently fold in cubed bread, then season to taste with salt and pepper. Refrigerate until ready to use.
  • Use as a stuffing for turkey, or bake in buttered loaf pans at 350 degrees F (175 degrees C) for 30 to 40 minutes.

1 cup sauerkraut, drained
10 ounces sliced deli turkey meat
2 tablespoons butter
4 slices marble rye bread
4 slices Swiss cheese
4 tablespoons thousand island salad dressing, or to taste

Steps:

  • Warm the sauerkraut and turkey, separately, in a microwave-safe bowls for 30-seconds; set aside. Spread butter generously on one side of each slice of rye bread, then spread the thousand island dressing on the other side. Divide the sauerkraut, turkey, and Swiss cheese on two slice of bread with the butter-side down. Stack the remaining two slices of bread with the butter-side up on top.
  • Heat a large skillet over medium-low heat. Arrange the sandwiches on the skillet and grill until lightly browned and the cheese is melted, about 3 minutes on each side.

2-1/4 cups chicken broth
1/2 cup butter, cubed
1/2 teaspoon salt
1 teaspoon dried thyme
1/4 teaspoon each dried marjoram, rubbed sage and dried rosemary, crushed
1/4 cup minced fresh parsley
2 tablespoons minced chives
DRESSING:
1 loaf (1 pound) sliced bread
1 pound bulk pork sausage
1/2 cup butter, cubed
4 cups thinly sliced celery
3 cups thinly sliced carrots
1/2 pound fresh mushrooms, chopped
1/2 pound cubed fully cooked ham
2 cups green onions
2 cups chopped pecans
1 large tart apple, chopped
1 cup chopped dried apricots
1 tablespoon rubbed sage
2 teaspoons dried marjoram
1 teaspoon dried rosemary, crushed
1 teaspoon salt
1/8 teaspoon ground nutmeg
1 cup egg substitute
1 turkey (16 to 18 pounds)
1 cup chicken broth

Steps:

  • In a small saucepan, combine the broth, butter and salt; bring to a boil. Add herbs; set aside. , Toast bread; cut into 1/2-in. cubes. Place in a bowl. In a skillet, cook sausage over medium heat until no longer pink; remove with slotted spoon and add to bread. Add butter to drippings; saute the celery, carrots, mushrooms, ham and onions for 15 minutes. , Add to bread mixture; stir in the nuts, fruit and seasonings. Add egg substitute and 3/4 cup basting sauce; mix lightly. , Stuff turkey with about 8 cups dressing. Skewer openings; tie drumsticks together. Place on rack in roasting pan. Baste with some of remaining basting sauce. , Bake, uncovered, at 325° for 5 to 5-1/2 hours or until a thermometer reads 180° for the turkey and 165° for the stuffing, basting every 30 minutes. When turkey begins to brown, cover lightly with foil. , Add broth to remaining dressing; toss to coat. Place in a greased 2-1/2-qt. baking dish; refrigerate. Remove from the refrigerator 30 minutes before baking. Cover and bake at 325° for 1 hour; uncover and bake 10 minutes.

3/4 cup shredded uncooked potatoes
3/4 cup chopped onion
1/4 cup butter
1 can (14 ounces) sauerkraut, rinsed and drained

1/4 teaspoon salt

1 broiler/fryer chicken (3-1/2 to 4 pounds)

  • In a large skillet, saute the potatoes and onion in butter until onion is tender (potatoes will still be firm). Remove from the heat. Stir in the sauerkraut, parsley and seasonings. , Stuff chicken cavity; place on a rack in roasting pan. Roast, uncovered, at 375° for 2 hours or until chicken is tender and juices run clear. Remove to a serving platter and keep warm. , Measure 3/4 cup of the pan drippings; pour into a saucepan. Combine water and flour; add to drippings. Cook and stir until gravy boils; boil 1 minute. Serve with the chicken.

Now that I'm engaged to a Newfie, I have started learning the "old family recipes", as well as some new words... Anyhow, this is the dressing that Newfoundlanders enjoy with their turkey - it is really different than the "stuffing" that I grew up with out in BC. This is enough for a 10 lb turkey.

10 slices bread
1 cup chopped onion
1/2 cup chopped celery
1/2 cup chopped apple
1 teaspoon savory (Mt. Scio Farm Savoury is made right in Newfoundland)
1/4 teaspoon ginger
salt and pepper
1/2 cup melted butter

Steps:

  • Tear bread slices up and place them in a food processor. Pulse until crumbs, not chunks. Remove crumbs and place in medium bowl.
  • Add onion, celery, apple, savoury and ginger, and mix well.
  • Add melted butter and mix again. Add salt and pepper to taste.
  • NOTE: This can also be placed in foil and heated through for 10 minutes, if not stuffing turkey or if there is extra dressing.
  • NOTE: A popular Newfie post-turkey meal is "Chips, dressing, and gravy" in which the leftover dressing is placed on top of french fries and then covered in gravy. A sort of Newfie poutine.
