8 cups water
3 teaspoons reduced-sodium chicken bouillon granules
1-1/2 cups uncooked whole wheat orzo pasta (about 8 ounces)
1 package (19-1/2 ounces) Italian turkey sausage links, casings removed
1/2 cup chopped sweet onion
2 garlic cloves, minced
3 plum tomatoes, chopped
1/2 cup chopped roasted sweet red pepper
1/8 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon crushed red pepper flakes
1/3 cup chopped fresh basil
1/4 cup grated Parmesan cheese

Steps:

  • In a large saucepan, bring water and bouillon to a boil. Stir in orzo; return to a boil. Cook until al dente, 8-10 minutes. Drain orzo, reserving 3/4 cup cooking liquid., In a large skillet coated with cooking spray, cook and crumble sausage with onion and garlic over medium heat until no longer pink, 6-8 minutes. Stir in tomatoes, roasted pepper, salt, pepper, pepper flakes and orzo. Heat through over medium-low heat; stir in reserved cooking liquid to moisten if desired. Remove from heat; stir in basil and cheese.

1 cup uncooked orzo or rosamarina pasta (6.5 oz)
1 lb Italian pork sausage links, cut into 3/4-inch slices
1 teaspoon vegetable oil
4 oz green beans, cut in 1-inch pieces (about 1 cup)
3/4 cup yellow bell pepper strips
1/2 cup peeled baby carrots, cut in half lengthwise
1/4 teaspoon salt
2 tablespoons water
1 can (14.5 oz) Muir Glen™ organic fire roasted diced tomatoes, undrained
3/4 cup crumbled feta cheese (3 oz)
Chopped fresh parsley, if desired

Steps:

  • Cook and drain pasta as directed on package.
  • In 10-inch nonstick skillet, cook sausage over medium-high heat 7 to 9 minutes, stirring occasionally, until no longer pink and thoroughly cooked. Transfer to plate. In same skillet, heat oil over medium heat. Add beans, bell peppers, carrots and salt; stir 1 minute to coat vegetables. Add water. Cover; reduce heat to low, and cook 5 to 6 minutes or until vegetables are crisp-tender.
  • Remove cover; stir in tomatoes, sausage and cooked pasta. Increase heat to medium; cook 3 to 4 minutes or until completely heated through. Garnish with cheese and parsley.

Fresh parsley, chopped, if desired

Steps:

  • Cook and drain pasta as directed on package. Meanwhile, cook vegetables as directed on package. In 10-inch nonstick skillet, cook sausage over medium-high heat 5 to 6 minutes, stirring occasionally, until no longer pink. Drain; return to skillet. 1 lb fresh Italian sausage, casings removed
2 tablespoons olive oil
1 large sweet onion, diced
5 garlic cloves, peeled and chopped
3 celery ribs, halved lengthwise and chopped
2 tablespoons dried basil
2 bell peppers, stems, seeds, and pith removed, diced
1 (15 ounce) can diced tomatoes, undrained
1 cup chicken stock
2 cups broccoli, fleurets
2 cups fresh Baby Spinach
1/2 cup French-fried onions, toasted
2 cups cooked white rice
salt and pepper

Steps:

  • Brown sausage in a large skillet over medium heat until no longer pink inside. Remove from skillet and set aside.
  • Add olive oil to the same skillet. When hot (a splash of water sizzles), add onion, garlic, and celery, stirring until soft and translucent. Add basil and stir until well mixed.
  • Stir in bell pepper (I like to use different colors to make it pretty) until nicely combined.
  • Add tomatoes and stock and stir to deglaze the pan of any stuck on vegetables. Bring to a low boil.
  • Add broccoli, and then return sausage to pan, stirring until well combined.
  • Reduce heat, cover, and simmer until broccoli is tender.
  • Remove lid and add spinach, stirring just until wilted.
  • Check seasoning, adding salt and freshly ground pepper as needed.
  • Serve by itself or over hot rice, topped with crispy toasted French-fried onions.

380 g spicy italian vegetarian sausages, Yves
1 teaspoon olive oil
2 garlic cloves, minced
1 onion, diced
1 large carrot, julienned
1/2 green pepper, diced
1/2 teaspoon sage
796 ml diced tomatoes
1 cup water
1 1/2 cups orzo pasta
2 cups broccoli florets
salt and pepper

Steps:

  • Slice sausages into 1/4 inch thick slices.
  • Heat oil in a large pot.
  • Add garlic, onion, carrot and green pepper. Saute for about 2 minutes.
  • Add sausage slices and cook for 5 minutes.
  • Sprinkle with sage and salt and pepper.
  • Stir in tomatoes and water and bring to a boil.
  • Stir in orzo and reduce heat to medium.
  • Simmer uncovered, stirring often till most of the liquid is absorbed - about 10 minutes.
  • Stir in broccoli and remove from heat. Cover and let stand till liquid is absorbed - 3 to 5 minutes.
  • Sprinkle each serving with Parmesan cheese, if you like.

2 tablespoons olive oil
1 red bell pepper, coarsely chopped
1 orange bell pepper, coarsely chopped

2 medium onions, coarsely chopped
4 large potatoes, peeled and cubed
3/4 teaspoon salt
1/2 teaspoon pepper
1 teaspoon italian seasoning
1/4 teaspoon garlic powder
1/4 teaspoon fennel seed

Steps:

  • In a large nonstick skillet, brown sausage in 1 T olive oil; remove from skillet.
  • Add remaining olive oil to skillet and saute peppers and onions for 5 minutes; remove from skillet.
  • Add potatoes, salt, pepper, Italian seasoning, garlic powder, fennel seed and water to skillet; simmer over medium heat, covered, about 5 minutes.

3/4 lb Italian sausage
6 ounces Italian pasta (boxed creme-type, with seasonings, such as Pasta-Roni)
1 large green bell pepper, de-seeded and cut into strips
1/2 cup onion, chopped
1/2 cup cheese (shredded, any white blend, your choice)
1 1/2 cups water, warmed
3/4 cup whole milk, pre-warmed
2 tablespoons butter

Steps:

  • Remove any casings from the sausage and discard.
  • Crumble the sausage into a large skillet, brown over medium heat and drain, (if necessary).
  • To the browned sausage in the skillet, (over medium-high heat), add the water, milk, butter, and pasta box contents, including the seasonings that come with it. Bring to a boil.
  • As it comes to a boil, add the bell pepper and onion and reduce the heat to medium-low. Allow it to boil gently for 9 minutes, stirring occasionally -- pasta should be slighty firm at the end of the 9 minutes.
  • Remove skillet from burner, stir, and allow to stand, covered, for five minutes.
  • At the end of the 5 minutes, sprinkle the cheese over the top, re-cover and allow to stand for 3 more minutes, (to melt cheese), before serving.

I would recommend chopping the artichokes a little more finely, I found them to be too chunky as the recipe is written.

2 tablespoons extra virgin olive oil
1 lb Italian sausage, sweet, casings removed
1 onion, large, thinly sliced
1 garlic clove, large, minced
1 1/2 cups orzo pasta (10 ounces)
2 cups chicken stock or 2 cups low sodium chicken broth
salt and pepper
1 cup marinated artichoke, drained and quartered
1 cup frozen baby peas
3 tablespoons chives, snipped
6 tablespoons parmesan cheese, grated, plus more
parmesan cheese, for serving

Steps:

  • Heat the oil in a large skillet.
  • Add the sausage and cook over high heat, crumbling as it cooks, until cooked through. Transfer to a plate, leaving fat in the pan.
  • Lower the heat to medium, and add onion and garlic to the pan. Cover and cook, stirring occasionally, until softened, about 4 minutes.
  • Add the orzo and cook, stirring, about 3 minutes.
  • Add the stock and 2 cups of water, stirring constantly until the orzo is suspended in a thick, creamy broth, about 15 minutes.
  • Season with salt and pepper.
  • Add the sausage, artichokes, peas, chives, and parmesan to the orzo.
  • Cook, stirring until heated through, about 4 minutes.
  • Serve immediately, passing extra grated cheese at the table, if desired.
