Follow step-by-step, photo illustrated instructions to make our delicious, and hearty, Brunswick Stew. We're combining Chicken, Pork BBQ, and some of our favorite vegetables, to make this stew from scratch. Brunswick Stew is a traditional side dish served in barbecue restaurants throughout the South, but it's great as a main course of its very own. Just add saltine crackers or bread.

1 whole Chicken
1 lb. Pork Barbecue, fully cooked.
1 lb. Baby Lima Beans
1 lb. Corn
4 medium Potatoes, diced
1 can Tomato Sauce - 8oz.
2 cans Tomato Paste - 4oz
½ stick Butter
¼ cup Apple Cider Vinegar
¼ cup Texas Pete Hot Sauce
¼ cup Ketchup
2 Tablespoons Brown Sugar
1 Tablespoon Worcestershire Sauce
1 teaspoon Black Pepper
1 teaspoon Salt

Steps:

  • Rinse the fryer under cold running water.
  • Place fryer in large stock pot and cover with water about 6 inches over chicken.
  • Bring to a boil, reduce heat to medium and let chicken cook for one hour.
  • Remove cooked chicken from pot, set aside to cool.
  • Place the frozen baby lima beans and frozen corn in a colander. Rinse well.
  • Add the beans and corn to a large stock pot.
  • Wash, peel and cut up the potatoes, add to the beans and corn.
  • Add enough water to cover the vegetables by about 2 inches.
  • Cook over medium heat, stirring often, until vegetables are tender. About one hour.
  • While the vegetables cook, pull the chicken meat from the bones. Discard bones and skin.
  • Shred chicken into small pieces.
  • When vegetables are done, remove any excess liquid, leaving just enough to reach top of vegetables.
  • Add tomato sauce.
  • Add apple cider vinegar
  • Add brown sugar.
  • Add black pepper
  • Add salt.
  • Add butter.
  • Add Texas Pete Hot Sauce.
  • Add tomato paste.
  • Add Worcestershire Sauce.
  • Stir well.
  • Add chicken to the stew.
  • Add pork barbecue to stew.
  • Add Ketchup. Stir well.
  • Return to stove top and simmer on medium, stirring often, until warm, prior to serving.
  • Stock or liquid from vegetables may be added if needed to obtain desired consistency.
  • Serve warm and Enjoy!

This recipe is basically a chicken stew. It is best to use smoked chicken or at the least, grilled chicken. If you do not have either, any chicken will do. The added barbeque sauce also aids in the smoky flavor.

6 Cups water
1 tbls Worcestershire Sauce
1 can Stewed Tomatoes
1 cup Barbecue Sauce (I prefer Sweet Baby Rays or Stickey Fingers Carolina Sweet Sauce)
4 oz Tomato paste
1-2 Cloves garlic (Minced)
1/4 tsp Cayenne Pepper
1 tbsp Salt
1/2 tbsp pepper
1-2 pds Smoked chicken
1 med Onion (Chopped )
6-7 med Potatoes (Cubed)
16 oz bag frozen Sweet Corn
16 oz bag frozen Lima beans

Steps:

  • Start with a large stock pot and add in all of your wet ingredients. Water, Worcestershire Sauce, Stewed Tomatoes with juice, Barbecue sauce, and tomato paste.
  • Turn your burner on high.
  • Next, add in the minced Garlic, Cayenne Pepper, Salt, and Pepper.
  • Stir well to combine all the ingredients before adding the remaining ingredients
  • Add in the remaining ingredients and bring to a boil.
  • Once your dish has reached a boil, turn burner down to a slow simmer.
  • Cook until vegetables are soft and tender.

3 (15- to 16-ounce) cans cream-style corn
2 to 3 cups diced potatoes (cooked)
1 1/2 cups ketchup
1/2 cup barbecue sauce
3 to 4 tablespoons bacon drippings
2 tablespoons Worcestershire sauce
Salt to taste
1/2 teaspoon ground black pepper (or to taste)
1 teaspoon hot sauce (or to taste)
Optional: 1 or 2 tablespoons dried minced onion

Steps:

  • Gather the ingredients.
  • Place all of the ingredients in a stockpot or Dutch oven.
  • Place the pan over high heat and bring to a boil.
  • Reduce the heat to low and cover the pan; simmer until hot and bubbly, about 30 minutes.
  • Taste the stew and adjust the seasonings with more salt, pepper, and hot sauce as needed.

1 pound Boston butt pork roast
1 pound fresh chicken or hen, bone in
1 pound boneless beef chuck roast
1 pound red potatoes, peeled and quartered
2 1/2 teaspoons ground black pepper
1/8 teaspoon ground cayenne pepper
1 small sweet onion, such as Vidalia, chopped
6 cups canned whole peeled tomatoes
3/4 cup ketchup
2 tablespoons Worcestershire sauce
2 1/2 teaspoons salt
32 ounces (4 cups) cream-style white corn

Steps:

  • Place the pork and chicken in a 1 1/2 gallon stock pot with enough water to cover. Cook at a medium simmer for 2 hours, or until the meat is very tender, skimming occasionally. Remove the meat to a bowl and reserve the stock. Meanwhile, in a separate large stockpot, do the same to the beef. Remove the beef and discard the broth.
  • Place the potatoes in a medium saucepan, cover with water and simmer until tender.
  • Remove and discard the bones and skin from all of the cooked meat, pull apart or cut into chunks and process in a food processor or meat grinder until ground. Put 2 pints of the reserved pork and chicken stock into a 1 1/2 gallon stock pot, reserve the rest for another use. Add the ground meats to the stock. Dissolve the black pepper and the cayenne pepper in 1 tablespoon water, and add to the stew.
  • Add to the onion and tomato to the food processor, process well and add it to the meat mixture with the ketchup and Worcestershire sauce. Process in the food processor the cooked potatoes, then add to the stew, stirring until any lumps are removed. Stir in the salt. At this point, the stew should be soupy not watery. If the stew is too thick to stir easily with a flat spatula or pancake turner, thin it slightly with more reserved pork and chicken stock. Cook for 30 minutes, stirring constantly.
  • Puree and add the corn, then continue to cook the stew over very low heat for 1 hour, stirring often and scraping the bottom of the stock pot with a flat spatula or pancake turner to avoid scorching.

3 cups (2 large) finely diced sweet onions
2 tablespoons minced garlic
1 teaspoon cayenne pepper
1 tablespoon freshly ground black pepper
1 tablespoon salt
1/4 cup Worcestershire sauce
1/2 cup vinegar bbq sauce (recommended: Sapp Southern Soul Barbeque North Carolina)
1/2 cup brown sweet bbq sauce (recommended: Sapp Southern Soul Barbeque Georgia)
1 pound smoked pulled pork
1/2 pound smoked pulled chicken
1/2 pound smoked pulled turkey
1 pound smoked chopped beef brisket
1 (number 10) can crushed tomatoes
1 quart drained yellow corn kernels
1 quart drained baby lima beans
1 quart or more quality chicken stock or broth

Steps:

  • Melt the butter in a large saucepan over medium heat. Add the diced onions and the garlic and saute until the onions are translucent, about 15 minutes. Stir in the cayenne pepper, black pepper, salt and Worcestershire sauce. Simmer for 5 minutes then add 1/2 cup of vinegar sauce and 1/2 cup of bbq sauce. Stir in the pulled pork, chicken, turkey, and brisket. Add the crushed tomatoes and all of the vegetables. Stir in the chicken stock and let simmer for a couple hours over medium heat. Transfer the stew to a serving bowl and serve with warm buttermilk cornbread, if desired.

Well, it's called stew, but it's not chunky at all! Really yummy, and is served at many BBQ shacks in Georgia. This recipe is one I came up with to copy-cat the stew served in Zeb's BBQ in Northeastern Georgia.

2 lbs ground pork
1 (15 ounce) can pork and beans in tomato sauce (mash the beans)
1/2 large onion, minced
1 (15 ounce) can tomato sauce
1 (15 ounce) can tomatoes (dice these really finely)
1 -2 garlic clove, minced
1/2 teaspoon ground cumin
1 pinch hot pepper flakes
1 teaspoon salt
1/8 teaspoon pepper
1 dash ground oregano
1 teaspoon beef bouillon (OXO brand)
1 lb frozen sweet corn (or slice frozen corn off cobs for smaller pieces, be sure to scrape cob for 'milk')
1 tablespoon Worcestershire sauce
2 -3 tablespoons white vinegar (to suit your taste)
frank red hot sauce (to serve on stew)
serve with sunbeam white bread (No substitutions on this one! it's a necessity with this stew!)

Steps:

  • In a cold stew pot, place your tomato sauce, finely diced canned tomatoes, pork and minced onion and garlic.
  • Mash your canned beans (throw out the hunk of pork fat that comes in the can).
  • Add the mashed beans to your pot.
  • Put the ground pork into the pot, and mash with a fork until everything in the pot is well-mixed and looks 'pureed'.
  • Turn on your flame and use a wooden spoon to keep stirring this mixture until the color of the meat changes and it is cooked through.
  • (I think I probably cook it this way on the stove top for about 15-20 minutes on medium high heat, stirring so nothing burns onto the bottom.) At this point I transfer the whole lot to my crock pot, but you can continue on with just the stew pot on the stove top.
  • Add your spices, cumin, hot pepper flakes, salt, pepper, oregano, and beef bouillon.
  • Taste it to see if you have everything in in the proportions you like.
  • (I usually end up adding a lil' bit more of each spice to suit our tastes).
  • Allow it to simmer a bit, so the spices meld together nicely.
  • Give it another taste, add any spices you see fit to suit your tastes.
  • I generally add the corn now (We prefer our corn cut off the cob in smaller pieces than whole kernels). Add the vinegar and Worcestershire sauce.
  • Be sure to taste-test to see if you need to add more or not.
  • Simmer until you are ready to serve.
  • If your pork was cooked in the step 5 as instructed, you really just need to add the corn, vinegar and Worcestershire and heat it through.
  • But I find it's easy to leave this in a crock-pot to keep it hot.
  • When serving, pour some Frank's Red Hot sauce on your own bowl of the stew, (this way you can gauge the heat for each individual eating the stew.) (Optional: You can cook 1-2 chicken breasts in water until they will flake apart -- cut them finely, flake them so they aren't in chunks, and add to your stew).

Rich and meaty Brunswick stew is a true Southern classic. This streamlined rendition of my mom's perfect version makes a huge amount of food-but to my thinking, that's the point of stew. It tastes even better the next day, so it's a great make-ahead meal if you are planning to have weekend visitors or feed a big crowd. You can also pop some in the freezer for a quick-fix weeknight supper another time.

Yield makes 5 1/2 to 6 quarts/ serves 16 to 20

Number Of Ingredients 19

One 3 1/2- to 4-pound chicken
4 bay leaves
6 quarts cold water
Sea salt and freshly ground black pepper
2 tablespoons olive oil
2 tablespoons unsalted butter
2 pounds beef stew meat, cut into 1-inch chunks
2 pounds pork butt, cut into 1-inch chunks
2 onions, chopped, skins and trimmings reserved
4 celery stalks, chopped, leaves reserved
4 carrots, chopped, peels and trimmings reserved
One 28-ounce can diced tomatoes and their juice
1/2 cup ketchup
1/4 cup Worcestershire sauce
2 teaspoons crushed red pepper flakes
3 large potatoes (about 1 1/2 pounds), peeled and chopped
4 cups fresh or frozen corn kernels (about 1 pound)
4 cups fresh or frozen butter beans or lima beans (about 1 pound)
Hot sauce, for serving

Steps:

  • Rinse the chicken and remove any excess fat. Place the chicken and 2 of the bay leaves in a large soup or stockpot and cover with the cold water. Season with salt and black pepper to taste and bring to a low boil. Add the vegetable trimmings as you prep the vegetables. Reduce the heat and simmer for about 1 hour, skimming the top of the broth as needed, until the juices run clear when the chicken is pierced with the tip of a small knife.
  • Remove the chicken and set aside to cool. Strain the broth into a large bowl, discarding the bay leaves and vegetable trimmings. Skim and discard the fat from the top of the broth with a large spoon.
  • When the chicken has cooled enough to handle, pull the meat from the bones, discarding the skin and bones.
  • Place the olive oil and butter in the same pot and heat over medium heat until the butter is sizzling hot (see Know-how, page 100). Season the stew meat and pork butt with salt and black pepper to taste, add to the pot, and cook, stirring occasionally, until brown all over, 10 to 12 minutes. Remove the meat from the pan and set aside.
  • Place the onions in the same pot, reduce the heat to low, and cook and stir for about 10 minutes, until soft and light brown. Add the celery and carrots and cook and stir for 5 minutes more. Add the reserved broth, the remaining bay leaves, the beef, pork, tomatoes, ketchup, Worcestershire sauce, and red pepper flakes. Season with salt and black pepper and bring to a low boil. Reduce the heat and simmer, uncovered, for 1 hour.
  • Add the chicken and potatoes and continue to cook, stirring occasionally, for 30 minutes longer, until the stew meat is very tender. Remove and discard the bay leaves. Add the corn and butter beans and continue to cook for 15 to 20 minutes more, until the beans are tender. Taste for seasoning and add more salt and pepper, if desired. Serve hot with hot sauce on the side to give it a kick.
  • Celebrate Labor Day or the Fourth of July in high Southern style by serving Brunswick Stew with Crispy Crusty Jalapeño Cornbread Sticks (page 58) or Squash Puppies (page 65) and Watermelon-Tomato Salad with Shaved Feta and Handfuls of Mint (page 270). Don't forget the Mint Juleps (page 27) and Meyer Lemonade (page 27)!
  • With Brunswick, Georgia, and Brunswick County, Virginia, laying competing claims, the exact origins of Brunswick stew remain a mystery, but it hardly matters-either way, the stew is a staple of Southern cuisine. It can be found year-round in restaurants-barbecue joints, mainly-but it's traditionally served on Labor Day, the start of hunting season, as a way to clean last year's meat out of the freezer. Consequently, this vegetable-based stew is made using every kind of meat you could possibly think of-and some you might not want to think of-including chicken, pork, beef, rabbit, and squirrel.
