GERMAN STRUDEL WITH A TWIST
Although my grandmother Mamke was German, Aunts and Uncles hailed from Slovenia. This Strudel recipe, prevalent in both countries, has my personal twist to it

Steps:
- Preheat oven to 325 degrees.
- On a large area sprinkle half the flour, place the rectangle of puff pastry on the flour, Sprinkle some flour on top of the dough, as well as on your rolling pin and roll the dough, as thin as you can get it, so that it forms an even rectangle approximately 18 inches long by 12 inches wide.
- Gently brush off the excess flour with a dry towel or soft brush.
- Dip the brush in the melted butter and lightly coat the dough rectangle (save a little to help seal the ends later and to brush over the top).
- Sprinkle the dough evenly with the bread crumbs and 3 Tbsp brown sugar and the cinnamon.
- With the long end facing you start placing the cranberries, apples, peaches, along the bottom, keeping about 1 inch away from the edge of the dough. I like to keep my fruit slices a bit larger than the original recipe, giving it more firmness when baked.
- Brush the perimeter with some of the melted butter .
- Now gently start rolling away from you, gathering any fruit that gets loose. My grandmother and father used to spread the flour and dough on a tea towel which helped them to roll the streudel with ease.
- Finish rolling the dough and seal the edges. Place on a non stick cookie sheet and shape into a large U.
- Lightly top with the remaining butter and sugar.
- Bake in the oven for 35 - 40 minutes, till nicely browned on top. Remove from oven and let the streudel sit for 10-15 minutes then with a large spatula move to a plate.
- Slice a piece or two, serve with french vanilla ice cream, a drizzle of caramel and enjoy.
- what about combining any two of the following fruits: Pear, Plum, Kiwi, Banana, Apricot.

GERMAN STRUDELS
This is an old family recipe of my aunt's. Almost all of my relatives are German and this is one of the original recipes used for family dinners! Especially good with chicken and cream gravy. You can also make them to the point after rolling and cutting and freeze on cookie sheets, then transfer to plastic bags.

Steps:
- Combine yeast, salt, sugar, water, egg, and flour to make dough.
- Divide the dough into small balls.
- Let rest for a while.
- Roll balls to about 1/4 inch thick and spread with warm oil.
- Let the dough rest for a few minutes so the dough will stretch easily, then stretch the dough paper thin.
- Once the dough is stretched, roll it like you would for cinnamon rolls.
- Cut the dough (which is rolled up like a snake now) into 3 inch lengths.
- Coat roaster or heavy pan (you can also use and electric frying pan) with shortening or oil, put as many diced potatoes and onions as you like and season with salt and pepper.
- Add water to cover the potatoes and bring to a boil.
- Once water is boiling lay strudels on top of potatoes in two layers.
- Water should nearly cover strudels.
- COVER TIGHTLY-THIS IS VERY IMPORTANT OR RECIPE WILL NOT WORK!
- YOU CANNOT PEEK OR THE STRUDELS WILL "FALL"!
- Cook over low heat 30 to 35 minutes, or until you can hear a slight "frying" noise in the pan.

STRUDELS (GERMAN DUMPLINGS)

Steps:
- Mix water, salt, baking powder and flour to form dough.
- Knead dough on floured surface until elastic.
- Set aside and cover with wax paper for approximately 20 minutes.
- Roll dough out with rolling pin until it's as thin as you can make it.
- Rub a small amount of oil on top.
- Pull dough out, starting on edges.
- When it's pulled thin, stretch it out on the counter and anchor it on the ends (with water glasses or bowls).
- Flip it lengthwise 3 or 4 times into 1" wide strips.
- Slice off strip and cut into 2" pieces.
- Repeat until no more dough is left.
- Heat 1 tablespoon lard in frying pan at maximum heat and then turn down to setting 4.
- Fry dough in lard, adding lard as needed.
- Remove and let stand in a bowl.
- Heat 1 tablespoon lard in large pot on setting 6.
- Add onions and saute until they start to brown, then add potatoes.
- Add water to cover potatoes, salt and pepper.
- Cook covered until potatoes are half cooked (approximately 15 minutes).
- Add 2" water and bring to boil.
- Add dough pieces and cook covered for 1/2 hour on setting 4.

GERMAN APPLE STRUDEL

- Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
- In a large saucepan, combine the apples, brown sugar and 1/2 cup water. Bring to a simmer and cook until the apples soften and breakdown, 10 to 15 minutes. Set aside and let cool.
- Meanwhile, combine the apple juice and raisins in a small bowl and let sit for 15 minutes.
- Combine the cinnamon, granulated sugar and pecans in a small bowl. Lay out a sheet of phyllo dough. Brush with butter, sprinkle with some pecan-sugar mixture and put another phyllo sheet on top. Repeat this process until all the sheets and pecan-sugar mixture are used up.
- Drain the raisins and stir them into the apples. On the last buttered sheet, put the apple mixture in a line across the sheet horizontally, leaving 1 inch on each side. Carefully roll the pastry away from you to enclose the filling, making a log.
- Close the ends with your fingers, brush the top with butter and sprinkle extra brown sugar on top. Transfer the strudel to the prepared baking sheet. Bake until lightly browned and crisp on top, 35 to 40 minutes. Let cool. Slice with a serrated knife into 2-inch pieces and serve with whipped cream.
BLUEBERRY STRUDELS

- In a 4-quart heavy saucepan over moderate heat, bring the blueberries, 1/4 cup sugar, cornstarch and a pinch of salt to a boil. Lower the heat and simmer 3 to 4 minutes, stirring occasionally. Transfer to a medium bowl and let cool completely.
- Preheat the oven to 400 degrees F. Butter a sheet pan.
- Cover the phyllo sheets with a piece of plastic wrap and a damp paper towel.
- Arrange 1 sheet of phyllo on a work surface with the short side nearest you (keep the remaining sheets covered) and brush with some butter. Top with 2 more phyllo sheets, brushing each sheet with butter. Place a heaping 1/4 cup blueberry mixture over the lower third of the buttered phyllo, leaving a 2-inch border along the bottom and sides. Fold the bottom edge of the phyllo up over the blueberry mixture and fold in the sides to enclose the filling completely. Roll up the phyllo to form a strudel, about 4 by 2 inches. Transfer, seam-side down, to the prepared sheet pan. Brush the top with some butter and sprinkle with sugar. Using a paring knife, cut 2 vents across the top of the strudel. Repeat with the remaining ingredients.
- Bake until golden brown and crisp, 15 to 20 minutes. Transfer to a rack and cool 20 minutes. Serve immediately.
STRUDEL DINNER

- Dough;.
- In bowl combine flour and salt until blended, make well in centre and gradually add 2 cups of water to make a soft dough, you may need the extra water to obtain this consistency. Let dough stand, covered with bowl, for best dough this will be about 2 hours.
- Cut dough into balls and with rolling pin roll dough to about 8 - 9 inch diameter circles. Lay circles on floured surface. Put a small amount of melted lard or vegetable oil just to keep strudels pliable and easier to stretch.
- In dutch oven brown short ribs in a small amount of oil, continue cooking over medium heat until meat is almost done. Add potatoes and onion and cover with water. Now back to your dough and the fun part --
- Starting in the middle of your circle, start stretching until dough is very thin being careful to try not to put holes in your dough, this is tricky -- Roll stretched dough into long rectangles and lay on table. Repeat this step for all your circles. Cut dough into about 5 inch lengths.
- Place strudels on top of cooking potatoes and meat. Cook covered without peaking for 25 to 35 minutes. Meat can be removed before adding potatoes if it is cooked.
- Remove strudels to platter and potatoes and meat to bowls. Keep warm.
- To drippings in pot add about 3 cups of water to make an jour, add salt and pepper to taste and boil for about 15 minutes to get a good flavor.
- Serve au jour over all.

- Place flour in a mixer bowl; beat in 1/4 cup oil (mixture will be slightly crumbly). In a small bowl, slowly whisk warm water into beaten egg; add to flour mixture, mixing well. Beat in remaining oil until smooth. Transfer to a greased bowl, turning once to grease the top. Cover and let rest in a warm place, about 30 minutes., Preheat oven to 350°. Spread bread crumbs into an ungreased 15x10x1-in. baking pan. Bake 10-15 minutes or until golden brown, stirring occasionally. Cool completely., Tape a 30x15-in. sheet of parchment onto a work surface; dust lightly with flour. Divide dough in half; place 1 portion on parchment and roll to a very thin 24x15-in. rectangle. (Keep remaining dough covered.) Remove tape from parchment., Sprinkle 3/4 cup bread crumbs over rectangle to within 1 in. of edges. Starting 3 in. from a short side, sprinkle 3 cups apples and 1/4 cup raisins over a 3-in.-wide section of dough. Mix sugar and cinnamon; sprinkle half of the mixture over fruit. Drizzle with half of the melted butter., Roll up jelly-roll style, starting at fruit-covered end and lifting with parchment; fold in sides of dough as you roll to contain filling. Using parchment, transfer strudel to a 15x10x1-in. baking pan; trim parchment to fit pan., Bake on lowest oven rack 45-55 minutes or until golden brown, brushing top with sour cream 2 times while baking. Repeat with remaining ingredients., Using parchment, transfer to a wire rack to cool. Serve warm or at room temperature.
