1 1/2 cups unsalted butter, softened
2 tablespoons milk
9 ounces semisweet chocolate, melted and cooled to lukewarm
1 teaspoon vanilla extract
2 1/4 cups sifted powdered sugar

Steps:

  • Note: to melt the chocolate, place in a double boiler over simmering water on low heat for 5-10 minutes; stir occasionally until the chocolate is completely smooth and no pieces remain; remove from heat and let cool 5-15 minutes or until lukewarm.
  • To make the buttercream: In a large mixing bowl, beat the butter using an electric mixer on MEDIUM speed for about 3 minutes or until creamy.
  • Add the milk carefully and beat until smooth.
  • Add the melted chocolate and beat well for 2 minutes.
  • Add the vanilla and beat for 3 minutes.
  • Gradually add in the sugar and beat on LOW speed until creamy and of desired consistency.
  • **For icing a 3-layer cake use the following measurements: 2 cups unsalted butter, 3 tablespoons milk, 12 ounces semisweet chocolate, 1 1/2 teaspoons vanilla extract, 3 cups sifted powdered sugar.

This is a intensly chocolate, VERY rich euorpean style buttercream with a simplified method. Much easier than the simple syrup method and well worth the time.

Number Of Ingredients 7

6 large eggs (300 gms)
1 1/2 cups granulated sugar (300 gms)
1/4 teaspoon salt
1 cup unsweetened cocoa powder, dutch processed preferred (100 gms)
3 cups unsalted butter, cut into 2 tablespoon chunks at a cool room temperature of 65 degrees f (680 gms)
1 tablespoon vanilla extract
1 lb dark chocolate, melted and cooled (450 gms)

Steps:

  • Set-up a pan with about an inch of water and warm it to 160 degrees.
  • Chop chocolate and place in a clean, dry, bowl that fits in the pan without touching the water, but is within an inch or so.
  • Stir chocolate (with a clean, dry spoon) occasionally until almost melted.
  • Remove from heat and continue stirring until smooth, the residual heat will finish the job.
  • In a large bowl that will also fit over the pan with water (I use the bowl from my standing mixer), place eggs, cocoa, sugar and salt.
  • Whisk lightly until blended.
  • Turn heat up so water simmers, place the bowl with the egg mixture over the simmering water and whisk gently until the mixture reaches 165 degrees.
  • 160 degrees is the ‘instant’ kill temperature for salmonella and many other nasty bacteria.
  • If you don’t have an instant read thermometer, then the mixture should feel fairly warm, but not too hot.
  • If you start to smell eggs cooking then you’re too hot.
  • (It’s OK, so long as there are no actual egg chunks) Place the bowl on your mixer, or pour it into your mixer bowl, and, with a whisk attachment, beat at high speed until cooled to room temperature.
  • I like to do this in the winter and open up a window next to my mixer.
  • If you don’t have a standing mixer, you can place your bowl in an ice bath and do it with a hand mixer on high speed.
  • Lower speed on mixer to medium-low, add vanilla extract.
  • Start adding butter one chunk at a time mix until each chunk is incorporated.
  • When all butter is added whip on high speed for a minute or so.
  • Turn off mixer, add chocolate and run on low speed until incorporated.
  • Use immediately, keep at a cool room temperature for a day, refrigerate for a week, or freeze for 3 months.
  • Re-whip before using.

11/2 cups good cocoa powder
21/4 teaspoons baking soda
1/2 teaspoon salt
1/2 pound (2 sticks) unsalted butter, at room temperature
1 cup granulated sugar
1 cup light brown sugar, packed
3 extra-large eggs, at room temperature
3 teaspoons pure vanilla extract
1 1/2 cups buttermilk, at room temperature
3/4 cup sour cream, at room temperature
3 tablespoons brewed coffee
24 ounces semisweet chocolate chips
1 1/2 cups heavy cream
2 tablespoons light corn syrup
1/2 teaspoon pure vanilla extract
4 tablespoons (1/2 stick) unsalted butter, at room temperature
M&M's candy for decorating

Steps:

  • Preheat the oven to 350 degrees. Butter and flour a 12 by 18 by 1 1/2-inch sheet pan and set aside.
  • In a medium bowl, sift together the flour, cocoa, baking soda, and salt.
  • In the bowl of an electric mixer fitted with a paddle attachment, cream the butter and sugars on high speed until light, approximately 5 minutes. Add the eggs, one at a time, and the vanilla and mix well. Combine the buttermilk, sour cream, and coffee. On low speed, add the flour mixture and the buttermilk mixture alternately in thirds, beginning with the buttermilk mixture and ending with the flour mixture. Mix the batter only until blended.
  • Pour the batter into the prepared pan and smooth the top with a spatula. Bake in the center of the oven for 25 to 30 minutes, or until a toothpick comes out clean. Cool to room temperature before frosting.
  • Place the chocolate chips and heavy cream in a bowl set over a pot of simmering water, stirring occasionally, until the chips are completely melted. Off the heat, add the corn syrup and vanilla and allow the chocolate mixture to cool to room temperature. In the bowl of an electric mixer fitted with the whisk attachment, whisk the chocolate mixture and softened butter on medium speed for a few minutes, until it's thickened.
  • Spread the frosting evenly on the cake. Have the children decorate the cake with M&M's.

1 1/2 cups all-purpose flour
1/2 cup unsweetened cocoa powder
1/3 cup sugar
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
2/3 cup whole milk
2/3 cup instant malted milk powder (recommended ( Caration brand)
1/2 teaspoon espresso powder
2/3 cup canola oil
2 large eggs
2/3 cup sour cream
1 teaspoon vanilla extract
1/2 cup miniature chocolate chip
4 1/2 cups confectioners' sugar
1 1/2 cups unsalted butter, softened
1 tablespoon vanilla extract
3 -4 tablespoons whipping cream
2/3 cup tart cherry preserves
malted milk balls or maraschino cherry, for garnish

Steps:

  • Preheat oven to 350 degrees. line 2 regular 12- cuo tins with paper liners.
  • In a large bowl, combine the flour, cocoa powder, sugar, baking soda, baking powder, and salt. Whisk until well blended.
  • In a medium bowl, whisk together the milk, malted milk powder, and espresso powder. Add the canola oil and eggs; whisk to blend. Add the milk mixture to the flour mixature and beat until smooth. Add the sour cream and vanilla and beat until combined. Stir in the minature chocolate chips.
  • Divide the batter among the prepared cupcake tins, filling only halfway full. Bake the cupcakes for 15 to 17 minutes, until they spring back when touched and a toothpick inserted into the center emerges clean.
  • While the cupcakes bake, prepare the buttercream. In the bowl of an electris mixer fitted with the paddle attachment, mix together the sugar and the butter on medium-low speed until well blended. Add the vanilla and whipping cream and beat on medium speed for 2 minutes, until light, spreadable and fluffy. Beat in the cherry preserves until well incorporated.
  • When the cupcakes have finished baking, let sit in the pans for 2 minutes and then transfer the cupcakes to the wire racks to cool for 10 minutes more.
  • While the cupcakes cool, transfer the buttercream to a patry bag fitted with a large star tip. Alternatively, you can frost the cupcakes with a knife or offset spatula. When th ecupcakes have cooled, pipe the buttercream on decorativve swirls on top of the cupcake ( or swirl with a spatula ). Garnish on top of each cupcake with a malted milk ball or cherry and serve.

This is by far the most chocolately, rich, and simple buttercream frosting I have ever tasted in my life! Don't worry about the espresso for those non-coffee people out there, you can't even tell it's the secret ingredient!

1 cup chocolate chips (Ghirardelli 60% cacao is the BEST)
3 cups confectioners' sugar
1/3 cup espresso (instant granules in cool water)
1 -2 teaspoon vanilla (optional)

Steps:

  • melt chocolate chips at 20 second intervals in your microwave, stirring each time until JUST melted.
  • cream together butter and melted chocolate until smooth.
  • add in the espresso and vanilla
  • gradually beat in the confectioner's sugar and continue beating until frosting is smooth and has lightened in color.
  • enjoy on your favorite cake, cupcakes, or whatever you choose. If you love chocolate, you will not be dissapointed!

This is a very delicate, all butter, chocolate buttercream icing. My husband, who is not a sweets eater, requests this icing on an orange cake each year for his birthday. Try it and you won't be disappointed. Be sure the chocolate is cooled or you will end up with a sauce instead of an icing.

⅓ cup white sugar
¼ cup water
2 eggs
1 cup unsalted butter, room temperature, cut into tablespoons

Steps:

  • Melt chocolate in a microwave according to package instructions. Set aside and let cool completely.
  • Combine sugar and water in a saucepan. Bring to a boil; let boil for 1 minute. Remove from heat and set aside.
  • Beat eggs in a large bowl using an electric mixer until frothy. Drizzle in sugar mixture slowly; beat on high speed until mixture turns pale yellow and expands in volume, about 5 minutes. Add butter by tablespoon one at a time with mixer running, beating well after each addition. Frosting will become watery; continue with remaining butter.

A very rich, light icing. Once you use this style of buttercream icing, you will never go back to the old standard.

8 ounces sugar
2 ounces water
3 ounces egg yolks
10 ounces butter, softened
3/4 teaspoon vanilla
3 ounces sweet chocolate or 1 1/2 ounces unsweetened chocolate (optional)

Steps:

  • Combine the sugar and water in a saucepan.
  • Bring to a boil while stirring to dissolve the sugar.
  • Continue to boil until the syrup reaches a temperature of 240 degrees F (115 C) While the syrup is boiling, beat the yolks with a wire whip or the whip attachment of a mixer until they are thick and light in color.
  • As soon as the syrup reaches 240 F, pour it very slowly (in a thin stream) into the beaten yolks while whipping constantly.
  • Continue to beat until the mixture is completely cool and the yolks are very thick and light.
  • Whip in the butter a little at a time.
  • Add it just as fast as it can be absorbed by the mixture.
  • Beat in the vanilla.
  • If the icing is too soft, refrigerate it until it is firm enough to spread.
  • Chocolate: Melt 3 oz sweet chocolate and cool slightly (chocolate must not be too cool or it will solidify before completely blending with the buttercream).
  • Blend with about one quarter of the buttercream, then blend this mixture into the rest.
  • For very sweet buttercreams, use 1 1/2 oz unsweetened chocolate instead of the sweet chocolate.
