2/3 cup reduced-fat 2-percent cottage cheese
1 tablespoon apple cider vinegar
1/2 teaspoon dried thyme
One 15.5-ounce can cannellini beans, rinsed and drained
Kosher salt and freshly ground black pepper
2 teaspoons good quality olive oil
Pinch smoked or sweet paprika
Chopped chives, for garnish

Steps:

  • Combine the cottage cheese, vinegar, thyme, beans, 1/4 teaspoon salt and 1/4 teaspoon pepper in a food processor. Puree until smooth, scraping down the sides of the bowl as needed. Chill 30 minutes to 1 hour.
  • Transfer to a serving bowl and drizzle with the olive oil, sprinkle with the paprika and garnish with chives.

This is another of the recipes I have collected in my attempt to find healthier recipes. I am saving it for my next party. Usually it is fairly easy to translate British recipes so that they make sense to folks in the United States. However, sometimes you run into a food item that is more difficult to translate. In the case of this recipe the difficulty lies with 'butter beans' which can apparently mean different things in the States vs the UK. So, for this recipe, butter beans mean the variety of bean that is like a white lima bean. This recipe was first published in the September 2006 issue of the British version of Weight Watchers Magazine. The recipe says it can be frozen.

2 green onions, trimmed and chopped (reserve a little to garnish)
1 garlic clove, crushed
1 (8 ounce) can butter beans (white lima beans)
7 ounces light cream cheese
1 small lemon, zest of
2 tablespoons fresh parsley, roughly chopped (reserve a little to garnish)
salt and pepper

Steps:

  • Put the green onions, garlic, beans, cream cheese,lemon zest and parsley into a blender or food processor.
  • Add salt and plenty of black pepper.
  • Blend for 15 to 20 seconds, until smooth.
  • Spoon into a bowl, garnish with the reserved onion and parsley.
  • Serve with fresh vegetable pieces.
  • FREEZING: Put into a freezer proof bag or container and keep in the freezer for up to 1 month. Allow to defrost thoroughly before eating.

1 can canned cannellini, or other white bean, drained & rinsed
2 cloves garlic cloves, peeled
⅓ cup fresh parsley, loosely packed
3 tablespoons lemon juice, about 1 lemon's worth
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon red pepper flakes

Steps:

  • Preheat oven to 450˚F (230˚C).
  • Cut eggplant and bell pepper into medium-sized pieces, being sure to remove the seeds, and spread them out on a baking sheet that has been lined with parchment paper.
  • Lightly coat the vegetables with olive oil, salt, and pepper.
  • Roast the vegetables for 20-25 minutes, until the edges begin to char and the skin blisters.
  • Add roasted vegetables to a food processor along with the beans, garlic, parsley, lemon juice, and seasonings.
  • Pulse until the ingredients are roughly chopped. Then, with the machine running, slowly pour in the remaining 4 tablespoons of olive oil into the food processor and blend until the mixture is smooth.
  • Transfer mixture to a bowl and serve with freshly cut vegetables, crackers, or pita bread.
  • Alternatively, the mixture can be placed into individual serving-sized containers and stored in the refrigerator for up to 4 days.
