Number Of Ingredients 7

4 lbs, 2.5 oz can chunk light tuna (1.88 kg)
in water, drained
2 cups shredded Cheddar cheese (500 mL)
1/2 cup Gluten-Free Bake Mix, (125 mL)
6 eggs, fork beaten
2 tbsp coconut flour (30 mL)
1/2 tsp salt (2 mL)

Steps:

  • Drain tuna in a colander over a large bowl. Empty bowl and place tuna in it. Break tuna up into smaller bits. Add Cheddar cheese, Gluten-Free Bake Mix, page___, eggs, coconut flour and salt. Stir to combine well. Form patties and fry in nonstick frying pan in olive oil over medium heat. Fry until golden brown on one side, flip and cook the other side until golden brown as well. Serve on low-carb hamburger buns (choose a recipe from our previous Low-Carbing Among Friends Cookbooks or search my blog for a recipe if you do not have those books.) with mayonnaise, thin tomato slices and lettuce. Yield: 20 servings 1 serving 209.5 calories 33.3 g protein 6.9 g fat 1.1 g net carbs

Tasty tuna cakes, with a subtle. spicy blend of cheese and mustard to keep things interesting. I needed to find a low-carb alternative to the tuna noodle casserole the rest of my family was having, so I came up with these. Mission accomplished!

2 (6 ounce) cans tuna
1 egg
1 tablespoon mayonnaise
1 teaspoon Dijon mustard
1/4 cup shredded cheddar cheese
3/4 cup pork rind, crushed, divided

Steps:

  • Mix tuna with egg, mayonnaise, mustard,cheese, and 1/2 cup of the pork rinds in a large bowl, being sure to break up tuna into finer pieces. If mixture seems too dry, add a little more mayonnaise.
  • Form patties with the mixture and press into reserved pork rinds on each side to coat.
  • Fry in medium hot oil until golden, about 4-5 minutes per side.

2 (6 ounce) cans albacore tuna, drained and flaked
1 cup seasoned bread crumbs, divided
1 egg, beaten
1/4 cup finely chopped green onion
1/4 cup finely chopped sweet red pepper
1/4 cup reduced-fat mayonnaise
1 tablespoon lemon juice
1/2 teaspoon garlic powder
1/8 teaspoon cayenne pepper
1 tablespoon butter

Steps:

  • In a large bowl, combine the tuna, 1/3 cup bread crumbs, egg, onions, red pepper, mayonnaise, lemon juice, garlic powder and cayenne.
  • Divide mixture into eight portions; shape into 2-inch balls.
  • Roll balls in remaining bread crumbs.
  • Flatten to 1/2 inch thickness.
  • In a large nonstick skillet, cook tuna cakes in butter for 3-4 minutes on each side or until golden brown.
