A light but hearty soup for any time of year, this sausage and lentil soup is simple to prepare (just chop and drop!) and is ready in just over an hour. Freezes great too!

1 pound Italian sausage (turkey sausage also works)
3/4 cup chopped onion
2/3 cup chopped celery
3/4 cup sliced carrots (about the same size as the celery)
1 small chopped zucchini
6 cups chicken stock
28 ounces diced tomatoes (with the juice)
3 cloves garlic (finely chopped)
1 teaspoon salt (or to taste)
1 1/2 cups dried brown lentils
1/4 cup fresh basil
2 teaspoons dried oregano
1/4 cup fresh parsley
parmesan cheese (optional )

Steps:

  • Heat a 5 quart or larger stock pot or cast iron dutch oven over medium high heat.
  • Remove any casings from your sausage if they are in links and add to the pan. Cook, breaking up the meat until no pink remains. About 7 minutes. Do not drain the fat.
  • Add all remaining ingredients and stir to combine. Bring to a boil, then reduce heat and simmer covered for 1 hour or until the lentils soften. Serve warm with a sprinkle of parmesan cheese.

I've gone to Carrabas many times just for this soup. A lady from my supper club happened to bring this in for our soup theme and it tasted exactly like Carrabas! I've substituted Italian turkey many times and you would never notice the difference. You might also want to sprinkle some fresh basil and Parmesan cheese on top. Its good with a crusty piece of bread!

1 lb Italian sausage (You can also use Italian turkey sausage)
1 large onion, chopped
1 stalk celery, chopped
2 large carrots, chopped
1 small zucchini, chopped
6 cups chicken broth
2 (14 1/2 ounce) cans diced tomatoes, undrained
2 -3 garlic cloves
1 teaspoon salt
2 cups dry lentils
black pepper
red pepper flakes
basil
oregano
parsley
thyme

Steps:

  • Brown sausage; drain off fat.
  • In a large pot combine all ingredients bring to boil.
  • Reduce heat,cover.
  • Simmer for about 1 hour or until lentils are tender. Add water if necessary, for desired consistency. I like to puree about 1 cup of the soup and add back to pot to give it a thicker consistency.
  • Sprinkle with Parmesan cheese and serve.

1 large carrot
2 stalks celery
1 large onion
2 garlic cloves
1 tablespoon olive oil
1 lb hot Italian sausage
8 cups chicken broth
1 (28 ounce) can diced tomatoes
2 cups dried lentils
1 teaspoon salt
3/4 teaspoon black pepper
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon oregano
1/2 teaspoon thyme
1/2 teaspoon fennel seed
1 bay leaf

Steps:

  • Dice the first four ingredients and sauté them in a large pot with the oil. Sauté until tender.
  • Remove vegetables from the pan and add the Italian sausage, removed from the casing, to the pan. Brown then drain off fat.
  • Pour 8 cups for chicken broth, the vegetables back into the pot.
  • Add tomatoes and lentils.
  • Add remaining ingredients.
  • Simmer until the lentils are tender, 30-45 minutes.
  • Remove 1/3 of the soup and puree. then return it to the pot.
  • Correct the seasonings and remove bay leaf.

1 large onion, chopped

An inexpensive, easy-to-make and delicious soup. This slightly modified recipe stems from Mumtaz Khan at Mumtaz Paan House in Bradford, England. Mung beans is the exquisite choice, but red or yellow lentils also make a delicious result (green lentils are not recommended). The chicken stock can be replaced with vegetable stock for a vegetarian variety. This recipe can also be made with less liquid and served as a stew.¨ Improvement, a little off tradition, but works even better: 1) Fry the lentils/beans for a few seconds in ghee before adding the spices and liquid. 2) Add just a little tomato purée (1 tsp) to the soup. 3) Add one diced potato together with the lentils/beans.

Steps:

  • Rinse the beans or lentils.
  • Bring to a boil with the stock, turmeric, Cayenne, cumin, cardamom and curry/bay leaves.
  • Let simmer until the beans or lentils are very soft (ca 30 minutes).
  • If using bay leaves, remove them now. Curry leaves can be left in the soup.
  • Run the soup quickly in a blender to a not too smooth consistency (or mash the lentils/beans with a ladle).
  • Sautee the garlic and mustard seeds lightly in the fat and add to the soup.
  • Let simmer for another 5 minutes.
  • Add salt, pepper and squeezed lemon to taste.
  • Serve hot with pita or paratha bread.

Steps:

1 tbsp Olive Oil
1 lb. Ground Mild Italian Sausage
3 Garlic cloves
1 White Onion (diced)
1 stalk Celery (diced)
3 Carrots (peeled & diced)
1 Zucchini (diced)
1 16 oz. Can of Diced Tomatoes
2 cups Dried Brown Lentils
1 tsp Salt
1 tsp Dried Parsley
1 tsp Dried Thyme
1 tsp Dried Oregano
1 tsp Dried Basil
1 tsp Black Pepper
¼ tsp Red pepper flakes ((optional))
2 32 oz. Boxes of Low-Sodium Chicken Stock

Steps:

  • In a large 5-quart (or larger) sauce pot, pour the olive oil in the pot. Then place the ground Italian sausage. Cook on medium-heat breaking up the meat with a wooden spoon. Mix, and continue to break up for 5 minutes.
  • Next, add in the garlic and diced onion. Mix into the meat mixture and reduce the heat to medium-low. While the meat mixture is cooking, dice the celery, peel and dice the carrots, and dice the zucchini. Place the vegetables in the soup pot. Mix well then add in the diced tomatoes, lentils, and spices. Mix well then pour in the chicken stock (mixing one last time).
  • Bring the soup to a boil (about 5-10 minutes), then reduce to a simmer. Simmer for 1 hour or until lentils are tender. Make sure you mix every 10-15 minutes to prevent lentils from sticking to the bottom of the pot.
  • Once the soup is cooked, ladle the soup into bowl, and sprinkle with Parmesan if desired. Enjoy!

Steps:

  • in a 12 to 16 quart pot, bring 2 gallons water to boiling.
  • Add shrimp or crab boil and Old Bay Seasoning; reduce heat.

  • Brown the sausage in your stock pot over medium heat. Get a good sear on both sides, cut it into small bite sized pieces. 8-10 minutes
