GARLIC AND ROSEMARY POTATO PUREE

Steps:
- Fill a large pot with about 2 inches of water and add a pinch of salt. Set steamer basket in pot, making sure water doesn't seep through holes. Bring to a boil, then reduce to a rapid simmer.
- Add potatoes to steamer basket and steam until tender when pierced with the tip of a paring knife, 25 to 30 minutes.
- Bring cream, garlic, and rosemary to a simmer in a small pot, then remove from heat and let steep 30 minutes. Strain through a fine sieve. Clean pot, then return cream to pot. Add butter and heat over medium until melted, stirring to combine. Cover and keep warm, either over lowest setting on the stove or in a warm pot.
- Remove potatoes from steamer basket and while the potatoes are still hot, pass through a ricer or a food mill fitted with a fine disk into a large bowl. Stir in cream mixture and season with salt and pepper. If a finer texture is desired, pass puree through a medium-mesh sieve, pressing on solids with a rubber spatula to extract as much puree as possible. Reheat over medium heat with a little more cream or water if necessary before serving.
ROASTED ROSEMARY POTATOES WITH GARLIC

Steps:
- Preheat oven to 400.
- Place the potatoes and garlic in a shallow baking dish large enough to hold them in a single layer.
- Drizzle with the oil and toss well to evenly coat.
- Sprinkle with the rosemary, salt and freshly ground pepper.
- Toss again.
- Roast, uncovered, for 40-50 minutes, depending on size, turning halfway through cooking time, or until the potatoes are nicely browned and tender through the center.
- Serve hot.
- Serves 6.

ROASTED GARLIC AND ROSEMARY SALT POTATOES
Steps:
- For the rosemary salt potatoes:
- Clean potatoes and place whole in stock pot. Add cold water to cover, add salt, cover and bring to boil. Remove lid and boil 18 to 20 minutes, until tender.
- Remove from heat and drain. Return cooked potatoes to stock pot. Squeeze roasted garlic into pot, add butter, minced rosemary, and cracked pepper to taste, stir to coat potatoes. Serve 3 potatoes per plate.
- Place garlic in aluminum foil square. Drizzle with olive oil and salt liberally. Wrap with foil and grill for an hour. Remove from heat and remove foil.
ROSEMARY-GARLIC ROASTED POTATOES

- Preheat oven to 400 degrees. In a large bowl, toss new potatoes and garlic cloves with rosemary. Toss with olive oil to coat lightly and add salt and pepper to taste. Lightly oil a sheetpan and spread potatoes out into one layer, cut side down. Roast for 30 to 45 minutes or until golden brown and tender. Remove from oven and let cool for 20 minutes before removing with a spatula. Serve hot or cold.
POTATO BAKE WITH GARLIC AND ROSEMARY
Stolen from the Food Lovers Diet Book..this recipe is so simple and so wonderfully delicious. I love it as a meal in itself with a salad but of course it is a fabulous side dish too.

- Preheat the oven to 180 degrees Celsius Grease a 6cm deep 24cm square baking dish.
- Melt the butter in a saucepan over medium heat. Add the flour and cook, stirring constantly for 2 minutes or until bubbly. Remove from the heat.
- Slowly add the milk, stirring constantly until well combined. Return to the heat. Add the rosemary and the garlic, and cook, stirring, until the sauce comes to the boil.
- Add 1 1/2 cups of the cheese and stir in to combine.
- Arrange 1/3 of the potatoes over the base of the baking dish, so that they overlap slightly. Season with salt and pepper. Spoon 1/3 of the sauce over the potatoes. Repeat twice more, then sprinkle with the remaining cheese.
- Bake in the oven for approx 1 hour, or until the potatoes are tender and the top is golden. if the top begins to brown too much, cover with foil.

PUREED GARLIC POTATOES

- Peel the potatoes and cut them crosswise into 3/4-inch cubes. Put the pieces in a saucepan and add water to cover. Add salt and the garlic.
- Bring to a boil and simmer 15 minutes or until the potatoes are tender. Do not overcook. Drain the potatoes and garlic and put them through a food mill or potato masher, then back in the saucepan.
- Meanwhile, heat the milk and add the butter to the milk. Blend well with a wooden spatula. Add the milk and butter mixture, a little at a time, to the potato mixture. Add the parsley, pepper, nutmeg and salt. Blend well. Keep warm until ready to serve.

- Preheat oven to 180°C (350°F).
- Peel and quarter the potatoes.
- Place in a bowl, add 2 tablespoons of the goose fat and mix so that the potatoes are evenly covered.
- Mix in the parmesan, garlic, rosemary, salt, and pepper and ensure all potatoes are evenly covered.
- Add 1 tablespoon of goose fat to a baking tray and cook for 10 minutes in the oven, making sure the oil is hot. Add the potatoes.
- Cook for 1 hour, flipping every 15 minutes to ensure they are evenly browned.
- Enjoy!

GARLIC ROAST POTATOES
Crispy roasties are essential to any Sunday dinner. Everyone's favourite side can only be improved by roasting in goose fat, with garlic and herbs

- Peel the potatoes, leaving the smaller ones whole and cutting the larger ones so that they are all roughly the same size. Put them in a large pan of cold salted water, bring to the boil and simmer gently for about 15 mins until cooked through. Tip gently into a colander and leave to drain and cool - there's no need to shake. When they stop steaming, put them on a tray in a single layer and place in the fridge, uncovered, until ready to roast. Can be done up to two days ahead.
- Once you have put the loin in to start roasting, spoon the goose fat into a flameproof roasting tin and heat on the hob for a few mins. Turn the heat off and, one at a time, turn each potato in the fat so they are completely coated. Make sure they are in a single layer and not touching. Once the oven has been turned down to 180C/160C fan/gas 4, put the potatoes in the oven with the pork and cook for 40 mins undisturbed.
- Remove from the oven and, again, turn each potato. Return to the oven for 20 mins, then remove and repeat the turning process. The pork should have come out of the oven by now, so turn the oven up to 220C/200C fan/gas 7 and cook the potatoes for a final 20 mins. Add the rosemary and garlic 5 mins before the end. Once cooked, the potatoes should be deep golden and crunchy on the outside and fluffy in the middle. Sprinkle with sea salt and serve.

CRUSTY GARLIC AND ROSEMARY POTATOES

- In a steamer set over boiling water steam the potatoes, covered, for 8 to 10 minutes, or until they are just tender. In a non-stick skillet cook the garlic in the oil over moderate heat, stirrng, until it is pale golden, add the potatoes, the rosemary, and salt and pepper to taste, and sauté the mixture over moderately high heat, stirring, for 5 minutes, or until the potatoes are golden.
GARLIC AND ROSEMARY POTATO PUREE
Steps:
- Infuse cream Bring cream and rosemary to a simmer in a small pot, then remove from heat and let steep 30 minutes. Strain through a fine sieve (to remove the herbs as well as any skin that might have formed) and clean pot, then return cream to pot. Add butter and heat over medium until melted, stirring to combine. Cover and keep warm (either over lowest setting on the stove or in a warm spot).
- Meanwhile, boil potatoes Peel and cut potatoes into 1 1/2-inch pieces, then place in a medium stockpot and cover with water. Add the garlic and a generous amount of salt and bring to a boil, then reduce to a rapid simmer. Cook until potatoes are very tender when pierced with the tip of a paring knife, about 15 minutes. Drain well, then return to pot and set over low heat, stirring until the potatoes are thoroughly dry.
- Puree While potatoes are still hot, pass through a ricer or a food mill fitted with the fine disk. Stir in cream mixture and season with salt and pepper. If a finer texture is desired, pass puree through a medium-mesh sieve, pressing on solids with a rubber spatula to extract as much puree as possible. Reheat over medium heat with a little more cream (or water), if necessary, before serving.
- Variations
- For a rustic puree, pass the potatoes through the large disk of a food mill, and enrich with 1/4 cup each of olive oil and butter (omit cream and rosemary). Finish by stirring in chopped flat-leaf parsley and freshly ground black pepper, if desired.
- For mashed potatoes, crush the potatoes with a potato masher; add just enough cream and butter to achieve the desired consistency, mashing to combine. Season with salt and white pepper.
