1 tablespoon butter
1 tablespoon all-purpose flour
1 cup whipping cream
1 cup milk
6 tablespoons fresh cilantro, chopped
3 green onions, minced
0.5 (4 ounce) can green chilies, diced, drained
1 3/4 teaspoons ground cumin
1 1/2 teaspoons ground coriander
1/4 teaspoon dried red pepper, crushed
1/2 cup vegetable oil
12 (6 inch) corn tortillas
3 cups mild cheddar cheese, grated
1 1/2 cups monterey jack cheese, grated
1/2 cup onion, finely chopped
1 tablespoon fresh cilantro, chopped
1/2 cup sour cream

Steps:

  • For sauce: Cook spinach according to package instructions.
  • Drain well.
  • Set aside. Melt butter in heavy medium skillet over medium heat. Add flour and stir mixture 2 minutes; do not brown.
  • Gradually whisk in whipping cream and milk.
  • Simmer until thickened, about 5 minutes.
  • Stir in spinach, cilantro, green onion, chilies, cumin, coriander and red pepper.
  • Puree in batches in processor until almost smooth.
  • Season with salt and pepper.
  • (Can be prepared 1 day ahead.
  • Cover and refrigerate. Bring to room temperature before using.) For enchiladas: Heat oil in heavy small skillet over medium-high heat. Using tongs, briefly dip each tortilla in oil to soften, about 15 seconds per side. Transfer to paper towels and drain.
  • Combine cheeses in large bowl; set aside 1 1/2 cups for topping.
  • Combine onion and cilantro in small bowl.
  • Place 1/4 cup cheese mixture in center of 1 tortilla.
  • Spoon 2 teaspoons onion mixture over.
  • Roll up tortilla.
  • Pla ce seam side down in large glass baking dish.
  • Repeat with remaining tortillas, cheese and onion, using 1/4 cup cheese for each.
  • (Can be made 1 day ahead.
  • Cover and chill.) Preheat oven to 375°F.
  • Stir sour cream into sauce; pour over enchiladas.
  • Sprinkle with reserved 1 1/2 cups cheese. Bake until cheese melts and enchiladas are heated through, about 25 minutes.

Salsa Verde Enchiladas image

The lime juice really helps to perk up the flavor of these mild enchiladas. If you want them to be spicier you can serve them with hot sauce or chopped jalapenos on the side. Or if you can find it, you can use the Herdez brand salsa verde hot instead of mild. The recipe originated from Good Housekeeping magazine, but I have made changes to suit my family.

3 cups cooked chicken, coarsely shredded
2 (16 ounce) jars salsa verde (such as Herdez brand)
1 teaspoon garlic powder
1/2 teaspoon salt
2 tablespoons lime juice (fresh)
1/4 cup cilantro leaf, chopped
16 corn tortillas
8 ounces sour cream (reduced-fat)
1/2 cup chicken broth
8 ounces monterey jack cheese, coarsely shredded
lime wedge (garnish)

Steps:

  • Preheat oven to 350 degrees.
  • Place chicken in a medium bowl. Stir 1 cup salsa verde into chicken to evenly coat. Stir in garlic powder and salt/pepper to taste.
  • Grease a 13" by 9" glass or ceramic baking dish and set aside.
  • In 12-inch skillet, heat remaining salsa verde and lime juice to boiling on medium-high. Boil 2 minutes, stirring occasionally. Stir in 2 tablespoons cilantro; keep warm over very low heat.
  • With tongs, place 1 tortilla in salsa verde mixture; heat 10 seconds. Place tortilla on waxed paper; top with about 1/3 cup shredded-chicken mixture. Roll up tortilla and place, seam side down, in prepared baking dish. Repeat with remaining tortillas and chicken mixture, arranging 12 tortillas in the dish.
  • Stir sour cream and broth into remaining salsa verde mixture in skillet; spoon over filled tortillas. Cover baking dish with foil and bake 15 minutes. Remove foil; sprinkle with cheese and 1 tablespoon cilantro. Bake 5 minutes longer or until cheese melts.
  • Serve with lime wedges.

1 medium yellow onion, finely chopped
4 garlic cloves, minced
1 whole roasted chicken, bones and skin removed, meat shredded

1 (2.5 ounce) can sliced olives, drained and diced
¼ cup chopped fresh cilantro

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Heat olive oil in a saute pan over medium heat. Add onion; cook and stir until translucent, about 5 minutes. Add garlic and heat until fragrant, about 2 minutes. Remove from heat and let cool.
  • Combine chicken, onion mixture, cheese blend, cream cheese, salsa verde, olives, cilantro, and jalapenos in a large bowl for the filling. Mix well.
  • Melt butter in a saucepan over medium heat. Stir in flour, then chicken broth. Cook until sauce starts to thicken, 6 to 8 minutes. Stir in sour cream and salsa verde; cook until heated through. Spread a spoonful of sauce over the bottoms of two 9x11-inch casserole dishes.
  • Wrap a tortilla in a damp paper towel and microwave for about 30 seconds. Fill with the chicken mixture, roll up, and place seam-side down into a baking dish. Repeat with remaining tortillas until each dish holds 8 enchiladas.
  • Spoon remaining sauce over the enchiladas. Sprinkle cheese on top.

2 tablespoons butter
2 tablespoons all-purpose flour
1 cup half-and-half cream
1 cup 2% milk
1 can (4 ounces) chopped green chiles, drained

1 large garlic clove, minced
1-3/4 teaspoons ground cumin

2-1/2 cups shredded cheddar cheese

Steps:

  • In a large nonstick skillet, saute spinach until wilted. Drain and remove. In same pan, melt butter. Stir in flour until smooth; gradually add cream and milk. Bring to a boil; cook and stir until slightly thickened, about 2 minutes. , Stir in chiles, green onions, cilantro, garlic, spices and spinach. Remove from heat; cool slightly. In this video cooking lesson, Chef Toby shows you how to make authentic Mexican cheese enchiladas with a green sauce (salsa verde with tomatillos). These are authentic Mexican enchiladas also known as enchiladas verdes, enchiladas suizas.

8 Tomatillos
1/4 small white onion or yellow onion
1/2 tsp salt
2 cups of Monterrey Jack cheese cut in strips (you can use shredded chicken also to make chicken enchiladas)
12 White corn tortillas
3 Tablespoons of olive oil
1/3 Cup of cream (we use Crema Mexicana which is not as thick as sour cream. Common brands are Cacique, or El Mexicano)
1/2 Cup of queso cotija (or Feta Cheese)

Steps:

  • First prepare the salsa verde for the enchiladas. Bring 4 cups of water to boil in a sauce pot. Carefully place tomatillos in boiling water for about 8 minutes or until they change color to a green olive color. Set aside to cool off. Once cool, place tomatillos in a blender with onions and salt and blend to a sauce. Pour sauce in shallow dish.
  • Next, take 6 tortillas at a time and wrap them in paper towels. Heat up in microwave for 1 minute. Once hot, take each one by one and rub with olive oil on both sides. Then, soak the tortilla in the salsa. Finally, take about 2 spoonfuls of cheese (or shredded chicken for chicken enchiladas) and roll the enchilada. Repeat for the rest of the tortillas. It's best to work in batches of 6 or less, so heat 6 or less tortillas at a time and form the enchiladas, then work on the next batch.
  • Once done with all of the enchiladas, pour an left over salsa on top of them. Pour cream and put some more shredded cheese on the top as well.
  • Now. place the baking dish in the preheated oven at 350 F for about 12 minutes.

3 (5 ounce) boneless chicken thighs
1 medium onion, coarsely chopped, divided
1 teaspoon whole black peppercorns
1 teaspoon salt
1 bay leaf
cooking spray
1 tablespoon oil
2 cups shredded Monterey Jack cheese, divided
3 tablespoons crumbled cotija cheese
1 (12 ounce) can tomatillos, drained
1 (4 ounce) can chopped green chile peppers
¾ cup heavy cream
¼ cup chopped fresh cilantro
1 small serrano pepper, seeded and deveined, or to taste
1 large egg
1 teaspoon salt
6 (8 inch) flour tortillas, warmed

Steps:

  • Combine chicken, 1/2 of the onion, peppercorns, salt, and bay leaf in a small pot. Cover with water and bring to a slow boil. Cook until chicken is no longer pink in the center and the juices run clear, about 15 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Transfer chicken to a plate and shred meat with a fork. Discard broth or reserve for another use.
  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Heat oil in a skillet over medium heat; stir in remaining onion. Cook and stir until the onion has softened and turned translucent, about 5 minutes. Transfer onion to a bowl and mix in shredded chicken, 1 cup Monterey Jack cheese, and cotija cheese.
  • Combine tomatillos, green chiles, cream, cilantro, serrano pepper, egg, and salt for sauce in a blender; blend until smooth.
  • Stuff warmed tortillas with chicken mixture. Roll and place seam-side down in the prepared baking dish. Pour all sauce over top. It may seem runny, but it will set up. Sprinkle remaining Monterey Jack on top.
  • Bake in the preheated oven until bubbly, about 20 minutes.

3/4 lb tomatillo, husked,rinsed,quartered
1 1/4 cups water
2 tablespoons minced seeded jalapeno chiles
12 cloves garlic
2 1/2 cups chopped green onions
3/4 cup canned mild green chili
12 large spinach leaves
8 corn tortillas
3 cups packed grated monterey jack cheese (about 12 ounces)
vegetable oil

Steps:

  • Bring first 4 ingredients to boil in large skillet.
  • Reduce heat to medium-low, cover, and simmer until tomatillos are soft, about 15 minutes.
  • Transfer mixture to blender; add 2 cups onions, green chilies, and spinach; puree.
  • Season sauce with salt and pepper.
  • Return sauce to skillet.
  • Preheat oven to 450 degrees F.
  • Lightly oil 13x9x2-inch glass baking dish.
  • Heat about 1/4 inch deep vegetable oil in a second skillet and fry 1 tortilla briefly, remove to a paper towel to drain and then coat with sauce.
  • Place coated tortilla on plate.
  • Top with 2 tablespoons cheese, 1 tablespoon remaining onions, and 1 tablespoon sauce.
  • Roll up tortilla.
  • Place seam side down in prepared dish.
  • Repeat with remaining tortillas, sauce, cheese, and onions.

These enchiladas are made with a fresh green salsa, just like you would find in a Mexican restaurant or better yet, in a Mexican home.

2 bone-in chicken breast halves
2 cups chicken broth
¼ white onion
1 clove garlic
2 teaspoons salt
1 pound fresh tomatillos, husks removed
5 serrano peppers
¼ white onion
1 clove garlic
1 pinch salt
12 corn tortillas
¼ cup vegetable oil
1 cup crumbled queso fresco
½ white onion, chopped
1 bunch fresh cilantro, chopped

Steps:

  • In a saucepan, combine chicken breast with chicken broth, one quarter onion, a clove of garlic, and 2 teaspoons salt. Bring to a boil, and then boil for 20 minutes. Reserve broth, set chicken aside to cool, and discard onion and garlic. When cool enough to handle, shred chicken with your hands.
  • Place tomatillos and serrano chiles in a pot with water, enough to cover them. Bring to boil, and continue boiling until tomatillos turn a different shade of green (from bright green to a dull, army green). Strain tomatillos and chiles, and place in a blender with another quarter piece of onion, 1 clove garlic, and a pinch of salt. Pour in reserved chicken broth, so that liquid just covers the veggies in the blender by about an inch. Blend all ingredients until they are completely pureed. Pour salsa in a medium saucepan, and bring to a low boil.
  • Pour oil in a frying pan, and allow to get very hot. Slightly fry tortillas one by one in hot oil, setting each on a paper towel afterwards to soak some of the oil. Finally, dip slightly fried tortillas in low-boiling green salsa, until tortillas become soft again. Place on plates, 3 per person.
  • Fill or top tortillas with shredded chicken, then extra green sauce. Top with crumbled cheese, chopped onion, and chopped cilantro.
