UNCLE LOUIE'S CHICKEN WINGS MARINARA(JAY LENO'S FAVORITE)
This is reported to be Jay Leno's favorite recipe! The recipe multiplies easily for a party, just be sure to use extra pans as needed so as not to crowd the wings while roasting. Adapted from RecipeFinders.

Steps:
- Preheat oven to 400 degrees F.
- If using whole wings, disjoint wings and remove tips; you should have 24 drumettes.
- In a large bowl, toss the chicken with the olive oil, garlic powder, salt and pepper. Place on a rack in a baking pan.
- Roast the chicken wings or drumettes in preheated oven until done, about 30 minutes.
- Meanwhile, to make sauce, place the marinara sauce, hot sauce and garlic in a blender or food processor and blend to puree garlic.
- When the wings are done, remove from the oven, and toss with half the sauce. Leave the oven on. Return wings to oven for 10 more minutes .
- Sprinkle the wings with parsley.
- Serve with the remaining sauce on the side to dip the wings into. Enjoy!
- This is good served with a good blue cheese or gorgonzola dip too!
CHICKEN WINGS MARINARA
Jay Leno joins Martha to make delicious chicken wings marinara, an old family favorite.

- Line a baking sheet with paper towels. Heat 4 inches peanut oil in a medium stockpot over high heat until a deep-fry thermometer registers 400 degrees. Dredge wings in flour, shaking to remove excess flour. Add wings to hot oil, and fry until dark golden brown, 14 to 18 minutes. Transfer to prepared baking sheet; season with salt and pepper.
- Meanwhile, heat olive oil in a small saucepan over medium heat. Add crushed garlic; cook until fragrant, about 4 minutes. Remove garlic from oil and discard. In a medium bowl, crush tomatoes with your hands. Add to olive oil; cook, stirring occasionally, until heated through. Add parsley, salt, and pepper; reduce heat to low and simmer for 20 minutes. Add hot sauce and garlic powder; cook for 3 to 4 minutes. Keep warm until ready to use.
- In a large bowl, toss wings with 1/2 cup of sauce. Serve immediately with remaining sauce on the side.
CHICKEN MARINARA
I am posting this because an Italian patient of mine didn't have any family recipes passed on to him (due to adoption). Now I can just print it out if need ever arises again! lol This is the recipe my Sicilian mother and grandmother taught me. It is simple, delicious and one of my favorite comfort foods. It is much quicker than marinara with beef or pork (i.e. sausage or meatballs)--ENJOY! And please don't tell my grandmother I posted this family recipe online.

- Sauté garlic in 1 Tbsp olive oil until lightly brown and set aside. Cut chicken into bite-size pieces.
- Cook chicken, mushrooms and onion in same skillet with remaining olive oil until chicken is white throughout, seasoning with salt and pepper as preferred.
- Add tomato paste, cooked garlic and mix well.
- Add crushed tomatoes, basil, and water and mix well. Bring to boil, then lower to a simmer and covering sauce with a lid for an hour. Stir occasionally and season with salt and pepper as desired.
- Midway, add wine and stir well and resume covered simmering.
- During last fifteen minutes or so, cook pasta according to directions on package.
- In large bowl, pour sauce over cooked pasta and mix well.
- Sprinkle cheese on top and serve!

- In a large nonstick skillet coated with cooking spray, cook chicken over medium heat for 4-6 minutes on each side or until a thermometer reads 170°; remove and keep warm., In the same skillet, saute the mushrooms, garlic, basil and Italian seasoning until mushrooms are tender. SIMPLE MARINATED CHICKEN WINGS
These are my husband's favorite kind of wings. Easy to make and delicious. They taste even better if you double the sauce and marinate for 24 hours.

- Whisk together the soy sauce, brown sugar, sherry, mustard, and garlic powder in a bowl. Arrange the chicken wings in a 9x13-inch baking dish, and pour marinade over the chicken. Cover the baking dish with plastic wrap, and marinate in the refrigerator for at least 2 hours.
- Preheat an oven to 375 degrees F (190 degrees C). Remove the plastic wrap from the baking dish.
- Bake in the preheated oven until the chicken wings are no longer pink in the center, about 1 hour, basting occasionally.

CHICKEN MARINARA
This is a tasty recipe that is kid friendly! It's great served on top of a bed of noodles and a side of broccoli.

- 1. Oil bottom of casserole dish with olive oil.
- 2. Wash chicken and roll in bread crumbs, place in dish.
- 3. Pour marinara sauce over top of chicken and sprinkle with italian spices. Put cheese over top.

SPAGHETTI & CHICKEN WINGS

- 1. Saute onion with butter (in stock pot) until tender. Chop garlic cloves and marinate in Olive oil then set aside for 15 mins.
- 2. Next add the crushed tomatoes, tomato sauce, and water to pot. Stir briefly. Add salt/pepper, sugar, fresh basil and parsley, fresh garlic, parmesan cheese to sauce then mix well. You can add more olive oil/butter to your liking. (Optional)
- 3. Finally add frozen chicken wings carefully to the sauce. Simmer together for 2-3 hours. Taste test sauce after 1-2 hours to add more seasonings to your liking. If it's too bitter add more sugar. (It also helps to cut down on the acidity). If you don't like the Sauce so thin, you can add 1 small can of tomato paste, but the original recipe doesn't call for it. Finally serve sauce over spaghetti (Not rinsed) noodles, then serve with Chicken Wings. FYI - It is very messy, but it's well worth it!! Enjoy =)

- Preheat the broiler. Place the chicken wings under the broiler until cooked through, about 15 minutes, turning them halfway through. (Alternatively, you can also deep-fry the chicken wings. Lightly flour them and deep-fry in safflower or peanut oil at 375 degrees for 10-12 minutes per batch, or until cooked through.)
- Meanwhile, heat 1/8-inch of olive oil in a pan, add the crushed garlic or garlic powder, to taste. Mash the can of whole plum tomatoes through a sieve and cook in the olive oil. Add the parsley and salt, to taste and cook for about 20 minutes.
- Next, add the hot sauce and a little garlic powder and cook for another 3-4 minutes. In a bowl, toss the chicken wings with ½ cup of the sauce and serve with the remaining sauce on the side. Enjoy!
