5 cups or about 5 pounds Yellow squash, sliced
2 eggs, beaten
2 slices of wheat toast, processed to crumbs
(or 1 cup of bread crumbs/crackers)
1/2 cup chopped onion
1/4 cup sugar
salt & pepper to taste
1/2 sleeve of crackers

Steps:

  • Boil sliced squash about 10 minutes or until soft. Drain well. Mash squash and add bread crumbs, beaten eggs, sugar and onion. Mix well. Pour into 3 quart casserole dish and topped with crushed crackers. Bake 30 - 40 minutes at 350.

1 egg, beaten
1/2 cup breadcrumbs
1 tablespoon chopped onion
1/4 cup butter
1/8 cup sugar
salt & pepper

Steps:

  • Trim squash, cut into large chunks & boil to tender.
  • Drain & mash.
  • Mix all ingredients, saving half of the crumbs and put into sprayed 8x8 baking dish.
  • Cover with remaining bread crumbs.
  • Bake at 350 until lightly browned.

This squash is like Dixie Cafe squash casserole. Great dish!

5 medium yellow squash
1 c bread crumbs
1/4 c sugar
2 Tbsp onions, chopped
2 eggs, beaten
2 oz butter; 1/2 stick
salt and pepper to taste

Steps:

  • 1. Cut tips off squash. Cut each onto 3 or 4 pieces. Put into pan with enough boiling water to cover. Cook until tender. Drain squash and mash. Combine with eggs, bread crumbs, butter, sugar, salt, onion and pepper. Pour into lightly greased 3- quart casserole. Cover with light layer of bread crumbs.
  • 2. Bake @ 350 until lightly browned.

2 lbs yellow squash, cut up
1/2-1 cup sour cream
1 (10 3/4 ounce) can condensed cream of chicken soup
1 small onion, chopped
salt and pepper (to taste)
1 carrot, grated
1/2-2/3 cup seasoned bread crumbs (crushed stuffing cubes work well)
1/4 cup butter

Steps:

  • Cut squash in chunks and drop into boiling water. Cook covered until soft. DRAIN WELL and mash. You should have about 4 cups.
  • Combine squash in bowl with sour cream, undiluted soup, onion, salt, pepper and grated carrot.
  • Sprinkle an even layer of herb-seasoned bread crumbs on the bottom of a shallow 2-quart casserole.
  • Add squash mixture and cover with another layer of crumbs. Dot generously with butter.
  • Bake at 350* degrees 30 t0 40 minutes.

I make no claim to originality on this recipe-you can get the original anywhere on the Internet. However, 1) I tweaked it to get it more like the way it tastes at the café (to me...), and 2) I always come to food.com for my recipes for storage, and this one is not on it so I always end up hunting it down somewhere else. Apologies to the original, but gotta have my squash casserole!!!

5 -6 lbs yellow squash
1 1/2 cups breadcrumbs
3/4 cup butter, 1/4 cup for topping
1/4 cup sugar
2 teaspoons salt
1/2 teaspoon pepper
1/2 onion, chopped small

Steps:

  • Cut off tips of squash. Slice the squash into thin rounds, to cook quicker. Cook in boiling water, about 10 minutes. Drain in colander. Split the squash, using one half for the mixure and the other half for mashing. Mash the second half with hand masher, leaving small chunks visible.
  • Take first half, mash with mixer until small. Mix with bread crumbs, one stick butter, sugar, salt, pepper and beat until thoroughly mixed. (Will be fairly smooth). Then mix in onions with mixer.
  • Mix by hand the second half of mashed squash with the mixed half. Pour into 9 x 13 pan. Smooth and cover with a light layer of bread crumbs.
  • Can melt the last half stick of butter and mix with crumbs if desired because the crumbs don't brown nicely. (I also have "broiled" the top brown at the end of cooking and poured the butter over it to help.).
  • Bake at 350 degrees until browned, usually about an hour.
