A nice pickled cucumber dish to cool you down while eating a spicy meal. Is cooling even though it has some chili in it. You can adjust the amount of chili, or omit it all together, to your liking. From Sheila Lukin's All Around the World Cookbook.

1/2 cup rice vinegar
2 tablespoons sugar
1 teaspoon salt
1 -2 tablespoon minced seeded fresh red chile
1 cup thinly sliced seedless cucumber, halved before slicing
1/2 cup thinly sliced shallot
1 1/2 tablespoons chopped cilantro leaves
8 cilantro leaves

Steps:

  • Combine vinegar,sugar, and salt in a small pan. Cook, swirling occasionally, on low until sugar disolves, about 2 minutes.
  • Turn off heat, add chili, and let cool.
  • Place cucmbers and shallots in a bowl.
  • Add vinegar mixture and stir.
  • Just before serving add the chopped cilantro & stir.
  • Garnish with whole cilantro leaves.

1 Fresno chile pepper, seeded and finely chopped

Steps:

  • Whisk together the vinegar, sugar, sea salt and lime juice in a bowl until the sugar and salt have dissolved. Add the carrots, cucumbers and scallions, and toss to combine. Transfer the mixture to a plastic food storage container and refrigerate until ready to serve. Add the mint and chile pepper just before serving, and toss to combine.;

1 red onion
Thai peppers (optional) or jalapeno pepper (optional)
1/4 teaspoon sea salt
1 cup sugar
1 cup vinegar
cilantro (to garnish)

Steps:

  • Mix vinegar, salt and sugar together and simmer over a medium heat until all solids are dissolved into the vinegar and the sauce slightly thickens.
  • Peel cucumbers, then cut into lengthwise quarters, then cut across into thin bite-sized slices.
  • Slice onion into bite-sized pieces.
  • Combine the vegetables together and add pepper if desired.
  • Once sauce has been removed from the heat and allowed to cool, pour the cold sauce over the vegetables just prior to serving and garnish with the cilantro.
