- Put container of sour cream and good sized bunch of chopped cilantro into blender, add juice of 1 lime.
- Blend until smooth.
- Chop jalapeno, add to blender (depending on how hot you like it).

- Heat olive oil in a large skillet on medium-hot heat. Generously season sliced chicken with salt and pepper, add to the hot skillet and cook for about 5 minutes until done. Remove sliced chicken from the skillet.
- To the same skillet, add minced garlic, lime juice and chicken broth. Cook for 1-2 minutes on high heat, deglazing and scraping the skillet until the liquid is reduced and making sure garlic does not burn and brown too much. Mix in chopped cilantro.
- Add heavy cream and milk. Bring to boil, the immediately add cheese and mix in until melted, while boiling. Then, remove from heat.
- Cook pasta according to package instructions, drain, reserving some cooked pasta water.
- Add pasta to the sauce, along with the half of the chicken. Mix everything in and season pasta with more salt, if needed.
- Top with the remaining half of the chicken and more chopped cilantro.

- Whisk together 1/4 cup lime juice, garlic powder, cumin, salt, and pepper in a large bowl; add the chicken breasts. Cover and refrigerate 1 to 2 hours, turning the chicken occasionally.

CILANTRO LIME CHICKEN
My husband has recently declared my kitchen a cilantro-free zone :( so unfortunately I haven't yet tried this dish, but I am posting it because it sounds good to me and thought it might appeal to others as well. The recipe comes from Ainsley Harriott, a British chef, and he cautions not to marinate the chicken longer than two hours as the lime juice will break down the chicken to the point that it will fall apart. Preparation time does not include marinating time.

- Make the marinade of garlic, cilantro, ground peppercorns, sugar, lime juice, fish sauce, soy sauce and sunflower oil.
- Blend well.
- Place chicken breasts with marinade in a shallow dish or resealable plastic bag, coating them well, and set in the refrigerator at least 1 hour and no more than 2, turning them from time to time.
- Preheat a ridged griddle pan or heavy non-stick frying pan and cook the chicken for 7-8 minutes each side until the chicken is cooked through.

- If the chicken breasts are uneven in thickness, pound them down so they’re all even. This way all the breasts will cook through simultaneously. Sprinkle each with salt and pepper.
- In a large ovenproof skillet, heat the oil over medium-high heat. Add the chicken and cook for 6-7 minutes, turning once. You want the chicken nice and browned on the outside. (It doesn’t have to be cooked all the way through yet.) Set chicken on a plate and cover tightly with foil until step 5.
- Remove skillet from heat and add the broth, lime juice, onion, cilantro, and red pepper. Return to heat. Cook and stir to scrape up the browned bits from the bottom of the skillet. Bring to a boil. - Spray a large skillet with cooking spray (I recommend Pompeian Avocado Oil Spray, so good!). Head the skillet to medium-high heat; then add the diced chicken breast & chopped jalapeño. Season with taco seasoning (or mixture of cumin & chili powder) along with the garlic salt. Cook until the chicken is lightly browned & cooked through. Once cooked through, transfer the chicken to a separate dish; set aside.
- Wipe the skillet out with a paper towel, & return the same skillet to the stovetop. Spray with the cooking spray; and turn the heat to medium high.
